Shirley - When you come down to share my chocolate will you help me train my 7 month old puppy? I fear that he is training me more than the other way around. I'm good with kids, but am stumped with him. He's more spoiled than any of my 4 kids are! I'm lucky to be able to get him to walk on a leash for a few minutes until we get to where he can be off-leash and get all that puppy energy out. The kids have been helping teach him things like sit, shake, dance, lay down, stay and roll over, but he'll only do those tricks if we have treats for him. He'll also only come when he's called if he knows we have a treat. We were going to get him into dog obedience, but both classes in our area fall on days that I coach basketball, so will have to wait until summer, when the boys' baseball season is over, since that will interfere too.

Cathy - Good for you to be up early exercising every day! Sorry to be ignorant, but what is a budgie? It sounds like what we call a parakeet? I love the web - it's so fun to have people from all over the world on this forum. I have a friend who lives in New Zealand now and would love to go visit her - we were roommates in college.

Liz, I'd love to work with your puppy .. and of course share that chocolate :lol: Not with the puppy of course. Chocolate is poisonous to dogs, and so is onions.

Perhaps your main problem with the puppy training is going to be "being consistent." With so many working with him it will be hard. You really must sit down and figure out which training words to use, and everyone use the same words. For instance, if someone is saying 'get down', or ' no quit', or no jump' when the puppy is jumping up on someone ... and then using 'lay down' when you want the puppy on it's belly on the floor. You are going to have one confused puppy.

If your puppy is jumping up ... use "get off" and everyone use the exact same words. Praise big time as soon as all four feet are on the floor. Instead of using the words lay down ... simpley use "down" and everyone use just the one word. Less words for the puppy to lean. Like puppies do not understand "will you please lay down" .. they soon learn to understand "down" in a firm command.

Tone of voice with puppies and dogs is everything! They know when you use a 'command' tone and a 'play' tone. An angry tone will get no where. The puppy, along with humans will just shrink from it. For instance, if your puppy does not "come" when called, and you get angry, keep the anger out of your voice. If your husband called you in a very angry voice, would you come? :lol: We always say you can swear at your dog as much as you want, as long as you use a happy voice tone :lol:

The recall should always be taught on a long line, that way if puppy tries to ignore you, you can encourage him by pulling the long line. That way he doesn't get a chance to learn that he can refuse and get away with it. Always use the two words "Puppy name "COME". Sit the children on the floor. Put a long line on puppy. No treats! The first child hold the puppy, but doesn't speak to him. The second child have the end of the long line and calls the puppy in a happy voice. If the puppy comes, then praise big time. If the child has to pull the long line, still praise when he gets there, but not so much. Long line passes to the next child, and the same thing happens. Make it a game. Puppies like to play games and that's the way they learn. :P

Leash walking can be trained either with treats, or simply with voice and hand pats. Start in the house on leash. If you are using treats, have the leash in your right hand, puppy on your left, treat in the left. Start out with three steps talking to puppy and having him look at the treat. If he does three or four steps by your side halt and say "YES" in a happy tone and give 'tiny' treat. Keep lengthening the number of steps between treats.

Without treats, is the same, but pat your left leg to encourage puppy to stay there. Halt at three or four steps and praise big time. Keep lengthening the number of steps between praises. Then take it to a small area outside where there isn't too much distraction ... and find more and more distraction as he gets better.

Cathy, we call them budgies in Canada too :lol: Good for you helping out the poor little guy!

Hello,

I agree that since I have gone gluten free in the past few months I have actually GAINED weight, which stinks cause I thought I was eating healthier. I am not a doctor, but I have taken over 3 1/2 years to loose 100lbs (went from 120 to 220, down to 110lbs) I stressed constantly over the amount I weighed daily, and that I feel now was not the best for me due to the fact that STRESS causes more weight hehe. I began more to focus on how my energy level was, how my butt looked in jeans ahha, and overall my attitude began to change. Even though I added 15lbs since going on the new diet this winter, everyone says I am looking better. does that make any sense? sorry for the rambling.

Shirley - Thanks for all the pointers for puppy training. We'll start by getting one set of vocabulary for all his commands. Maybe that's why he does well with "sit", "shake" and "stay" because they're all one word commands that everyone uses consistently.

