So far 5 out of 10 have had it (me included). Two may have escaped just in time. So far my hubby and kids have remained unaffected, unattacked, uncontaminated. We drive back to Indiana tomorrow . . . maybe they are saving it for the car ride.

OMG! So many questions. I think I can only handle about one at a time.

So, here is gravy answer promised, as best as I can express it. I asked Jacquie and she gave me some written notes. Here goes:

Turkey gravy, using the stock from the giblets. The giblets simmered for hours in water to produce the aforementioned "stock."

2 tbsp corn starch

1 tbsp rice flour

1 pkg Bovril* powdered chicken broth mix

1 cup of giblet stock

Mix the above together and then pour into a pan. Using a medium-high heat stir constantly until the gravy thickens to desired consistency.

For more gravy, increase ingredients proportionately.

*Bovril is a Unilever brand, and will clearly disclose any gluten. The powdered chicken broth mix is gluten-free.

okayyyyyy.......I seem to have, uh, "slipped" into a tripping-and-falling mode. :blink:

Last night, in one of the MANY trips to let Stinker out and in and out and back in and OUT and then back in blah blah blah blah........ad nauseum (veeeeeeery tedious, BTW, because she has intestinal issues, so keeps wanting out - and most interesting that this ONLY happens at night - she stays in her bed now virtually ALL day long - at night, wants out a million times - and then barks at nothing - - because she is DEAF!!!!!!!!!!!!!!! :huh: so she's doing protective barking just in CASE there are any sounds........ )

Okay. Anywho. In one of those many trips I didn't turn the lamp on, and tripped over something on the floor - god knows what - and fell onto the canister vacuum cleaner that was put in my room (simple passive tense) a couple of days ago in hopes of SERIOUS cleaning.....so....fell on the vacuum cleaner - now am again slightly concussed wtih angry red mark and distinctly tumescent area (i.e., swollen, ha ha ha) on forehead..........

Everyone--

I had the most delicious gluten-free pizza last night! I did the crust from the "Gluten Free Kitchen" cookbook (simple) and topped it with sauce, pepperoni and a little sprinkle of sheep's milk pecorino romano cheese.

Also found delicious snack food--it's called "Lesser Evil"--kettle corn with different flavorings. They're all gluten-free and labeled as such, which I love. I got the maple/pecan flavor and it was fantastic.

On a different note, Mark and I were out doing a few errends last night and I was scarfing down the afore mentioned Lesser Evil. A very pleasant ride, and then-- we hit a deer :o It came out of the woods right in front of our car--Mark hit the brakes and swerved and was able to stop just in time for him, but the one that came out right after hit our car as it ran away across the street. Thank goodness there was not a car close behind us.....

By the time we pulled over and got out of the car, the deer were gone, and the damage was very slight--just one headlight was pushed in a bit. No blood or anything like that, so I hope the poor deer is ok.....I felt like I was going to throw up right after it happened.

Oh, wow...everybody's been so busy tripping, falling, hitting mammals, letting mammals in and out and in and out...just look at what I miss!

Patti: That is a very traumatic experience. I know I would have barfed. Ontario has racked up something like thrice (three times :rolleyes: ) the number of fatalities from vehicle/deer collisions this year. Something about global warming? Bah, everybody just blames every thing on G.W. ....HEY! Maybe Kamikazes wear seatbelts, and Zidane used his head, because of global warming. Yes, that must be it. :lol:

Yes, I've been suspecting for some time that our Psawyer is, in, fact, the very Pete in "for Pete's sake"...I think he's our man. He may very well be the Peter in "Peter the Great", as well. And who do you think Elton John wrote Peter's Song for? Indeed, there could be a whole lot more about Peter that we're just beginning to understand. He knows the answer to everything...he somehow created some incredible gravy...What other astounding surprises are coming our way?!

I'm home! I'm home! MORE fluids arrived prior to departure but I shan't go into detail (however, the count is up to six). Most importantly, NOTHING happened on the 9 1/2 drive.

Patti, glad you and the deer seemed to have both scraped through. I know you've seen Grey's Anatamy, so if something serious had happened, you would have known what to do. You had a defibrulator with you didn't you? You might check into getting a deer whistle . . . not foolproof but can't hurt.

So Susie, why didn't you turn on the light? To save energy perhaps? Saving energy will help reduce global warming . . . yep, Emily is right. It all comes back to global warming.

Is Peter the pumpkin eater? Is he the peck of pickled peppers picker?

I have watched Once, the movie, have to say it was really lovely adn charming. I expected more, plotwise, but then realized it was more about the beautiful performances and nuances, and the gorgeous music.....'tis a quiet little film. After I read about it on Wikipedia, I now like it even more. :)

So Sillies, does any one want to come over to my house for a late dinner? I am making homemade stuffed shells.

I am breaking in my new pot set that John bought me for Christmas, my old ones were getting banged up and rusted from stuff. So since I have been getting into the cooking/baking thing John bought me this nice set at Weggies and it is stainless steel. I am so excited.

So I just popped the shells in the oven, will be done in 30 minutes.....anyone coming? We have lots of room around the big dining room table.

