Gluten free

I have recently found out I need to have a gluten free diet. I usually do good with eating gluten free. I ate chicken alfredo that was gluten free and got an upset stomach. Any ideas as to why?

Is it possible that you also have an issue with dairy/casein? Many people with celiac disease, including myself, have, at least temporarily, additional food intolerances after being diagnosed. This is due to a condition called "leaky gut" and once you successfully heal your gut with a gluten-free diet for several months, or even up to a year or two for some people, those secondary intolerances may go away.

whenever i am trying to figure out what the heck is making me sick, i keep a food journal.  it is extremely helpful to write down *everything* that passes your lips (even gum - gum makes me ill, no gluten, just artificial sweetener/color/etc - it took my food journal to figure that out lolz) then i use a scale of 1-7 as to how i feel following eating said foods.  then you can try to eliminate the culprit by eating foods separately and see how you feel.  lots of times i had to do this in the beginning, to see what was irritating my still healing gut.  note:  most times it was *not* gluten, just something that i had to skip for awhile until my intestines were in better shape.  i had a fructose intolerance for a very long time, but now it's gone, mostly.  i can't go crazy with histamines, either.  you'll get the hang of it!  good luck!  :)

Who made that chicken Alfredo?  Maybe it was not really gluten free or was exposed to gluten while being prepared.

I'm not sure about dairy or any of that. But I eat diary a lot and it never bugs me. I had my gallbladder removed that's what gave me the gluten intolerance.

It's by udi and I just put it right into a sauce pan.

Thank you for the idea I'll give it a try!!

The listen to the other members.  You might have an intolerance.  Udi’s is convenient but it has lots of additives found in most processed foods.  You could be reacting (not a celiac reaction) to any of those.

I had a non-functioning gallbladder that became infected.  It is my theory that undiagnosed celiac disease destroyed my gallbladder.  It sounds like your problems started after surgery.

Yes they did. Maybe you're right maybe it's something else in that food. I've eaten other udi things too with no problem.

I think you may be correct. The way the results are printed makes it appear as though it’s the ttg iga but I think you’re right—the 646 is total iga. So this would be indicative of another issue (another autoimmune condition, infection, cancer, etc.) and my doctor would need to do further testing. Thank you for saying this!

Are you sure that is the TTG IgA? Based on the units (mg/dL) and having an upper limit to the normal range, it looks like a total IgA result.

I am wondering if there are any vegetarians or vegans on this forum. I’ve been vegan for 15+ years and am just finding out I likely have celiac disease (blood panel done, need biopsy). My favorite foods—outside of vegetables, fruits, nuts, seeds—I will likely have to give up. Anyone else?

Welcome to the forum, @Trish G! "Gluten free" does not necessarily equate to "no gluten". According to FDA standards it actually means that a food product contains no more than 20ppm of gluten. This is safe for most celiacs but would not be for those who are on the more sensitive end of the spectrum. So, it would depend on the individual celiac and their level of sensitivity to minor amounts of gluten. That's the long and nuanced answer. The short answer is that it is a product derived from wheat and so you can be certain it will contain some residual amounts of gluten. No gluten removal process is 100% effective. So, to be absolutely certain, stay away from it. Have you tried chia seeds? Very high in fiber and quickly turns into a gel when added to water. Make sure you get seeds that are gluten free if you decide to try it.

I was taking Benefiber for my IBS-C before my celiac diagnosis. It does say Gluten Free but lists Wheat Dextrin on the label. I really dont like psyllium fiber, so is there anything else I can take or is the Benefiber really ok for someone with Celiac disease?  Thanks!!!