LOL - Of course you ask for "recipes" that I just have in my head rather than written down. I'll try to share as best as I can.

Chicken and Dumplings

Start with chicken gravy with large pieces of chicken in it. (I boil a chicken, take the chicken out of the broth, thicken the broth with rice flour/water until it's the right consistency, then add back most of the meat. I use the rest of the meat for other things.) I use my big Revere ware pot - it's about 12 inches in diameter and about 6 inches deep.

Dumplings

2 C gluten-free flour (I use br. rice, potato starch, tapioca starch and xanthan gum)

1/3 C Butter, margarine or Spectrum organic shortening (add 1/2 tsp salt if using shortening)

1 Tbs Baking powder

1 C Milk (or rice milk)

Cut butter into flour mixture and baking powder with pastry cutter or two knives until it's well mixed in - no big lumps. Add milk and mix thoroughly.

Drop by heaping spoonfuls into boiling gravy. Cook uncovered for 10 minutes and then covered for 10 more, reducing heat to avoid boiling over, but allowing it keep simmering.

Teriyaki Chicken

Put desired chicken pieces in an oven-proof dish with a cover. (Or you can cook it in a skillet on top of the stove.) Dump in gluten-free soy sauce, pineapple juice, a shake of garlic and ginger. Shake it around to let everything mix together. Bake at 350 for 1-1/2 hours or on top of the stove until chicken is tender and no pink is left - about 30 minutes. Serve with rice and salad. (You can also bake the rice in a covered dish in the oven right along side the chicken.)

I usually do soy free "teriyaki". I mix pineapple juice, ginger and garlic with a little bit of "Ume Vinegar" that I got in the Asian section of my regular grocery store. It's salty like soy sauce and doesn't taste quite the same, but since I can't handle soy it's what I have to do. Sometimes I will make two dishes to go in the oven - a small one for me and a big one with soy sauce for the rest of the family.

"Spud Puppies" are the health food alternative to Tator Tots. They don't have soybean oil or hydrogenated fats, so I can eat them. I think they're Cascadian Farms brand. The kids love them and they don't seem as greasy as tator tots.

Chinese Chicken Salad

Make salad.

Cook bite-sized pieces of chicken with garlic and salt.

Make fried noodles - Open a small package of Thai Kitchen noodle soup. They're small plastic packages with seasoning packets. It's like a top ramen kind of thing that you're supposed to make in your own bowl. I'm sure you could use other kinds of rice noodles too. Break noodles into small pieces BEFORE you cook them. Heat a small amount (like maybe 1/16 of an inch in the bottom of the pan) of coconut oil (or whatever oil you use) and toss in 1/2 the noodles. They puff when they're done - it doesn't take long. Stir them around. Be ready to get them out quickly before they get too brown. Repeat with the second 1/2 of noodles. You probably won't need any extra oil.

Mix everything together and top with "Feast from the East" Sesame Dressing - bought at Costco.

Mexican Lasagne

1-1/4 lb. ground turkey or beef

1/2 large onion

1-28 oz can tomato sauce

a few shakes of garlic powder

a few shakes of chili powder

a few shakes of cumin

Grated Cheese (can leave out if dairy-free)

Sliced olives, optional

Use either corn tortillas or Enjoy Life br. rice tortillas for "noodles".

Brown meat and onion. Mix meat, tomato sauce and spices.

Make layers, just like lasagne, starting with tortillas on the bottom, a layer of meat and tomato sauce, olives and cheese, tortillas again, etc.

Bake at 350 for about 20 minutes. Cut into pieces like lasagne. Good topped with sour cream if you can handle dairy. We always have this with cooked corn or green beans and salad.

Hi Aizlynn; it makes perfect sense. Your colour is likely better, and if you are feeling better it makes you look better by putting a little spring in your steps and more smiles on your face. Everyone always looks better with a smile for sure :D

I think most people weigh themselves too often and adds stress to the diet. We are only weighing in once a week (on Sat.) and don't beat ourselves up if we don't loose, or even if we gain a bit. Staying on our gluten free diet is the important part. Loosing weight would be nice, but keeping healthy and as fit as possible in a busy world is what we need to do :P

Being in this thread really is a help to get us up and doing ... how's that treadmill behaving Patti? And if you have to tell that you ate a handful of M&Ms, you tend to try and keep it to half a handful :lol: Just kidding ... it really is helpful talking to people who are trying to do the same as you are.