      I have read fermented foods like sauerkraut, pickles, Kefir, Kombucha are great for gut health besides probiotics. However I have searched and read about ones that were tested (Kefir, Kombucha) and there is no clear one that is very helpful. Has anyone take Kefir, Kombucha and noticed a difference in gut health? I read one is lactose free but when tested was high in lactose so I would probably try a non dairy one. Thanks

      Thanks again for the detailed explanation. Just to clarify, I actually did have my initial tests done while I was still consuming gluten. I stopped eating gluten only after those tests were completed, and it has now been about 70 days since I went gluten-free. I understand the limitations around diagnosing NCGS and the importance of antibody testing and biopsy for celiac disease. Unfortunately, where I live, access to comprehensive testing (including total IgA and endoscopy with biopsy) is limited, which makes things more complicated. Your explanation about small-bowel damage, nutrient absorption, and iron-deficiency anemia still aligns closely with my history, and it’s been very helpful in understanding what may be going on. I don't wanna get Endoscopy and I can't start eating Gluten again because it's hurt really with severe diarrhea.  I appreciate you taking the time to share such detailed and informative guidance. Thank you so much for this detailed and thoughtful response. I really appreciate you pointing out the relationship between anemia and antibody patterns, and how the high DGP IgG still supports celiac disease in my case. A gluten challenge isn’t something I feel safe attempting due to how severe my reactions were, so your suggestion about genetic testing makes a lot of sense. I’ll look into whether HLA testing is available where I live and discuss it with my doctor. I also appreciate you mentioning gastrointestinal beriberi and thiamine deficiency. This isn’t something any of my doctors have discussed with me, and given my symptoms and nutritional history, it’s definitely worth raising with them. I’ll also ask about correcting deficiencies more comprehensively, including B vitamins alongside iron. Thanks again for sharing your knowledge and taking the time to help. I’ll update the forum as I make progress.

      Blood tests for thiamine are unreliable.  The nutrients from your food get absorbed into the bloodstream and travel around the body.  So, a steak dinner can falsely raise thiamine blood levels in the following days.  Besides, thiamine is utilized inside cells where stores of thiamine are impossible to measure. A better test to ask for is the Erythrocyte Transketolace Activity test.  But even that test has been questioned as to accuracy.  It is expensive and takes time to do.   Because of the discrepancies with thiamine tests and urgency with correcting thiamine deficiency, the World Health Organization recommends giving thiamine for several weeks and looking for health improvement.  Thiamine is water soluble, safe and nontoxic even in high doses.   Many doctors are not given sufficient education in nutrition and deficiency symptoms, and may not be familiar with how often they occur in Celiac disease.  B12 and Vitamin D can be stored for as long as a year in the liver, so not having deficiencies in these two vitamins is not a good indicator of the status of the other seven water soluble B vitamins.  It is possible to have deficiency symptoms BEFORE there's changes in the blood levels.   Ask your doctor about Benfotiamine, a form of thiamine that is better absorbed than Thiamine Mononitrate.  Thiamine Mononitrate is used in many vitamins because it is shelf-stable, a form of thiamine that won't break down sitting around on a store shelf.  This form is difficult for the body to turn into a usable form.  Only thirty percent is absorbed in the intestine, and less is actually used.   Thiamine interacts with all of the other B vitamins, so they should all be supplemented together.  Magnesium is needed to make life sustaining enzymes with thiamine, so a magnesium supplement should be added if magnesium levels are low.   Thiamine is water soluble, safe and nontoxic even in high doses.  There's no harm in trying.

      Neither of them were anemic 6 months after the Celiac diagnosis. His other vitamin levels (d, B12) were never low. My daughters levels were normal after the first 6 months. Is the thiamine test just called thiamine?

      Yes, I do think they need a Thiamine supplement at least. Especially since they eat red meat only occasionally. Most fruits and vegetables are not good sources of Thiamine.  Legumes (beans) do contain thiamine.  Fruits and veggies do have some of the other B vitamins, but thiamine B 1 and  Cobalamine B12 are mostly found in meats.  Meat, especially organ meats like liver, are the best sources of Thiamine, B12, and the six other B vitamins and important minerals like iron.   Thiamine has antibacterial and antiviral properties.  Thiamine is important to our immune systems.  We need more thiamine when we're physically ill or injured, when we're under stress emotionally, and when we exercise, especially outside in hot weather.  We need thiamine and other B vitamins like Niacin B 3 to keep our gastrointestinal tract healthy.  We can't store thiamine for very long.  We can get low in thiamine within three days.  Symptoms can appear suddenly when a high carbohydrate diet is consumed.  (Rice and beans are high in carbohydrates.)  A twenty percent increase in dietary thiamine causes an eighty percent increase in brain function, so symptoms can wax and wane depending on what one eats.  The earliest symptoms like fatigue and anxiety are easily contributed to other things or life events and dismissed.   Correcting nutritional deficiencies needs to be done quickly, especially in children, so their growth isn't stunted.  Nutritional deficiencies can affect intelligence.  Vitamin D deficiency can cause short stature and poor bone formation.   Is your son taking anything for the anemia?  Is the anemia caused by B12 or iron deficiency?
