I do fine with beef, but not with regular-brand chicken.

I've found that Kosher chicken, such as Empire, is much better for me. I was getting a lot of gas and bloating from regular chicken--especially if also eaten two days in a row (like leftover in a salad at lunch).

If you can find Empire, or another Kosher brand, you could give it a try. I get mine at Wegman's (a large grocery chain).

I also found myself intolerant to all grains after I went gluten-free. I stayed strictly grain-free for about 8 months and I can now tolerate rice.

I sometimes have problems with chicken, although it is not clear why. Beef is OK but my face feels greasy for a day or two afterwards. Overall, I do better with fish. Be careful there due to contaminents (heavy metals, etc.).

For the past 15 months, I've been having reactions to additional foods. At first, I just scratched my head because I could see nothing in common with them. A recent post on this board helped me realize that they all contain lectins. According to info on www.dadamo.com, chicken contains a lectin. That may or may not be associated with the issues I've encountered. The site also indicates that chicken should be avoided for my blood type. I'm still trying to decide whether there is anything to the blood-type diet. The best I can say right now is that the diet's recommendations have some ccorrelation with foods that my own experience indicates I can or can not eat.

Best of luck figuring out your own diet. It is really tough when there are few options. I've been keeping my eye open at the grocery store for foods I normally do not eat. Today, I tried parsnips for the first time. They were easy to fix and had a pleasant taste. It was good to get some vegetables and fiber back in my diet. Although I like meat and fish, I prefer not to eat it any more. I feel a lot better on a vegan diet. The catch is that all the high-protein choices are on my avoid list.

Same for me...I did an elimination diet back in November...couldn't ever get to the point where I could add food back in because I was "reacting" the entire time on the base diet. Turns out I have a problem with chicken and lamb. I have no problems whatsoever with beef though. Turkey is okay and so is pork for me.

I am going to try the Kosher chicken Patti talked about. I had been buying Rocky chicken from Whole Foods, and that is what I was reacting to. I know of two highly sensitive people now who have said they did well on kosher chicken but not rocky chicken.

Thanks for the input you guys. Sounds like you all do okay with beef...that's great! Maybe one day I'll get brave and try a little bit. It was one of the first things that I eliminated. Funny how things work out like that...I ended up reacting to my base diet too. I'm not surprised that I was reacting to the packaged applegate farms turkey and the boar's head fresh deli turkey, but I am surprised that I react to free-range chicken. I was reacting to Rocky brand chicken as well dlp!

But that's a great suggestion...Kosher chicken. I'll keep an eye out for it in the store. dlp, if you try it, let me know how it goes :)

Hmm. I was reading up on chicken feed and it doesn't look like they feed the chickens and turkeys gluten...they do feed them corn though. I wonder if that could be the problem? who knows.

      Cristiana, that sounds like a great approach and I will be looking forward to the results. I am in the same boat as you. I don't experience overt symptoms with minor, cross contamination level exposures so I sometimes will indulge in those "processed on equipment that also processes wheat . . ." or items that don't specifically claim to be gluten free but do not list gluten containing grains in their ingredient list. But I always wonder if I am still experiencing sub acute inflammatory reactions. I haven't had any celiac antibody blood work done since my diagnosis almost 25 years ago so I don't really have any data to go by.

      I've been reflecting on this further. The lowest TTG I've ever managed was 4.5 (normal lab reading under 10).  Since then it has gone up to 10.   I am not happy with that.  I can only explain this by the fact that I am eating out more these days and that's where I'm being 'glutened', but such small amounts that I only occasionally react. I know some of it is also to do with eating products labelled 'may contain gluten' by mistake - which in the UK means it probably does! It stands to reason that as I am a coeliac any trace of gluten will cause a response in the gut.  My villi are healed and look healthy, but those lymphocytes are present because of the occasional trace amounts of gluten sneaking into my diet.   I am going to try not to eat out now until my next blood test in the autumn and read labels properly to avoid the may contain gluten products, and will then report back to see if it has helped!

      Hi, I posted before about my son's legs shaking after gluten. I did end up starting him on vit b and happily he actually started sleeping better and longer.  Back to my 4 year old. She had gone back to meltdowns, early wakes, and exhaustion. We tested everything again and her ferritin was lowish again (16) and vit d was low. After a couple weeks on supplements she is cheerful, sleeping better and looks better. The red rimmed eyes and dark circles are much better.   AND her Ttg was a 3!!!!!! So, we are crushing the gluten-free diet which is great. But WHY are her iron and vit d low if she's not getting any gluten????  She's on 30mg of iron per day and also a multivitamin and vit d supplement (per her dr). That helped her feel better quickly. But will she need supplements her whole life?? Or is there some other reason she's not absorbing iron? We eat very healthy with minimal processed food. Beef maybe 1x per week but plenty of other protein including eggs daily.  She also says her tummy hurts every single morning. That was before the iron (do not likely a side effect). Is that common with celiac?