I feel like I may have a lactose intolerance. My stomach has been hurting and rumbling since after I ate my bowl of cereal this am! I am miserable. Maybe it is the flu. Who knows.

I didn't do as well as I'd hoped today. It's rainy and cold and we didn't make it to the gym or go for a walk.

B - 3 pieces of turkey bacon and a slice of rice toast (no butter), a small Satsuma orange

L - 1 slice deli turkey, 10 rice crackers dipped in spaghetti sauce, banana

S - Satsuma orange, a few bites of chicken while making dinner

D - white chicken chili soup, a few more rice crackers with a bit of jelly

Oops - several orange slices dipped in dark chocolate and a few chocolate raisins too

A budgie is a budgie. A native Australian bird. Could be a parakeet, I think at the pet shop when I noticed them offering me a parakeet food mix, I said, but it is a budgie, and she said they call them parakeets elsewhere. I am not so sure.

Liz--thanks for the tip about pineapple, ginger and garlic. I'm also sensitive to soy, and that sounds like a nice flavoring for chicken stir fries. Maybe even a small can of crushed pineapple....

Shirley--the treadmill is going well! The motor is a bit loud, but I just turn up the TV and have at it. :lol: Are you still in the deep freeze there? Yesterday, our high was 30--today, it's supposed to go up to 47!! It hasn't been that "warm" in a while.

Sorry ladies I havent felt like being on the internet the last few days,I'm not sure what it is.

I did lose 1 lb on monday , Eating hasnt been great my appetite is horrible and Im just getting by on veggies for the day since meat sounds gross :( Im going to try some chicken broth later.

Yesterday I ate

cucumber

celery

Water isnt sitting well on my stomach either but Im trying to get some things in today more, I need to pull out my ginger capsules and see if that will help with a little hot water.

B: Yoghurt

L: Stir fry curried vegetables with white rice (smells Indian says one of the staff, so it was good), apple. banana, 4 rice crackers with double brie and pickle. Sounds a lot now, and I think it was a lot! I like it when others come into the staff room and say, oh that smells nice, and I put my hand up and say it's mine. See gluten free eating is not all that bad. Thqt comment is better than the "that looks healthy" comment, that sounds like another way to say boring! Just heard on the radio, that being healthy is the slowest way to die! Now that is food for thought.

T: Boiled mince with potato , peas and followed by canned apricots and ice cream. I said that quick so it did not sound too much.

Now it is off to work and organise healthy lunch options for children's lunches. It means I am busy, but I'd rather that than twiddel my thumbs and read all the library books on the shelves. But then there are so many awesome childrens books out there.

Budgies are fine. Found a picture of a parakeet on the net, and yes they probably are the same. The one we found on Thursday is quite happy and settled, the little new one is a bit lost, but the older one has taken her under his wing.

Here is an interesting site about our birds in New Zealand, some are quite weird and unusual if I may say so.

Autumn, I sure hope you are starting to feel better now. Not fun being sick!

I spent another day in town, Castlegar again, with hubby. We went in to get a water purifier kit for the house. We have been boiling water for the past three years or so, decided it would be just as cheap to splurge on an Ultra Violet purifing system for the whole house. $400, but I think it's going to be worth it, as soon as we get it installed.

Well, like I said, in town again, so you know my diet got weired.

B- gluten free cereal with skim milk

L- Dairy Queen sundae ... hubby had a chilly burger ... looked good :rolleyes:

S - popcorn and an orange

D - filet of sole done with lemon pepper and some shoe string potatoes done in the oven.

S - piece of chocolate and glass of wine.

Just can't stay away from that chocolate .. I think I'm addicted. :huh::(

On the plus side, I did go to the gym to work out with my 13 year old daughter and did a lot of cardio and have been for a short walk with my 15 yo daughter (and the dog) and will go for another one with hubby (and the dog) before bed.

