i just posted not too long ago how I got cross contaminated. It's been over a week but here and there every day I'm still having spurts of the cramps and diarrhea and I'm confused.

Perfectly normal. When I get CC'd it takes three weeks before I'm back to myself. I don't remember your original thread but if you haven't done so yet, please go to the Newbie 101 thread in the coping section. It'll teach you how to avoid CC. And if you can possibly do so, stay away from restaurants.

I discovered what it was. As I was eating a bowl of cereal I came across a cheerio. I pulled a half eaten one out of my mouth. I don't feel too pleasant and now I am waiting for the full blown effects to take effect. :/

I don't understand this aversion to restaurants. Here in Omaha, other than fast food, most every other restaurant is supportive and easy to work with. There are many, many with dedicated gluten-free menus. As to length of time for contamination symptoms to subsiDe, it is generally a couple of hours to at most two days for me.

My hubby typically recovers in just a few days too.

Not me! I was diagnosed over two years ago (anemia was pretty much my only symptom) and it took me about a year or longer to feel good and resolve all deficiencies. I think was accidentally glutened a few times during my recent vacation in July. Five weeks later, I am still suffering. Now I have abdominal pain, indigestion, fatigue, body aches. My antibodies were re-tested and they are off the charts. I still have not been able to identify the source. I went to high-end restaurants, those that had great reviews written by celiacs on Find Me Gluten Free, and I ate at my parent's house and supervised all food prep. I am the gluten police and my home is gluten free. Yet, something got past me! You bet, I am eating at home for a while until my symptoms resolve.

The point is that everyone presents differently and heals differently.

I agree that it is different for everyone.  My last glutening was at a restaurant, a Mexican joint on the road, where I expressly, twice, , explained that I have celiacs, and asked for corn tortillas.  I learned, too late, that they had instead given me wheat tortillas.  But it was a needless glutening.  Oh well.

Omaha is one of the few places in the midwest that has great food period. It's no wonder you have so many restaurants with gluten-free menus. But if one lives in a small town, not near a city, restaurants are a definite no-no unless they are owned and run by someone with celiac.

Sadly one of the cruddy parts after us Celiacs get better after going gluten-free is learning what happens with accidents occur.  Everyone's reaction differs, and eventually you will get an understanding of your body after a glutening.  Just try to take care of yourself well to get through it, and I do hope it improves soon.

 

And now I want to visit omaha.  Already would like to be locked in the omaha steak factory overnight :)

So many great gluten-free restaurants here.  Shucks, M's Pub, 7M Grill, Mark's, Uncle Maddio's, Pie Five, Dante, Modern Love, etc., etc.  We are blessed.

if i get cc'd, it takes 14 days (not 13, not 15) for my body to get back to 'normal' - i thought maybe that would change since i haven't messed up in a very long time.  nope.  still 14 days.  don't buy sandwich meat that they slice 10" away from the sandwich making station from people who never heard of celiac.  lesson learned!!

      Wheatwacked, are you speaking of the use of potassium bromide and and azodicarbonamide as dough modifiers being controlling factor for what? Do you refer to celiac reactions to gluten or thyroid disease, kidney disease, GI cancers?

      Excess iodine supplements can cause significant health issues, primarily disrupting thyroid function. My daughter has issues with even small amounts of dietary iodine. While iodine is essential for thyroid hormone production, consistently consuming amounts far above the tolerable upper limit (1,100 mcg/day for adults) from high-dose supplements can trigger both hyperthyroidism or hypothyroidism, worsen autoimmune thyroid diseases like Hashimoto's, and lead to goiter. Other side effects include gastrointestinal distress. The risk is highest for individuals with pre-existing thyroid conditions, and while dietary iodine rarely reaches toxic levels, unsupervised high-dose supplementation is dangerous and should only be undertaken with medical guidance to avoid serious complications. It's best to check with your doctor before supplementing iodine.

      In Europe they have banned several dough modifiers potassium bromide and and azodicarbonamide.  Both linked to cancers.  Studies have linked potassium bromide to kidney, thyroid, and gastrointestinal cancers.  A ban on it in goes into effect in California in 2027. I suspect this, more than a specific strain of wheat to be controlling factor.  Sourdough natural fermentation conditions the dough without chemicals. Iodine was used in the US as a dough modifier until the 1970s. Since then iodine intake in the US dropped 50%.  Iodine is essential for thyroid hormones.  Thyroid hormone use for hypothyroidism has doubled in the United States from 1997 to 2016.   Clinical Thyroidology® for the Public In the UK, incidently, prescriptions for the thyroid hormone levothyroxine have increased by more than 12 million in a decade.  The Royal Pharmaceutical Society's official journal Standard thyroid tests will not show insufficient iodine intake.  Iodine 24 Hour Urine Test measures iodine excretion over a full day to evaluate iodine status and thyroid health. 75 year old male.  I tried adding seaweed into my diet and did get improvement in healing, muscle tone, skin; but in was not enough and I could not sustain it in my diet at the level intake I needed.  So I supplement 600 mcg Liquid Iodine (RDA 150 to 1000 mcg) per day.  It has turbocharged my recovery from 63 years of undiagnosed celiac disease.  Improvement in healing a non-healing sebaceous cyst. brain fog, vision, hair, skin, nails. Some with dermatitis herpetiformis celiac disease experience exacerbation of the rash with iodine. The Wolff-Chaikoff Effect Crying Wolf?

      same! how amazing you have a friend who has celiac disease. i find myself wishing i had someone to talk about it with other than my partner (who has been so supportive regardless)

      They don’t give a sample size (serving size is different from sample size) so it is hard to tell just what the result means.  However, the way the result is presented  does look like it is below the limit of what their test can measure, so that is good.
