   Well tomorrow marks my 3 months. :) I am feeling much better!! I am going for walks almost every day! I am getting some energy back because before when I walked I felt like I had just ran a 10 mile marathon. Now I actually feel revived and a lil energized after a walk. I have lost alot of weight.

Yesterday I had enuf energy I actually cleaned out my cupboards, and got rid of alot of gluten. Threw all the Gluten Flour out washed and scrubbed the containers and then did it again to be sure, then one more time to be on the safe side! Then filled them with gluten-free flour. Let me tell ya there was alot of Gluten in there that all got pitched! So for my 3 months I think I am doing pretty good! Once in a while I will find lil things that have gluten in it. I just put that on my list of things not to eat and throw it away. So all and all I think I am doing very good. 

    I think I am taking care of me pretty good. I do have to say , It feels wonderful to know all I had to do was change my diet to start feeling better!! It will be a learning experience every day I am sure!!

Lol so funny I did that the other day! I held my breath took a plastic bag and put it over the flour then threw it all out! Washed the canisters in hot hot water then ran them through the dishwasher (they are ceramic) I haven't refilled them yet with gluten-free flour though because I think it's better to keep gluten-free flour in the freezer? Can I keep it on the counter?

This is fantastic. I remember the day I woke up and felt...rested. It was notable because I hadn't felt that way in, well, forever. Glad to hear you're walking and losing weight. I walked a marathon a little over a year after eliminating gluten. Couldn't have done that before.

 

Your de-glutening of your kitchen interests me because I took some time before I tackled the cupboards and refrigerator. Then one day, attack! I wonder if this is part of our (collective) process. Or if it's just a matter of finally discovering the energy to tackle the kitchen and all the surprises it holds for us?

If you have the space, keep them in the freezer.  They'll last forever, okay, maybe 10 years.  In your pantry they'll last a year or so.  Many will go rancid fast.

The freezer huh? I will put it in the freezer. It isn't that much to tell you the truth. And I put it in a plastic bag then put it in the canister. So easy enuf to take the plastic bag and put it in the freezer :) Thanks! 

 

For me I think it was finally getting enuf energy! Because I thought and thought about it!! But just didn't have the energy! But one day I found some and tackled it. I still have Gluten!! Just NO flour , certain things I don't want hubbs to make and forget. Like dipping stuff in flour and cooking it up. No no I don't want that! So no glutenized flour! 

Some days are good some are not so good when it comes to the energy thing. I hope I will get back to normal one day. But just being able to walk a mile is fantastic for me!! I wasn't able to do it this last spring. Now I can!! It makes me happy and my dog!! My dog see's me even starting to walk out back and he runs for it!! :) Thanks everyone for the nice posts :)

Yes some days good some bad. This week my energy is shot. We have had a couple weeks of bad air in the Central Valley of CA. The rim fire then another fire after that has polluted our air. I've been pretty much on the couch drained. But the weeks I did have energy were terrific! I haven't felt like that for years so I will take anything I can get!

Fantastic news! When I was diagnosed I purged my house on 3 separate occasions. 2 kitchen purges and one bathroom purge. I still find the random item that I have to get rid of but overall I think my house is gluten-free. I purged all of my plastic storage containers and wooden utensils. I figured I could use the purchase of new ones as a coping mechanism! I have yet to open any gluten-free flours I have bought except the coconut flour. It stores pretty good in the cabinet inside a ziploc bag. I haven't tried the freezer trick.

 

I was accidentally glutened while camping so I get to start my gluten-free journey over again. Congrats for being 3 months gluten-free!

I have only bought 1 kind of flour. It is an all purpose flour. I told myself not to run out and buy a bunch of Gluten Free stuff! Just trying to eat the more natural gluten-free stuff :) enjoying steaks :) And veggies!!

      In the U.S., most regular wheat breads are required to be enriched with certain B-vitamins and iron, but gluten-free breads are not required to be. Since many gluten-free products are not enriched, we usually encourage people with celiac disease to consider a multivitamin.  In the early 1900s, refined white flour replaced whole grains, and people began developing serious vitamin-deficiency diseases: Beriberi → caused by a lack of thiamin (vitamin B1) Pellagra → caused by a lack of niacin (vitamin B3) Anemia → linked to low iron and lack of folate By the 1930s–40s, these problems were common in the U.S., especially in poorer regions. Public-health officials responded by requiring wheat flour and the breads made from it to be “enriched” with thiamin, riboflavin, niacin, and iron. Folic acid was added later (1998) to prevent neural-tube birth defects. Why gluten-free bread isn’t required to be enriched? The U.S. enrichment standards were written specifically for wheat flour. Gluten-free breads use rice, tapioca, corn, sorghum, etc.—so they fall outside that rule—but they probably should be for the same reason wheat products are.

      Keep in mind that there are drawbacks to a formal diagnosis, for example more expensive life and private health insurance, as well as possibly needing to disclose it on job applications. Normally I am in favor of the formal diagnosis process, but if you've already figured out that you can't tolerate gluten and will likely stay gluten-free anyway, I wanted to at least mention the possible negative sides of having a formal diagnosis. While I understand wanting a formal diagnosis, it sounds like she will likely remain gluten-free either way, even if she should test negative for celiac disease (Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If her symptoms go away on a gluten-free diet, it would likely signal NCGS).

      Thank you all so much for your advice and thoughts. We ended up having another scope and more bloodwork last week. All serological markers continue to increase, and the doc who did the scope said there villous atrophy visible on the scope — but we just got the biopsy pathology report back, and all it says is, “Duodenal mucosa with patchy increased intraepithelial lymphocytes, preserved villous architecture, and patchy foveolar metaplasia,” which we are told is still inconclusive…  We will have her go gluten free again anyway, but how soon would you all test again, if at all? How valuable is an official dx in a situation like this?

      Thanks for this Russ, and good to see that it is fortified. I spend too much time looking for M&S gluten-free Iced Spiced Buns to have ever noticed this! That's interesting, Scott.  Have manufacturers ever said why that should be the case?