It's been a strange day ... had a walk in the morning, after that not much exersize, I painted downstairs all morning and then the afternoon on the computer getting the newsletter ready for printing tomorrow. At least I hope I'll get it printed, haven't been able to get hold of the lady that runs the mill office. :( I'll have to phone there tomorrow.

One of these days I'll have to set every thing aside and do some serious house cleaning ... Oh for a housekeeper :rolleyes: One can only dream :P

Shirley - I think you win the award for the most faithful member of our "group". I wonder if everyone else has given up?

Yesterday was my older son's 12th birthday, so I ended up having dessert at grandma's and then cake and Rice Dream at home. I won't even go into the part about finding a store that sells tons of gluten-free stuff and eating several vanilla K-Toos :ph34r: .

On the positive side though - I worked out again at the gym with both my daughters and went for my normal "dog walk".

Nope--I haven't given up--still just plugging along :D

I've been doing my treadmill and Pilates daily. It feels good to be exercising regularly again.

The weight loss has stalled--I'm down 10 lbs since the beginning of January--but holding steady. I'm even noticing my pants are fitting the tiniest bit looser. :rolleyes:

Today, breakfast was 2 slices of toast with a little Smart Balance and fruit spread/lunch was a salad, hamburger (no bread) and butterscotch pudding. Dinner will be pork chop, mashed potato and broccoli. I'll most likely have 2 Enjoy Life Snickerdoodles at some point.

Has anyone heard how Autumn is doing? I hope her and her little girl are doing better. I've been thinking of them all day.

Not much exciting happening around her today. I spent the morning downstairs painting and the afternoon getting my 32 page newsletter together. I took it up to the mill office this evening to print. Now just have to put them all in the mail tomorrow.

I did hear from my sister-in-law up in Prince Rupert. It's her 65th birthday today, so I wanted to surprise her with something special. Last week I made her up a big 65th birthday banner on the computer and sent it up to my Dad with a cheque for him to pick some flowers out for DSIL.

He picked her up a beautiful boquet of 14 orange roses and baby's breath :D Then he took it up to my brothers when SIL was out for lunch. My brother and Dad put the banner right across the fridge and the boquet on the table for her to find. :P She was surprised big time! Said it made her day! She sent me a big picture of the boquet and I've made it my desk top on the computer. Looks beautiful :lol: So now we both get to enjoy it!

Today wasn't too bad for my diet.

I'm still here too. Not gone far.

A bit unhappy with my diet, a bit jaded. It feels like for the last 3 years, I have written down every single morsel that has gone into my mouth. Firstly in an effort to loose weight, and it worked and then this time last year to keep a track of gluten and any reactions. I am doing well on the gluten-free diet, but not as successful with the weight loss part. But feel I might be obsessing about food, probably no might about it, I need to take a couple of steps away, as the thought of food takes up a major part of my day. I am going to chill out for a little while, and relax but I will still watch what I eat, and hopefully by not worrying too much I might just manage to do what I have been trying so hard to do! I just don't want to be obbssessed with food for the next 40 years! I want to be able to get to a stage where I don't have any food issues, ie overeating. But there probably is only one way to do that, and is to loose those last few kilos and then relax, and not relax first!

I will keep up with the walking, with a dog there is not much choice, and with a persisitant friend there is plenty of oportunity to walk. It is just 15 minutes walk and I'm in native bush, it is all downhill, but that means I still have to climb up hill, but it is beside a waterfall, to get home. Puff puff. But it is my favourite walk.

Shirley - K-Toos are like Oreos. They're made by Kinnikinnick and they're really yummy. I'd never even heard of the vanilla ones until yesterday. The chocolate ones are great.

I see you like peanut butter and banana sandwiches too! I used to eat those all the time. Now, I pretty much stick with almond butter, but I should make one soon.

I still didn't show much willpower today, although I did get a really good workout again at the gym. Nothing like a motivated 13 year old to get you going! I also coached basketball practice and still have my dog walk with hubby before bed. At least I'm burning off a lot of these calories!

Hi Shirley,

Snickerdoodles are kind of a sugar cookie dough that has been rolled in cinnamon sugar and baked. They're chewy usually.

