    MaCheBe! - Mama's Cheese Bread (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This recipe comes to us from Teresa Wendt.

    2 cups of Tapioca Flour
    1 egg
    1 tablespoons of oil
    1/3 cup of water
    ¼ cup of powdered milk
    1 cup of Parmesan cheese

    Mix dry ingredients with a whisk until well blended and lump free. Mix wet ingredients then combine with the dry. It should have the consistency of Play Dough. My oven temps vary so I usually set it on high and bake it until its light brown (400 degrees for 15-18 minutes).

    Note: This recipe can also be used to make bread sticks or pizza crust.

    Not enough instructions. How are these shaped and what are they baked in? A sheet or sided pan to make a bread of sorts.

    Kale and Swiss Chard Stir Fry (Gluten-Free)
    There is a variation on this tasty recipe using Rainbow Swiss chard and pine nuts on my Web site.

    Ingredients: 2 cups TruRoots gluten-free penne pasta 1 Tbsp. Barlean's coconut oil 1 large bundle Swiss chard 1 large bundle kale 1/3 cup walnuts, finely chopped 2 tsp. fresh lemon juice 1 tsp. fresh lemon zest 5 chives, finely chopped 1/4 tsp. sea salt 1/4 tsp. freshly ground white pepper Instructions: Cook pasta according to package directions.     Ingredients:
    12 slices quality smoked bacon, cooked, chopped 1 cup (8 ounces) cream cheese ¾ cup shredded Cheddar cheese ¾ cup shredded Swiss cheese ½ cup mayonnaise 1½ tablespoons Dijon mustard 1 tablespoon horseradish, prepared 4 scallions, chopped Directions:
    In a mixing bowl, whip the cream cheese with an electric mixer.
    Fold in and lightly mix the mayonnaise, Dijon mustard, horseradish, cheddar cheese, bacon and scallions.
    Serve hot or cold.
    To heat, place in an oven proof container and bake at 400°F for 10 minutes or until bubbly and warm.
