If you could go to a gluten free restaurant and order anything you want, what would it be?

I'm asking because I'm opening a cafe and bakery and am in the process of deciding a menu for the cafe. Personally, I miss eggs benedict and french toast. What do you miss???

Oh man......don't know where to start...lol. Pizza is the #1 food I miss....then bagels would be high on my list, but I found one I really like. I can't eat spaghetti sauce I right now so I really miss lasagna (but I've found my gluten-free lasagna (made w/ Deboles noodles, etc.) is just as good as the old one I used to have. Hmmm...I was thinking of everything I missed last night while I was falling asleep (since I was kinda hungry...lol), but now I can't remember everything. I'll post back later when I remember something or maybe someone else's foods will prompt me to remember my own :lol:

Pastries - the stuff you can't make quite the same without wheat.

But honestly, there is very little that I want these days that has wheat. It's the lack of milk that gets to me. Soy's a substitute, but since I limit it, when soy's out, so are most decent attempts at non-dairy. (Rice milk based yogurt, non-soy non-dairy sour cream, non-soy non-dairy cheese, etc.... you just don't get these things...)

I have actually forgotten what the food I used to eat tastes like. I only remember a few things and that's usually after I smell them. Pizza Hut bread sticks and Little Caesar's bread sticks, too. Monkey bread is something I also miss.

I really don't miss many gluten containing products, since I LOVE most gluten free substitute foods. HOWEVER, I must also avoid dairy and soy. If I could tolerate soy, I could have soy milk, icecream, margarine, yogurt and even dairy free chocolate bars. Can anybody make me a gluten/dairy/soy free fudge? I did find a local bakery which makes great FROSTED gluten-free/df/sf cakes and cupcakes, but I sure would like to have some gluten/dairy/soy free:

Safe CHOCOLATE fudge, truffles or just bars (Ener-G makes safe chocolate chips);

Safe ICE CREAM (that hurts just to type :( ) ;

Safe YOGURT (not sure how to make that from those awful dairy substitutes);

CAN YOU SEE A PATTERN HERE? :lol: I was more dairy than gluten addicted. :blink:

Safe DAIRY SUBSTITUTES (MILKS) THAT HAVE SOME PROTEIN AND FATS, RATHER THAN MOSTLY CARB INGREDIENTS (I do appreciate Vance's which can be used for cooking, but that potato taste is less than appealing to just drink--I can't get the Vance's Chocolate Milk here anymore. Maybe I could order online???)

Well maybe that's enough, since you only asked what I missed in the gluten categories. Maybe the rest of you who miss ol' wheat products will appreciate that you can at least have some dairy and/or soy. The rest of you who have similar intolerances or even worse allergy restrictions have my deepest sympathy. :(

Yes--as good as it sounds to write down what I'd love to eat or to smell it, I think it would be very difficult for me to eat some of these things, knowing what I do now about the damage it does to me and how sick it makes me.

My top foods that I miss are pizza, chinese food and hoagies. I use wheat free pizza crusts but it is definitely not the same. I attempted making my own General Tso's chicken, but again, not the same. I think what I miss most is the convenience of just going somewhere and grabbing a slice of pizza or a hoagie.

keep it coming because there are some surprises here in the Mexican food category. I wasn't planning on putting Mexican food on the menu, but I'll have to rethink that.

Being able to eat out anywhere and my husband not have to ask me if there's anything I can eat at a particular restaurant. Thank goodness he tries to understand. :(

I know--lack of spontaneity....you can't just walk into a restaurant and say "this looks good." I think that's one of the worst things about the diet.

I forgot to mention-- I would LOVE it if there was a 100% gluten-free chain restaurant. The reason I don't eat out is because I'm so paranoid that even if the restaurant has a gluten-free menu, they could mess up my food. It would be amazing to order anything off the menu and feel confident that it's gluten-free.

yes, I plan on opening a chain. I'd like to have a Deby's Bakery/Cafe in every major city in the USA and Canada since I feel there is a need for one. This first one will be in Denver Colorado, but I have a banker who says that if I can show good numbers in the first year, he will support a franchize. That's exciting and scary.

