1/3 cup shortening

Have you tried this recipe? I'm a little leery of a recipe that is all starch and no flour.

I have one of her cookbooks, the gluten free kitchen. She uses only cornstarch and potato starch for all of those recipes. I have made quite a few from each section and I can honestly say they all are delicious. They tase great, they bake great and turn out fine. Don't be scared Larry mac.

Yes, we make these all the time. I don't have a problem with rice flour, but this recipe works well, so we use it. I've made it using 3/4 cup brown rice flour mix and 1/2 cup cornstarch, and that works, too.

I'll add mine, if that's OK. I make these at least once a week:

1/2c butter, melted

2c Pamela's baking mix

~2/3c buttermilk (don't dump all in at once, mix some in a bit at a time to make sure it's not too 'wet')

1/2c-1c sharp cheddar (depending on taste)

1 clove chopped garlic (I acutally use more)

mix all, bake 375 for 8-10 min or until edges are browning

I just drop a glob into one hand, form it into a ball, flatten a little and drop it onto parchment-quick and easy!

Funny this topic popped back up. I have made these mutliple times and they are soooo good! DH loves them, he asked me to make them bigger lol.

I am going to make a batch and freeze some the weekend before family comes to visit. They are by far the best biscuits I have ever had, even before going gluten-free.

Just made these last night and I was absolutely AMAZED at how similar they are to the Red Lobster biscuits that I (very fondly) remember! I was a little worried by how goopy the dough was, and I actually just plopped them on the baking sheet instead of rolling them out. But when they came out of the oven I just couldn't believe that the shape, texture, taste, everything was so much like the Red Lobster ones!

I know this is an old thread, but I just wanted to say thanks so much for this recipe. It made my night. :)

I am so glad you brought this thread back up. Somehow, I had missed it before. I made Fiddle-Faddle's recipe today and loved it.

      I didn't ask a doctor about this actually. I did ask several doctors a long time ago and they told me gluten has nothing to do with hashimoto's. One of them told me to do a gluten challenge to test for celiac, but at the time I was in graduate school so couldn't afford to be even more ill than I was. If you have the symptoms, I really don't advise you to do a gluten challenge. It messed me up mentally and physically for months. At the same time, I benefitted from doing the challenge in the sense that it convinced me that all my symptoms were truly from gluten - even stuff like insomnia! So now I am terrified to eat gluten, whereas before I would have a little once in a while and not notice anything dramatic.

      I am in a similar situation where I can't feasibly do a gluten challenge but have all the symptoms and I have 2 celiac genes. I'm curious if your doctor advised you to eat as if you had a diagnosis or if they were more dismissive about it.

      Negative, although I had most of the symptoms of celiac disease. I now eat as if I had a diagnosis.
