I saw a Olive Garden commercial and realized how much I miss breadsticks and alfredo sauce!!!!

Does anyone have a good breadstick recipe or know of a good soft breadstick????

Namaste pizza dough makes wonderful breadsticks. Simply form it into a rectangle and then cut it in strips after it has baked. I've also made a foccacia bread that could be made the same way. Can't remember which cookbook it was in. Maybe Carol Fenster? I quit making it when I discovered the Namaste mixes.

At first some of the ingredients seemed odd but even the gluten eatrers in our family like them. If you cut the opening of the plastic bag a little larger, you'll end up with small loaves that are good for making sandwiches. I discovered this by accident!

I dont have a recipe but all of our family love these. I defrost kinnikinnick hot dog buns and slice them in half lengthwise. Cover them with butter/margarine and garlic powder or garlic salt. If you eat dairy there is a spread that tastes good on it too but the name is slipping me right now, if your interested in it I can ask my mom as she uses it regularly. Then you broil it just until its lightly browned how you want it, keep a close eye on it as it takes just a short time to lightly brown. There also no need to cool it down after it cooks since to me it gets warmed up perfectly by the time you are done but not too hot.

The hot dog buns have no dairy in them but they do have egg.

I make these breadsticks a lot and everyone loves them.

My tweaks to the recipe:

I normally throw in a couple of tablespoons each of sorghum flour and flax seed meal, and use roughly 1/2 honey and 1/2 molasses instead of the 3 TBSP of honey in the recipe.

I also find I need to bake them longer to get them to actually start to brown - more like 15 minutes.

I made the recipe tonight and it was good. Ended up a little larger than I would have liked but that was operator error! :D

Chebe is soft and chewy on teh inside but the outside is hard. Not so sure how those would be with alfredo..might have to try that!

If you make the breadsticks, then freeze, and thaw for serving~they are not crisp on the outside, but still soft and chewy on the inside.

BTW I find it saves me a lot of time by doubling the recipes/ make up two mixes and freeze. Then I can rotate through the frozen goodies and bake once a week.

      Another annoying thing about trying to figure this Celiac life out is reading all of the labels and considering every choice. I shop at Aldi every week and have been for years. I was just officially diagnosed Celiac a couple weeks ago this October after my endoscopy. I've been encouraged by my local Aldi in that they have a lot of gluten free products and clearly labeled foods. I usually buy Milagro corn tortillas because they are cheap and are certified. However, I bought a package of Aldi's Pueblo Lindo Yellow Corn Tortillas without looking too closely (I was assuming they were fine... assuming never gets us anywhere good lol) it doesn't list any wheat products and doesn't say it was processed in a facility with wheat. It has a label that it's lactose free (hello, what?? When has dairy ever been in a tortilla?) Just, ugh. If they can add that label then why can't they just say something is gluten free or not? I did eat some of the tortillas and didn't notice any symptoms but I'm just not sure if it's safe. So I'll probably have to let my family eat them and stick with Milagro. There is way too much uncertainty with this but I guess you just have to stick with the clearly labeled products? I am still learning!

      Thank you all for sharing your experiences! And I am very thankful for that Thanksgiving article, Scott! I will look into it more as I plan my little dinner to bring with on the Holiday I'm also glad a lot of research has been done for Celiac. There's still a lot to learn and discover. And everyone has different symptoms. For me, I get a bad headache right away after eating gluten. Reoccurring migraines and visual disturbances were actually what got my PCP to order a Celiac Panel. I'm glad he did! I feel like when the inflammation hits my body it targets my head, gut, and lower back. I'm still figuring things out but that's what I've noticed after eating gluten! I have been eating gluten-free for almost two months now and haven't had such severe symptoms. I ate a couple accidents along the way but I'm doing a lot better

      @Mari, did you read that second article that Scott linked? It is the most recently date one. "Researchers comparing rates of headaches, including migraines, among celiac patients and a healthy control group showed that celiac subjects experienced higher rates of headaches than control subjects, with the greatest rates of migraines found in celiac women.  Additionally, celiacs had higher rates of migraine than control subjects, especially in women. In fact, four out of five women with celiac disease suffered from migraines, and without aura nearly three-quarters of the time."

      As far as I know and I have made severalonline searches, celiac disease disease has not been recognized as a cause of migraines or any eye problems. What I wrote must have been confusing.

      Interesting, when I suffered for a few months with ectopics I noticed that carbohydrates would cause indigestion and bloating in my stomach, then that would lead to my heart skipping beats, and I could feel it in my throat, it was very unsettling.  My last serious bout of this was after eating a Muller Rice Pudding for breakfast.   I happened to be wearing a 48 hour halter at the time and cardiology picked it up, but they weren't worried about what they saw. There was some British doctor who'd made some videos on the Vagus nerve that I remember watching at the time which made sense of what I was experiencing, there did seem to be some sort of connection.