My plan is to have just what you all are describing, go in, get coffee and a pastry or breakfast, or lunch, be 1000% sure it is not contaminated, not only because we know what we are doing, but because I won't even let my employees bring in gluten containing food for their own lunch. The only way there could possibly be contamination is if the flour sources are contaminated (and I'm even being very careful there.)

I've looked at the latest census stats and there are 2 million potential celiacs in the USA. I also heard a doctor broadcast on NPR that humans couldn't even fully digest wheat. Corn, I believe is in that same arena because I have problems with corn as well. I personally don't use any corn in any of my baking. I also try not to use too much milk since that doesn't go over very well either. The main trouble, I think is that we have stripped the germ and fiber off of the wheat so there is nothing to push the bulk through the human digestive system. So it just sits in the gut and ferments. I really believe that North America and Europe are going to have a food revolution as the dangers of refined wheat consumption are made more widely known. If you think about it, why wheat??? Why did the population go so toward wheat where there are all of these other great grains out there? And I know it's almost impossible to believe, but bread and other baked goodies are just as good if not better with these other grains. My whole grain bread has more protine and fiber, not to mention iron, than any wheat bread on the market today. And that is natural without additives. And, I have many people who don't have celiac disease asking for my bread just because they like it better. The most common comment I get is that it's more dense, but this is not made as a complaint usually. It's just an observation that many say is the way bread used to taste before it got Wonderized.

Okay, I'll get off my soap box :)

Anyway, I very much appreciate all of the input I've recieved on this site. I've been asking a lot of questions any everyone here is helping to form this vision for the bakery cafe and grocery. When I'm up and running, website included, you all will have to mention this forum and I'll send you an order with free shipping or something. The input has been invaluable!!! I'm going to refine my cafe menu today. It will be up on my website and all are more than welcome to give feedback.

the designers but the gluten free in the background and the organic in the front. That will be fixed. The grocery store is still closed, but it's coming along and that's exciting.

Laurie, I found a light, kinda flaky bagel (like a croissant) made by Sans Gluten. It isn't dense like most, but I've grown to like it more than the denser gluten-free bagels.

There are also some really good gluten-free English Muffins I found at a place called "Common Market" I am sure they sell them elsewhere to. There were cinnamon English Muffins as well. When I toasted them they tasted so good. I think its the best bread I have tried. It's by a brand called Foods by George in case anyone wants to try them.

Bread has def. been a thing I have missed.

I just read about it in my newletter. When I started reading this post asking for suggestions I was so excited to see it was your place! This is enough to bring tears to my eyes! I was just diagnosed in August and went on my first vacation last week since being dx. We were in Aruba and it was so much harder than I had imagined. very few people understand and it was so frustruating to go with people and watch them order what sounded good rather than what they could eat. I know I should be grateful that I was on vacation and have my health abd blah blah but boy was I feeling sorry for myself a few times (like when the garlic bread gat passed around!). I am really missing:

1. smothered bean burritos (in flour tortillas not corn)

2. chilli rellanos (the crispy type not the soft egg ones)

3. a really good hot sandwich (like an italian sub)

4. a burger ON A BUN

5. onion rings

6. pancakes/french toast

7. pasta with different sauces or lasagna

8. desserts other than fourless chocolate cake, like cheesecake (oh sopapillas or baklava)

