ARCHIVED Homemade Biscuits
MyMississippi replied to MyMississippi's topic in Gluten-Free Recipes & Cooking Tips
Zardoz, How far from Cleveland is Alliance?? My husband is from Cleveland and he has relatives there. Next time we're there---- I'll check them out. And if any of them come for a visit, I can have them bring some with them. -
Being born and raised in the deep south, I've eaten my share of biscuits. My mom made a pan of those large, soft, "cat head" biscuits every day. YUM ! I took them for granted while living at home and didn't think they were anything special because we had them everyday. But I had a girlfriend that always said "are there any biscuits left " as soon...

ARCHIVED Bob's Red Mill Gluten-free Flour/baking Mix
MyMississippi replied to Gluten=bad's topic in Gluten-Free Recipes & Cooking Tips
I use Bob's Red Mill baking flour all the time in my muffins and it tastes fine to me. No after taste noted. I suppose some people's taste buds are more sensitive than others. I suspect mine are dead --- -

ARCHIVED Calling All You Pizza Makers
MyMississippi replied to MyMississippi's topic in Gluten-Free Recipes & Cooking Tips
A GREAT BIG THANKS to everyone for your suggestions ! ! You're the BEST ! ! ! Now I feel there is HOPE that I can have a good pizza someday---- Wish I had checked with you people FIRST----- but I thought it would be easy-- since Pamela's makes good pie crusts, I thought the Pizza crust would work out o.k. ----But , back to the drawing... -
ARCHIVED Calling All You Pizza Makers
MyMississippi posted a topic in Gluten-Free Recipes & Cooking Tips
O.K.-- so I've been without pizza for almost 2 years ! And Pizza is one of my favorite foods-- I have a serious NEED for a GOOD PIZZA So today, I bit the bullet ,and made 2 crusts from Pamela's bread mix. ( following the directions on the bag for pizza crust )--- Then topped them with my favorite stuff and added the cheese on top.--- Popped 'em... -
ARCHIVED How Do I Bake My Bread?
MyMississippi replied to SweetAmber32's topic in Gluten-Free Recipes & Cooking Tips
You can buy Pamela's bread mix and use the regular white bread setting. Gluten free bread doesn't need all the steps on the bread machine, but it's my understanding that it won't hurt the bread to use that regular white bread setting. I use the white bread setting on my bread machine, but I turn the machine off after the bread is mixed well, then I... -
ARCHIVED Bob's Red Mill All Purpose Flour Mix......
MyMississippi replied to glutenfreemeg's topic in Gluten-Free Recipes & Cooking Tips
You just have to lower your expectations. I use Bob's for making pumpkin muffins. banana muffins, and choco-zucchini muffins, and I think it's delish. -

ARCHIVED Protestant Communion?
MyMississippi replied to Gaye of PA's topic in Coping with Celiac Disease
Sometimes when we have communion at church and I forget to bring my own unleavened gluten free bread, (which is often)---- I just skip the bread and drink the grape juice. God knows I can't eat wheat and I don't worry about it. -
ARCHIVED Gluten-free Fiber Supplement
MyMississippi replied to ellen123's topic in Gluten-Free Foods, Products, Shopping & Medications
Not a dextrin expert----- but I know that you can buy pure psyllisum (sp?) with no sugar, dyes, etc. from the healthfood stores. It's the same as Metamucil -but without the added crud. -
ARCHIVED Please Stop Hating Pharmacists
MyMississippi replied to sammers1's topic in Gluten-Free Foods, Products, Shopping & Medications
Sammers1 I totally agree with your post---- the pharmacists is our friend, not our enemy. The drug companies are the ones who need to make this info easily available to their consumers. The patient should take their complaints to the supplier------ not the dispenser. The poor pharmacists has enough problems without having to be our middleman... -
ARCHIVED Skinny Yellow Stool, Gas, And Lots Of Mucus
MyMississippi replied to OctFilm's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Sounds like you are ingesting something your gut is rebelling against. You said you have tried to go gluten free. You need to go strictly gluten free, if you haven't already-----and if this doesn't fix your symptoms, start looking at other things you are eating on regular basis---- ( soy, dairy, ). And remove them from your diet to see if these symptoms... -
ARCHIVED Waking Up Every Hour To Pee
MyMississippi replied to wilbragirl's topic in Related Issues & Disorders
Just throwing this out there------- excessive urination is one of the classic symptoms of diabetes. -
Going without bread is just NOT an option for us bread addicts --- So, what I did was use Pamela's bread mix and add lots of flax seeds to give it added texture and taste. That pretty much worked for me (until I became "intolerant" of flax seeds and had to give them up too--- is there no end to the torment that we must endure ????? ) So...

ARCHIVED Do "ensure" Meal Replacement Shakes Contain Gluten?
MyMississippi replied to oldskool's topic in Gluten-Free Foods, Products, Shopping & Medications
Yuk ! why would anyone want to drink a can of chemicals ? As an RN I poured many cans of Ensure down the feeding tubes of people who were too sick to chew food. It was a life saver for them, but the goal was to get those people OFF Ensure and onto real food. I pray I NEVER have to drink Ensure or any of those other concoctions. I could not believe... -

There are blood tests that will test insulin levels. You may want to have your son tested for this. Though he seems young to have this problem. It's possible to have normal blood sugar levels, but the insulin levels are ABOVE normal. Most people are never tested for insulin levels------------------ The thinking is that some people for whatever reason...

The Atkins diet ,done correctly, is not a HIGH protein diet---- it is a LOW carb diet. The emphasis is on the LOW carbs--- not the protein. It has been proven -- it is a fact --- that the American diet ( very HIGH in carbs ) is what is making people obese, and contributing in a big way to high cholesterol, high blood pressure, heart disease, type 2 diabetes...

ARCHIVED Neurological Symptoms
MyMississippi replied to Nan 70's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Just curious,------ were you also tested for food allergies?? I am allergic to wheat, rye, and other stuff. And now I'm pretty sure I can't eat flax seed either. Had the same stomach pains you describe. Got flax seed out of my diet and so far, the stomach and back pain have not returned. I suspect that once a person is a celiac, or has two or more food... -
ARCHIVED Gluten Free Setting On Breadman Bread Machine
MyMississippi replied to Wildcat Golfer's topic in Gluten-Free Recipes & Cooking Tips
No, my daughter in law is NOT a Celiac and has no food allergies---- I was making the point that most any bread machine can make gluten free bread. Personally, I would have no problem with using a "used" bread machine .. Just thoroughly clean it before you use it.
