Okay, now that I've found a bread recipe that's solid, I'm ready to move on to making buns! Anybody have any recipes to toss my way?

2 1/4 cups ground almond flour (I also have used hazelnut, walnut, macademia, and pecan.

3 large organic eggs

1 1/2 Tbsp raw honey (I replace this with water recently)

3/4 tsp baking soda

3/4 tsp celtic sea salt

1.  Preheat oven to 350 F

2.  Mix nut flour, egg yolks  baking soda salt and honey in food processor.

3.  Beat egg whites to a fluff in separate bowl.

4.  Fold egg whites into almond mixture, adding water if needed.

5.  Mound batter in hamburger bun sizes on parchment paper placed on baking sheets.

6.  Place in oven and bake 10 minutes or until golden brown.

How about a recipe for nut free buns?  We have a tree nut allergy in our house that this wouldn't work for... and to be picky, he doesn't like coconut flour.  I am a short order cook on some days.

I am thinking of trying my recipe above using seeds.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