9. Anything that I dont have to make and know I can eat!

      during the gluten challenge I did not consume any wheat germ   the wheat germ is TOASTED - it's the only way it is sold now afiak doesn't matter I consume vast amounts of lectin containing foods PROPERLY prepared and have for well over a decade. They do not bother me in the least.    no anemia however the endo who ordered the celiac panel is the one who suggested the 2 week gluten challenge of eating at least 2 slices of bread per day or a serving of pasta- ALSO put me on a new drug at the same time (not a good idea)  I ate 4 slices because they were thin, or 2 English muffins, and just once some lasagna that someone else made since I stopped eating wheat pasta years ago. The English muffins caused some of the worst symptoms but that pc of lasagna almost killed me ( not literally but the pain was extreme) during those 12 days there were at least 3 times I considered going to Urgent Care.   This entire process was a waste of time TBH due to being on that new drug at the exact same time. it is impossible to tell if the drug I am taking for the possible renal calcium leak is working or not- given the dramatic response to the gluten challenge and resulting nausea (no vomiting) and eventually a loss of appetite and lower intake of foods so now I have a dangerously low potassium level   I don't have a simple case of celiac or no- I have an extremely complicated case with multiple variables I am seeing an endocrinologist for a problem with the calcium sensing glands - that system is very complicated and she has been unable to give me a firm diagnosis after many tests with confusing and often alarming results. She also appears to be inexperienced and unsure of herself. but I don't have the luxury of finding a new endo due to multiple issues of insurance, lack of drs in my area, money and transportation. so I'm stuck with her At least she hasn't given up    in any case I can assure you that lectins are not and never were the problem. I know they are a favorite villain in some circles to point to, but I have ZERO symptoms from my NORMAL diet which DOES NOT contain gluten. The longer I went without bread or foods with wheat like raisin bran cereal, the better I have felt. my body had been telling me for several years that wheat was the problem- or maybe specifically gluten, that remains to be seen- and stopping eating it was the best thing I could have done   I almost had unnecessary MAJOR SURGERY due to joint pain that I ONLY have if I am eating bread or related products I assumed it was the refined grains - never really suspected gluten but it does not matter I won't put that poison in my body ever again not that it is literally poison but it is def toxic to me

      @catnapt,  I'm sorry you're having such a rough time.   How much wheat germ and how much gluten were you eating? Lectins in beans can be broken down by pressure cooking them.  Do you pressure cook your beans?  Were you pressure cooking your wheat germ? What drugs are you taking?  Some immunosuppressive drugs affect IgA production.  Do you have anemia?

      oops my gluten challenge was only 12 days It started Jan 21s and ended Feb 1st   worst 12 days of my life   Does not help that I also started on a thiazide-like drug for rule in/out renal calcium leak at the exact same time No clue if that could have been symptoms worse 🤔

      Welcome to the forum @Known1, What reaction were you expecting? Pipingrock.com High Potency Vitamin D3, 2000 IU, 250 Quick Release Softgels $6.89 I've have been taking the 10,000 IU for close to 10 years. When I started with vitamin D I worked my way up to 10000 over several weeks.  Even at 8000 I felt no noticeable difference.  Then after a few days at 10000 it hit Whoa, sunshine in a bottle.  celiac disease causes malabsorption of dietary D and you've poor UV access.  It took me from 2015 to 2019 to get my 25(OH)D just to 47 ng/ml.  Another two years to get to 80.  70 to 100 ng/ml seems to be the body's natural upper homeostasis  based on lifeguard studies.  Dr. Holick has observed the average lifeguard population usually has a vitamin D 3 level of around 100 ng/ml. Could it be that our normal range is too low given the fact that ¾ or more of the American population is vitamin D deficient? Your Calcium will increase with the vitamin D so don't supplement calcium unless you really need it.  Monitor with PTH  and 25(OH)D tests. Because of your Marsh 3 damage you need to ingest way more than the RDA of any supplement to undo your specific deficiencies. I believe you are in the goiter belt.  Unless you have reason not to, I recommend pipingrock's Liquid Iodine for price and quality.  The RDA is 150 to 1100 mcg.  In Japan the safe upper level is set at 3000 mcg.  Start with one drop 50 mcg to test for adverse response and build up.  I found 600 mcg (12 drops) a day is helping repair my body.  Iodine is necessary to healing.  90% of daily iodine intake is excreted in urine.  A Urine Iodine Concentration (UIC) can tell how much Iodine you got that day.  The thyroid TSH test will not show iodine deficiency unless it is really bad.

      I don't know if I am getting sufficient Omega Threes. I read about  phosphotidyl choline may cause heart issues. I will have o do further research on heathy Omega 3 supplements or from foods. Is there a blood test that can tell you everything level in your system such as Thiamine, Benfotiamine levels etc? Thanks
