They turned out pretty well, but the garlic isn't as strong as we had hoped for. We think we know how to fix that next time. The true proof will be in the salad at dinner in a little while.

The crouton story begins a while back. We bought some pre-made croutons by the Gluten Free Pantry in October and liked them, but felt that they were a bit on the expensive side.

We have been buying Glutino products at a large chain grocery store for a couple of years (we used to get them online). We don't like that store for most things, and only buy things there that we can't get at our usual store. The usual, preferred store is part of a small chain operating just in the Toronto area.

Recently, our regular store began to carry some Glutino and Gluten Free Pantry items. So far it is just those that can be shelved without refrigeration. They have the spaghetti for less that the big chain. A couple of weeks ago we bought Gluten Free Pantry French bread & pizza mix. We used our bread machine to bake a 2 lb loaf of French bread.

We saved the top and bottom of the loaf, while eating the rest of it.

Today, we used the ends of the loaf for croutons. We cut the week-old bread into cubes about 3/4 of an inch on each side. We had lots of pieces. We used 3 tbps (45 ml) of extra virgin olive oil, six crushed garlic cloves, and some (unmeasured) dehydrated basil and oregano. It was about twice as much basil as oregano.

We mixed the garlic and oil and tossed them with the bread and herbs in a mixing bowl.

Then we spread it out on a baking sheet, one layer only, and baked for 15 minutes at 375F. Twice, at 5 and 10 minutes, we took them out and used a spatula to toss them around to bake evenly.

Tonight we started our meal with a salad that included these croutons. They are crunchy, and very palatable. They were not as garlicky as we had hoped. We thought we had a garlic press, but could not find it when the chips were down, so the garlic was not as well mashed as it could have been. Tomorrow we are going shopping for a proper garlic press.

They were outstanding, and we have enough left for several enjoyable salads with gluten-, soy-, and dairy-free croutons. They contain rice, corn and potato. Click here to see the croutons.

I use the GFP French Bread Mix routinely--it's the only bread I've tried that I tolerate. I bake a loaf every couple of weeks, slice and freeze it.

I think their crouton mix has tapioca starch, which is why I've never tried it. Now that you have me thinking about croutons, I'm going to have to make some. I have a garlic press, and bread in the freezer so I'm all set :D

Morning, Psillies!

Anyone else seen Benjamin Button? Jack and I have been alone here this weekend (DH and DD are at a tourney in Kingston - -The Wildcats have won all three of their games, including a 3 - 0 extravaganza where Sophie apparently was standing on her head and doing back handsprings to save 31 shots..... . :DB) ...they could be in the final round this afternoon, after their game at 11). So, we took in the movie. I thought I would love it. Just liked it....a little forced at times. Brad was his glorious self, even in the clothes and makeup of an eighty-year old.....! :rolleyes:

Gonna try those croutons, POeter, perhaps today.

Benjamin Button - great movie! Well made, keeps you interested the whole time. I had no expectations and didn't really know what it was about when I went to see it, maybe that made a difference.

We used that particular bread because we had it. You could probably use another bread. The GFP french bread is quite light, so a more typical gluten-free bread would probably need less than 15 minutes in the oven.

I wandered through the whole thing (pretty small) and saw one spot where the grave had just been dug, and not yet filled. A few days later it had been filled, but no headstone. Then a few days later I walked by after a windstorm and the new resident's flowers had all been knocked over, so I fixed them all.

Ever since then, I haven't felt the cold when I walk by... :huh:

I'll be interested to see if this is the same when the weather warms up. Maybe it's just cold everywhere.

Actually did go to Gail's briefly last night, and guess what........a couple of miles away, in a sketchy 'hood, they are working through the night and day for a week on an "Extreme Home Makeover" family - - so, I'll have to let you guys know when it's on, it's actually here in FrezNo!!!!! Drove as close as I could to the site - tons of bulldozers, huge trucks, out-houses, blinding lights keeping the place lit up - - bet the neighbors are mighty annoyed :lol:

YAY! :D Just got a call from her.... .they won the semi-final game in a shootout.... . . ..thank gawd I was not there. . . ..as the goalie's mother it is absolute AGONY to watch a shootout unfold before yer eyes, worse than a turkey jammed on your head, worse than a pap smear.. . . . . .honestly, just heinous.

