No red meat
I particularly try to get lots of red meat, mostly beef. I'm slightly anemic, which isn't uncommon in celiacs. Red meat is healthy for us and the environment. -

Terrible Neurological Symptoms

Healthy diet leading to terrible bloating
The proteins in all the grains are similar enough to gluten to cause me to cross react. Oats slaughter me. Plus, all the grains have prolamines, which are toxic to humans. The official recommendations for grains are not good for anyone, let alone celiacs. I do best on a high fat diet, including lots of saturated animal fat. Saturated fat does not cause... -

Osteoporosis: Does the body start rebuilding bones after starting a gluten-free diet?
Lifting heavy weights is the very best way to build strong bones. I've read that the bone drugs make the scans look better, but don't help bone functional strength. -

Shingles - Could It Be Related to Gluten/ Celiac
Our immune system is largely in the gut. About 50% of adult Americans are estimated to have dysbiosis. Dysbiosis and resulting leaky gut and inflammation wreaks havoc on the immune system. Recommend checking for dysbiosis, and do everything to support a healthy gut. NSAIDs are terrible for the gut.
