  2. Would you consider consuming probiotics now and then? It seems like your gut flora might be really screwed up, and if you could re-establish the correct bacteria it might help things even out.

  6. food allergy testing is very inaccurate. If you think about it, food goes into your stomach, not onto your skin, so it's really unclear what the results actually mean.

  10. I'm relatively grain free. I have some leftover rice products that I'm trying to space out, and I'm not sure I'll ever be able to totally give up chips and margaritas, but I've cut way back on them. When I eat no grains I can sleep all the way through the night (for the first time in my life, that I can remember). It's pretty awesome.
  11. Do YOU care if you have a positive test result? Because if YOU don't care, there's no reason to do the tests. You feel better not eating gluten, and they can test for anything else regardless of what you eat.

  16. Since there is no medically defined test for gluten intolerance, there is no answer to this question. Medicine (mainly) recognizes intestinal damage from gluten, because they can test for it. Many many people on this forum will tell you of the myriad changes that occurred when they stopped eating gluten. Were they being damaged? Since there are no tests...
  17. Did you make the dough in a mixer that you've previously used for gluten things? Parchment paper on the baking sheet? A crumb on the counter got on the spoon? There are lots of things to think about, not just the ingredients....
  18. Can't you market yourself as an allergy-aware tour director? If it's hellish for you who knows how to travel, think how daunting it is for someone newly gluten-free who's never stepped outside their state.
  19. Double check before you go. I rarely go to WLC and only vaguely remember seeing it there....but I think so...

    I've traveled through Italy, Eastern Europe, and Spain. Bread is just a convenient holder for all the really tasty stuff, so just go for the tasty stuff.