Enjoy Life Foods makes one that is very good--on top of being gluten-free, they contain none of the other top allergens. The only problem with them is that I could easily eat half the box at one sitting :lol:

Hi Cathy, there's nothing like trying to go on a diet on top of Celiac Disease that gets you obsessing about food. Every time I think ... "I shouldn't eat that" I get really, really hungry and have to eat something! So ... it's off to the popcorn :lol: I don't know how much popcorn I've gone through :o Good thing there isn't very many callories in it.

Oh, those sound really good ... If I had them in the house I would go through a whole pack! I love Cinnamon and sugar Patti, but I'm beginning to think that I have a cinnamon allergy. I eat an apple cinnamon cereal ... or at least I was, but I'm connecting the sores in my mouth to it. I finally gave the cereal to my hubby, who will eat almost anything. :lol:

The same thing happened when I made cinnamon toast out of a pizza crust. Wow! was it good! But again ended up with blisters in my mouth. :( So I think I'm going to have to give up on that.

On the other hand ... it's a good thing that some foods bother me, or I would eat everything in the house. :rolleyes:

Liz .. K-toos sound good, I'll have to check in town and see if they have them. I don't order off the internet very much as they do have so many products in the area now. Saves shipping costs.

Hi everyone :) Im back :)

We are 100% better here. I didnt get the water tested since I found out insurance might not cover it and my daughter and I are back to normal :) Im sticking to distilled water or reverse osmosis. Im looking into a filter for the house also.

Diet today was very good :)

Breakfast- Steak and eggs, applesauce on the side

Lunch- chicken salad which was yummy! I also had frozen organic strawberries ( no breathing problems!)!!!!! So it makes me so happy that I might have another fruit to eat! I wonder if its what they use on it with the corn instead of just the mold issues. Dealing with all of these allergies is getting tricky to figure out. Im not making it a regular thing though since technically Im suppose to avoid them

Dinner- Pork, cauliflower, broccoli and a little rice on the side.

Snack- Im not sure yet?

I went to my eye dr and had more glaucoma testing done to see if its getting better and I found out I have it now in my other eye also. Not a huge surprise though since I was told it was likely to happen. Im having laser surgery on my left eye March 6th and recheck in a week, if it goes well then in April I will have my right eye done. Im hoping I will be able to go off drops for a little while as they have some serious side effects. Maybe as long as 3-5 years. If that's the case we might be able to revisit the idea of having another baby :) but our current house is too small so it will be after we are able to sell our house and move. I also started having problems with a tooth I cracked and next week Im getting a crown on it. I could wait but I might end up having a root canal if it breaks more and its double the deductible I would have and alot more painful. I also desperately need to get my daughter's picture taken since its been too long.

Dh is playing the Wii at his friend's house tonight after work at 3am :blink: :blink: Yep he's 40 years old and his friend Jerry is the same age. His friend Jerry has three kids and he is married, I hope they do not wake anyone up. Oh well, when my daughter is old enough they will be good playmates with the video games :P

I also was able to get on the treadmill today :)!! It felt good after the stressful week!

Guess how much weight I lost from the diarrhea- 6lbs! But I bet its almost all water weight and will be back on in a day or two.

Hey all...MISS ME? LOL

Well here is the scoop. I am just frustrated so I havenet been posting much...still reading though. I have been having a lot of diarrhea and stomach pains. I went to the allergist yesterday and will be tested for other foods next week. I thought it was lactose...but now I am confused. I have NO appetite till about 10am...then I am hungry but maing poor choices becuase my tummy hurts. I FORCED myself to eat the chili I had for lunch yesterday. This morning I have been to the bathroom already 4 times in 1.5 hours!!! I have lost another pound. I think this is 3 now.

Yesterday I ate:

B-slim fast optima (lactose free)

L-chili with tortilla chips

S-almonds

D-hamburger with mozzerella and tater tots

I know I need vegetables and fruits. My stomach is so uncomfortable though they sound gross to me.

Autumn: I stopped the metformin...I am having enough diarrhea without it. I am sure it was making me feel more fatigue.

On the good side: Paige drank 1 oz of milk and was good!! I had the epi pen out just in case..... Not even a hive! I will try some more in a cople of days. She is a little congested from teething and dont want to get confused.

