I am new to cooking gluten-free.  Can I boil water in my non-stick ceramic and stainless steel pots and pans to clean them from cooking gluten foods, instead of buying new pots and pans?

If you can get them clean, in can use them.  Things with lots of little holes, like a colander, can be very hard to clean every little hole.  But I put my pans in the dishwasher.

Depends if they are scratched...no cleaning out the gluten will be almost impossible. Smooth stainless you have a chance of cleaning them out with good dawn and scrubbing. IF you can see about putting htem in a oven self clean cycle....500F+ breaks down the gluten proteins. Boiling does not....gluten is a protein not a germ so you can not disinfect it, it requires extreme temperatures to destroy and break it down.

It's not an endless supply of gluten in a little scratch.  If washed well and water is boiled in it, that should take care of it.  The first few weeks of gluten-free, people make enough mistakes that a couple of missed gluten molecules won't hurt.  Now...if someone keeps putting gluten noodles in that pot, the cleaning could get tedious.  Maybe get a pot & colander just for that person's noodles?  Leave the rest nice and clean.