      I made it through the holiday w/o being glutened. I had my brother cook with gluten-free breadcrumbs and I didn't get sick. I baked cookies with gluten-free flour and had dry ingredients for cookies in ziplock bag. I also made gluten cookies as well and guess I did good washing to avoid CC. My wife also went to a french bakery and bought a gluten-free flourless chocolate cake dedicated gluten-free it was out of this world.

      What do you mean it would not allow any celiac to eat gluten again. I think if this helps cross contamination when eating out at a non dedicated gluten-free restaurant this would be nice not to encounter the pains. But is their a daily enzyme to take to help strengthen the digestive system?

      Hi, thank you for the reply. Unfortunately, no other antibody tests were ordered. I am a 32-year-old male. About two months ago, I ate pancakes and then developed severe diarrhea that lasted the entire day. At night, I became unconscious due to fluid loss and was admitted to the ER, where I received IV fluids. Two days later, I ate bread again and once more developed severe diarrhea. I ended up in the ER again and received IV fluids. In my country, Pakistan, doctors are unfortunately not very thorough, so they treated me for a stomach infection. I visited three or four doctors, including a gastroenterologist, but it seemed like they just wanted to keep me on medications and IV fluids. Eventually, I did some digging myself and started connecting the dots. For years, I’ve had excessive gas buildup and frequent loose stools, but I never paid much attention to it. I also cannot easily digest dairy products. Two years ago, I had a CBC test that showed iron deficiency. My doctor told me to eat more meat and said it was nothing serious. However, for the past five years, I’ve also had severe motion sickness, which I never experienced before. Whenever I get on a bus or in a car, I sometimes lose consciousness for 10–20 seconds and wake up sweaty, and occasionally I feel the need to vomit. After more research on the internet, I came across gluten and celiac disease, so I got two related tests (TTG-IgA & TTG IgG) done along with a stool test and another CBC. The stool test showed weakly positive blood. Ever since eating those pancakes and bread, I’ve had a burning sensation in my gut. My doctor reviewed my tests, he told me to completely stop eating gluten and started me on IV fluids for 20 days, saying that I had severe inflammation in my gut. It has now been two months since I quit gluten, and I’m still not sure whether this is celiac disease or gluten intolerance. I don’t really trust doctors in Pakistan, so I thought I might get some help here.

      Welcome to the celiac.com community, @SamAlvi! Were there any other antibody tests ordered? Particularly, was there a "total IGA" test ordered to check for IGA deficiency. When people are IGA deficient, celiac panel IGA test scores, such as the TTG-IGA, are likely not valid. If a total IGA test was not ordered, I would request such to be done. Note: "Total IGA" goes by other names as well. I will include a primer on celiac disease antibody testing which does a good job in covering the nomenclature variations connected with the various tests. Elevated IGG scores can certainly indicate celiac disease but they are more likely than elevated IGA tests to be caused by something else.

      Thank you— yes, valid and essential— The issue either doctors is that every one I have tried to talk to about this has essentially rolled their eyes and dismissed me as a hypochondriac, which gets discouraging. I believe a diagnosis would help me to be taken seriously by doctors as well as being validating, but can carry on without it.    There are many, probably most people in my area of my age and gender, who avoid gluten, but many just avoid it casually— eating the occasional plate of wheat pasta or a delicious-looking dessert, or baking cookies with wheat flour for gatherings.  That is not an option for me. I don’t eat other people’s cooking or go to restaurants that do not have strict cross- contamination procedures. It can be boring and lonely, and people do look at me as if I am being a bit dramatic but weeks of symptoms after a single small exposure has taught me to respect my experience.    Thank you very much for your response— sometimes I just need to hear that I am not crazy—