WELL I am off to get my dd and my haircuts. My 4yo has hair to her bottom and wants to get 10" cut off for locks of love....so we will see if I can do it. Her hair is soooo pretty. I am afraid I will cut all of the curls out. I think a haircut will make me feel nice.

I almost forgot to tell you all......WE ARE HAVING A NEW HOME BUILT!!! I am soooo excited. That is what we did Tuesday. We went and picked out all of the colors. Now I have to clean and organoze this house so we can sell it.

      Thank you for sharing all of this, Knitty Kitty! I did just want someone to share some commonality with. I did not know This one Deficiency was a thing and that it's common for Celiac Disease. It makes sense since this is a disorder that causes malabsorption. I will have to keep this in mind for my next appointments. You also just spurred me on to make that Dietician appointment. There's a lot of information online but I do need to see a professional. There is too much to juggle on my own with this condition.<3

      I think your initial idea, eat gluten and be tested, was excellent. Now you have fear of that testing, but isn’t there also a fear each time you eat gluten that you’re injuring your body? Possibly affecting future fertility, bone health and more? Wouldn’t it be better to know for sure one way or the other? If you test negative, then you celebrate and get tested occasionally to make sure the tests don’t turn positive again. If you test positive, of course the recommendation from me and others is to stop gluten entirely.  But if you’re unable to convince yourself to do that, could a positive test at least convince you to minimize your gluten consumption?  Immune reactions are generally what is called dose response, the bigger the dose, the bigger the response (in this case, damage to your intestines and body). So while I am NOT saying you should eat any gluten with a positive test, the less the better.

      @Riley., Welcome to the forum, but don't do it!  Don't continue to eat gluten!  The health problems that will come if you continue to eat gluten are not worth it.  Problems may not show up for years, but the constant inflammation and nutritional losses will manifest eventually.  There's many of us oldsters on the forum who wish they'd been diagnosed as early.    Fertility problems, gallbladder removal, diabetes, osteoporosis and mental health challenges are future health issues you are toying with.   To dispel fear, learn more about what you are afraid of.  Be proactive.  Start or join a Celiac group in your area.  Learn about vitamins and nutrition.   Has your mother been checked for Celiac?  It's inherited.  She may be influencing you to eat gluten as a denial of her own symptoms.  Don't let friends and family sway you away from the gluten-free diet.  You know your path.  Stick to it.  Be brave.

