Ok I went to a Chinese Restaurant today. I was scared so I called 1st. I asked what I could have that doesn't have Gluten. The cook really didn't know what Gluten was. So I explained it to her. I ended out getting the Harr Kow, The Chinese veggies with rice and Gravy. When She brought it in she asked if Corn starch was ok :) I said absolutely!! So I I ate it. It was wonderful!! I just started thinking tho, I hope the Chicken stock was home made, and not bought. Because some has Gluten in it. But so far no problems :) It has been 4 1/2 hrs!! Yay!!

i've tried chinese restaurants too, when i ask about gluten they never seem to know what it is, so i usually get whatever curry dish they have available, to be safe.

I did fine!! It helps we used to go there all the time when the kids were young, so they know us. I have never had a problem there in the past. Even when I was having my blood test and was kinda "gluten free" I went there and had no problem, but I don't want to ruin a good thing because I have been doing so well :)

Try a multivitamin maybe it will cover what you are deficient in.

Agreed, and I can't remember exactly and haven't got time to check, but I think my blood didn't normalise for eight years! For years I read this forum thinking why can't I get my numbers down - everyone else manages to.   But my gastroenterologist didn't seem to worry about it, which makes me think he either thought I wasn't complying to the diet, or he'd seen similar cases.

Yes, being off gluten for 3 months would likely yield negative results. To get accurate testing redone you would need to restart gluten consumption for several weeks (the "gluten challenge") to the tune of at least 10g of gluten daily (about the amount found in 4-6 slices of wheat bread).

That is one of the tests covered in the article I linked you above.

Antibodies to Deamidated gliadin peptides.  It is another celiac antibody test. The main test is the one you had, TTG,  But a full panel will also include DGP IgA and IgG.  I was positive on all of them!
