I use a Breadman Ultimate and am pleased with it. I can program in my own settings for gluten free bread. I've read that most any bread machine can make good gluten free bread=== even using the regular (wheat) cycles. I bought my daughter-in-law a used bread machine for $10.00 at a garage sale and it works great ! -

I use similar settings on my Breadman Ultimate---- knead about 15 min--rise 60 min--bake 60 min on 350 degrees, Bread turns out fine. -

I just bake without it and the muffins turn out fine. I take a regular recipe for muffins or cornbread , then sub the gluten-free flour--- Have never bought any xanthan gum and haven't needed it yet. However, I have not tried to bake gluten free cakes and cookies . Might need it for that ?????? Don't know. -

Pamela's Wheat Free Bread Mix (is also gluten free) can be used to make pie crusts and pizza dough that you roll out. I tried the pie crust and really liked it. To me it was as good as the wheat flour pie crusts---- didn't try the pizza dough but I'm going to soon. -

I only liked Pamela's Wheat free bread mix when I added a lot of ground flax seed to it. ( and sometimes sunflower seeds, also ). Like you, I don't care for the texture or taste of the breads. Since you were just in the hospital for this, did they not do the Upper G.I.'s, lower G.I. x-rays ?? I would see a good gastroenterologist if you haven't already. And don't worry til you know you have something to worry about. Anxiety makes EVERYTHING worse. -

Cutting wheat and gluten out of your diet is not detremental to your health. In fact, it can be very healthy, even if you don't have celiac. Most of the wheat products consumed by Americans is in the form of white bread and junk food like cakes, cookies, etc. which are devoid of any real nutritional value anyway. Does anyone else in your family have diabetes?? Parent, grandparent ??? Type 2 diabetes is often hereditary. You might be in the "prediabetic" phase, if your Fasting glucose is running over 100, but below 120. Keep your carbs down and you might be able to forestall ever getting full blown diabetes. ELsie, I use my Breadman Ultimate bread machine to make Pamela's Wheat Free Bread . It does fine. I just put the mix in as instructed--- then turn it on a regular cycle, let it mix well for a few minutes, scraping the sides down. I bake my own bread most of the time ( Amy's Bread Mix ) and it slices well, except I cannot slice evenly and equally. I've tried an electric knife and a serrated knife. Does anyone use some kind of bread slicer that works well----- I'm looking for uniformity with minimal effort. . Thanks ! -

I tried to make my mom's wonderful cornbread dressing ---using no wheat flour, of course-- I substituted rice flour---- it just wasn't the same ! ! It was crumbly and off color----- and a lot of work -- just to throw in the garbage can ! ! ! ! when you have to give up wheat flour-- you miss out on a lot of good food ! ! ! -

I've learned to enjoy my burgers without a bun-- just use a large lettuce leaf on each end in place of the buns.----- Or you could use a portebello mushroom for one bun and a lettuce leaf for the other. I don't do cereal because of high carbs--- most mornings, I have an omelet with veggies, bacon, plain yogurt and an apple. Don't know what to... -