      @tiffanygosci, Hello.  I apologize for your thread being hijacked.   I recognize your symptoms as being similar to what I experienced, the migraines, food and chemical sensitivities, hives, nausea, the numbness and tingling, joint pain, tummy problems, sleep problems, emotional lability, and the mom brain.  My cycle returned early after I had my son, and I became pregnant again with all my symptoms worsening.  Unfortunately, I lost that baby.  In hindsight, I recognized that I was suffering so much from Thiamine deficiency and other nutritional deficiencies that I was not able to carry it.   Celiac Disease affects the absorption of nutrients from our food.  There's eight B vitamins that must be replenished every day.  Thiamine Vitamin B1 becomes depleted first because it cannot be stored very long, less than two weeks.  Other B vitamins can be stored for two months or so.  But Thiamine can get low enough to produce symptoms in as little as three days.  As the thiamine level gets lower, symptoms worsen.  Early symptoms like fatigue and anxiety are often attributed to life situations, and so frequently go unrecognized by medical professionals who "have a pill for that".   I used to get severe migraines and vomiting after gluten consumption.  Thiamine and the other B vitamins are needed to turn carbohydrates, fats and proteins into fuel for our bodies.  With a large influx of carbohydrates from gluten containing foods, the demand for Thiamine increases greatly.  Available thiamine can be depleted quickly, resulting in suddenly worsening symptoms.  Emotional stress or trauma, physical activity (athletes and laborers) and physiological stresses like pregnancy or injury (even surgery or infection) increase the need for Thiamine and can precipitate a thiamine insufficiency. Pregnancy requires more thiamine, not just for the mother, but for the child as well.  The mother's Thiamine stores are often depleted trying to meet the higher demand of a growing fetus.  Thiamine insufficiency can affect babies in utero and after birth (autism, ADHD).  Having babies close together doesn't allow time for the mother to replenish thiamine stores sufficiently.   Thiamine insufficiency can cause migraines, pins and needles (paresthesia), and gastrointestinal Beriberi (gas, bloating, diarrhea or constipation, back pain).   Thiamine deficiency can cause blurry vision, difficulty focusing, and affect the eyes in other ways.  Thiamine deficiency can damage the optic nerves.  I have permanent vision problems.  High histamine levels can make your brain feel like it's on fire or swelling inside your cranium.  High histamine levels can affect behavior and mood.  Histamine is released by Mast Cells as part of the immune system response to gluten.  Mast Cells need Thiamine to regulate histamine release.  Mast Cells without sufficient thiamine release histamine at the slightest provocation.  This shows up as sensitivities to foods, smelly chemicals, plants, and dust mites.  Thiamine and the other B vitamins are needed to lower histamine levels.  Vitamin D is needed to calm the immune system and to regulate our hormones.  Menstrual irregularities can be caused by low Vitamin D.   Celiac Disease is a disease if Malabsorption of Nutrients.  We must take great care to eat a nutritionally dense diet.  Our bodies cannot make vitamins.  We must get them from what we eat.  Supplementation with essential vitamins and minerals is warranted while we are healing and to ensure we don't become deficient over time.  Our bodies will not function properly without essential vitamins and minerals.  Doctors have swept their importance under the rug in favor of a pill that covers the symptoms but doesn't resolve the underlying issue of malnutrition. Do talk to your doctor and dietician about checking for nutritional deficiencies.  Most blood tests for the eight B vitamins do not reflect how much is available or stored inside cells.  Blood tests reflect how much is circulating in the blood stream, the transportation system.  Blood levels can be "normal" while a deficiency exists inside cells where the vitamins are actually used.  The best way to see if you're low in B vitamins is to take a B Complex, and additional Thiamine and look for improvement.   Most vitamin supplements contain Thiamine Mononitrate, which is not easily absorbed nor utilized by the body.  Only thirty percent of thiamine mononitrate listed on the label is absorbed, less is actually utilized.  This is because thiamine mononitrate is shelf stable, it won't breakdown sitting on a shelf in the grocery store.  It's so hard to breakdown, our bodies don't absorb it and can't turn it into a form the body can use.  Take Thiamine in the form Benfotiamine or TTFD (tetrahydrofurfuryl disulfide) which the body can utilize much better.  (Ask for an Erythrocyte Transketolace Activity test for Thiamine level.  Though not accurate, this test does better picking up on a thiamine deficiency than a blood test.) Are you keeping your babies on a gluten free diet?  This can prevent genetically susceptible children from developing Celiac Disease.   P. S.       @Riley, on this forum we sometimes get reports from people with similar experiences as you. That is, their celiac disease seems to go into remission. Typically, that doesn't last. At age 18 you are at your physical-biological peek in life where your body is stronger than it will ever be and it is able to fight well against many threats and abuses. As Wheatwacked pointed out, absence of symptoms is not always a reliable indicator that no damage is being done to the body. I was one of those "silent" celiacs with no symptoms, or at least very minor symptoms, whose body was being slowly damaged for many years before the damage became pronounced enough to warrant investigation, leading to a diagnosis. By that time I had suffered significant bone demineralization and now I suffer with back and neck problems. Please, if you choose to continue consuming gluten, which I do not recommend, at least get tested regularly so that you won't get caught in the silent celiac trap down the road like I did. You really do not outgrow celiac disease. It is baked into the genes. Once the genes get triggered, as far as we know, they are turned on for good. Social rejection is something most celiacs struggle with. Being compliant with the gluten free diet places restrictions on what we can eat and where we can eat. Our friends usually try to work with us at first but then it gets to be a drag and we begin to get left out. We often lose some friends in the process but we also find out who really are our true friends. I think the hardest hits come at those times when friends spontaneously say, "Hey, let's go get some burgers and fries" and you know you can't safely do that. One way to cope in these situations is to have some ready made gluten-free meals packed in the fridge that you can take with you on the spot and still join them but eat safely. Most "real" friends will get used to this and so will you. Perhaps this little video will be helpful to you.
