Really Random Sandwich

I'm wondering if this might be more appropriate in the "you know you a celiac when" thread but oh well :rolleyes:

Here are the ingredients:

2 corn thins

1/2 avocado

plain hummus

put the avocado on one corn thin, the hummus on the other, put em together... and there you have it...a really random sandwich. They just happened to be the only ingredients I had handy and I was hungry...but it was good! I'm thinking the addition of some turkey or chicken and salt and pepper might make it even better and less strange, but anyway, just thought I'd share...

(corn thins in my opinion are MUCH better than gluten-free bread in sandwich type situations....)

I put peanut butter on one corn thin and cream cheese on another corn thin and made a sandwich...sounds kind of strange but it was really good in my opinion! :)

Thanks for the idea - I just had a tuna/hummus/corn tortilla sandwhich yesterday, but now I want to try this with the avocado - great idea!

By "corn thins" do you mean tortillas, or is there something out there that I don't know about (I'm new to this)?

It's not a sandwich, but delicious nonetheless. I was going to have some Cocoa Pebbles last night, but we only had enough milk for the kids for breakfast, so I scooped out some Edy's Root Beer Float ice cream and poured the Pebbles on. Why didn't I think of this sooner? :huh:

I'd vote chicken over turkey, due to the hummus, but yes, that would be one tasty sandwhich. Wonder if you could get a tomato to stay on that thing? :lol:

Corn thins are one of my staples. And they don't go stale

Cottage cheese and avocado.

corn thins under baked beans and scrambled eggs.

In a hurry, just corn thins.

But when doing after school care, I must remember to take a few to share with the children. But they love the sakata crackers better, but would rather the flavoured types, which I won't have, only plain for me.

They should be in the same aisle with the rice cakes (they come in the same type of packaging and they also look like rice cakes). I have found them in the Wild Harvest section of Shaw's and also with the rice cakes in Whole Foods. They are made by Real Foods.....website is www.cornthins.com

They are very good..I hope you find them! I eat them constantly....they are good for a quick snack by themselves as well... (with a few squirts of "I Can't Believe It's Not Butter" no-fat buttery spray, they taste just like buttered popcorn!)

these are good I agree- I like them best with peanut butteror some nut butter

but I also make them with pesto sauce and vegees

Yes I'm sure they would. Corn Thins present endless sandwich possibilities :lol: I also like them with peanut butter. Sometimes I make egg sandwiches with them for breakfast.

Can you freeze Corn Thins? Anyone tried it? I love these. Great with Salmon, slice of onion, dolop of sour cream, pepper and dill.

Oh now that sounds do good with Salmon, sour cream and dill mmm mmm good. I had mine with egg salad the other day and that was good. They are nice because I get tired of rice cakes.

90 second yummy bread (made with rice flour, flax, walnuts, garlic)

Ahi tuna

canola mayo

yellow low acid tomato from my BF's garden

avocado

sea salt

pepper

Yuuuuuummmm :P

      So I've been dealing with chasing the name celiac because of my body actively dealing with health issues related to celiac though not eating. Diagnosed in 1994 before foods eliminated from diet. After 25 years with former pcp I googled celiac specialist and she wasn't because of what ive been through. I wanted my results to be sent to my pcp but nothing was sent.I have email copies.I did one zoom call with np with team member from celiac specialist in Nov 2025 and she asked me why I wanted to know why I wanted the celiac diagnosis so bad, I sad I don't, its my life and I need revalidaion because its affecting me.KB stated well it shows you are.I asked then why am I going through all this.I was labeled unruly. Its been a celiac circus and medical has caused anxiety and depression no fault to my own other than being born with bad genetics. How is it legal for medical professionals to gaslight patients that are with an ailment coming for help to be downplayed? KB put in my records that she personally spent 120min with me and I think the zoom call was discussing celiac 80 min ONE ZOOM call.SHE is responsible for not explaining to my pcp about celiac disease am I right?

      I've noticed with my age and menopause my smell for bread gives me severe migraines and I know this.Its alarming that there are all these fabulous bakeries, sandwich places pizza places popping up in confined areas.Just the other day I suffered a migraine after I got done with my mri when a guy with a brown paper bag walk in front of me and I smelled that fresh dough bread with tuna, I got a migraine when we got home.I hate im that sensitive. Its alarming these places are popping up in airports as well.I just saw on the news that the airport ( can't remember which  one)was going to have a fabulous smelling bakery. Not for sensitive celiacs, this can alter their health during their travel which isn't safe. More awareness really NEEDS to be promoted, so much more than just a food consumption!FYI I did write to Stanislaus to let them know my thoughts on the medical field not knowing much about celiac and how it affects one.I also did message my gi the 3 specialist names that was given on previous post on questions on celiac. I pray its not on deaf door.

      I used to be able to get the Rivera yougut i havent been able to get it lately. I like getting it did say it did say gluten free. I just looking for a good yogurt that gluten free that i can add some fruit and nuts to any suggestion would be helpful  thanks
