  1. I would check with doctor who did the scopes and ask for an answer to the questions---"Did you specifically check me for Celiac disease by biopsy of small intestine, and did you do a Celiac panel ?" You had a GI work up and you are entitled to know the details of that work up.
  2. I can see where that would be entirely possible------ you may be a celiac that had very obvious damage to your small intestine--- and it hasn't healed completely yet even though you have been gluten free---- When he scoped you---- he saw the damage to the villi---- Biopsy of the villi is the "gold standard" for diagnosis-------(not the blood test---which...
  3. Only one thing wrong with that recipe----------too much work for me ! ! ! I'm so TIRED of baking and cooking everything I eat ------ Oh how I long for the days, of going to the fast food joints ---- no cooking, no cleaning the kitchen afterwards --- just eat and run---- Oh sorry------- this was not supposed to be a rant----- Thanks...
  4. I read that book years ago----- I am O- and should avoid wheat--- that part was right --- But I don't follow that diet-------- I have enough diet restrictions without adding more stuff to AVOID----
  5. I hear ya ! ! There's got to be a REASON why we have food allergies----- I hope someone finds the "missing link" soon ! ! Why are our immune systems so CONFUSED ????
  6. I read that mouth ulcers were one of the symptoms of Celiac Disease----
  7. Being a southern gal, I love grits with butter or cheese--- eggs cooked any way---bacon--- a gluten-free muffin, or sometimes an omelet with veggies-- fresh fruit with home made plain yogurt==== gluten-free toast with fruit spread, ----- Breakfast is my favorite meal of the day.
  8. I would like to munch on pork rinds, but I thought the ones I looked at had wheat in them---- will have to check this out again !
  9. JNBunnie 1 It will be probably be quite a while before I try this again. We're still eating leftovers from Sunday's lasagne, and I have a feeling it will be a looooong time before we want anymore lasagne ! You can let me know how yours turns out !
  10. Thanks for all the tips ! Next time, I will put them in the lasagna without boiling them first--- and see how that goes--- certainly sounds easy enough for me
  11. I made the noodles just like the package said--- boil 1 minute-- let sit for 20-- but I only let them sit for about 12 min. and they all fell apart ! ! How do you cook these lasagne noodles ???
  12. Hey, cut the weatherman some slack --- he's also got the only job where you try to predict the unpredictable.
  13. Wheat allergy and Celiac disease is very difficult for most people to understand. You would be surprised that many people don't even know what foods contain wheat-------- It's quite amusing sometimes----- "no thank you , I can't eat bread, " " Oh, here have a cookie then."
  14. I've NEVER gotten over loosing a whole food group. For awhile, I just ate dark chocolate which has always been my favorite snack. And ice cream-- But alas, I've become prediabetic-- now I have to cut way back on carbs ! So I've got a double curse-------- I'm down to celery sticks ! As they say, "Life is hard, and then you die. "
  15. Eat a lot of chocolate and ice cream==== !! Wonderful coping mechanism----- Seriously, you do HAVE to change your attitude toward food. There are things you will NEVER enjoy again. But think of a blind person who will never see, a deaf person who will never hear, a paralytic who will never walk--- And keep saying "It could be worse,------...
  16. Yes, the sandwhich bread thing is quite depressing. I have been baking my own from Lorka's recipe( I think)---- but am not happy with the taste or texture------ I think this is because I used to bake some great "real" breads before going gluten free=== and have found NOTHING to replace them. If you find a recipe that you like--- please share !
  17. Hi All, Well, I was all ready and pscyhed up to go for the MRI and they called me early that morn to cancel it due to Tropical Storm Fay. Of course this gave me more time to research brain MRI------ Bad idea ! and now I'm working up my courage to reschedule----- I'll keep you posted-----
  18. A true food allergy usually manifests itself with hives and itching a few minutes after you eat it. I think your test results reflect that you could be headed toward a peanut allergy---- and that one day you might break out with the hives and itching if you continue to eat peanuts everyday ------- But I'm no allergy doctor ----- so what do I know ...
  19. I want to caution you about food allergies: I have found that I became allergic to 2 foods that I ate OFTEN Peanuts----- I was snacking on a LOT of peanuts everyday (kept a jar of them in my desk at work) And WHEAT ----- I was baking whole wheat bread every week and eating it EVERY DAY You might want to back off on the peanuts ---...
  20. Some medications make it difficult to lose weight---- have you started any new ones?
  21. going from a borderline high b/p of 140/85 to 100/70 is truly quite a drop (if this was not JUST temporary, AND you are MAINTAINING a low pressure). Are your stools normal in color??? Not black, tarry ??
  22. If I were you, I would pursue a diagnosis before I went gluten free or imposed these restrictions on my children. Your life is difficult enough as a single mom with 3 small children without the added burden of living gluten free, if you don't have to. The symptoms you are having could be from or made worse by anxiety --- You might want to google...
  23. Thanks for the info ! Will look into it---
  24. To be considered pre- diabetic I think your fasting blood sugars have to be over 100 ---- DId your doctor tell you that you are prediabetic, and to change your diet to low carb???
