So ihave a friend who is allergic to gluten. And its her birthday. Ive offered to make her a cake. I have a gluten free recipe so the cake is no problem, but i want to decorate it and have no idea if the ingredients (IN the ingredients) have gluten in them....I know that vanilla extract contains gluten but I hear that mcCormik vanilla doesnt.....so i think im good on that.

I got a list of things from her boyfriend that she can't eat, but i can't tell if these are in the recipe. Can someone help me?

My icing recipe:

powdered sugar

salt

vanilla (use clear if possible to keep icing white)

milk

water

Light Corn Syrup

what he told me she can't eat is:

Dextrin

Malt or Malt Vinegar

Monosodium glutamate

Soy sauce

Carmel color

Modified food starch or modified starch

Any idea if the above recipe is safe??

looks safe to me. Just be sure to read the ingredients and make sure it does not say that is was manufactured in a plant that also processes wheat.

There are gluten free frosting mixes in health food stores along with gluten free cake mixes. Remember, you can't use one of your baking pans, better to use a throwaway aluminum pan.

If she can do dairy, a really good frosting is 1 package cream cheese, 1 container Ricemellow creme. It's the health-food version of Fluff, it's gluten free. I love that frosting.

That is SO nice of you to take up such a task like that!!! I know many of my friends would never even think about making me a cake and go through the trouble to check all iffy ingredients. You seem like a great friend. =)

Well thank you. Yeah and i am making an exceptional gluten free cake. It is an AMAZING recipe, its a flourless cake and literally tastes like a chocolate cheesecake. It is soo good that i even make it for NON celiac people lol.

I wasn't really concerned about the cake because i know taht is safe, b ut i want to decorate it with cornelli lace and stars from my royal icing recipe. Otherwise its kind of a boring looking cake.

She better eat it though! After all this trouble!!!

Vanilla extract does not contain gluten. Just for future reference. :)

I have to agree with you, cross contamination is a big factor for me also I have cealiac and thyroid condition.2 years for me on cealiac. Am I’m still having issues. Went to my gastroenterologist in this past nov. said everything looks good . I am looking into coffee now and what I’ve read cross contamination is possible. I’m stumped. I’m so sick of being sick at times. peace lily🥲

You already got some great recommendations. Just want to second that Mallorca (and Spain in general) is one of the best and easiest places for celiacs to travel. I have been to Mallorca multiple times and have never experienced any cross contaminations and there are SO many easy to buy options in regular supermarkets. Hope you have a wonderful trip.

I agree.  If someone has Barrett's Esophagus, at least here in the UK, as I understand it under normal circumstances a PPI needs to be taken long term (or similar medication).  I have two friends with this.  The PPI it does have side effects but they still have to take it.

Do talk to your doctor about making changes to your medication.    I'm not a medical doctor.   I'm a microbiologist.  I studied nutrition before switching to microbiology because I was curious what vitamins were doing inside the body. I would hate to give advice that jeopardizes your health, so do discuss things with your doctor.

@Jmartes71, Sorry you've been feeling so poorly.   Are you taking any medication to treat the SIBO?   Are you taking any Benfotiamine?  Benfotiamine will help get control of the SIBO.  Thiamine deficiency has symptoms in common with MS. Have you had your gas appliances checked for gas leaks and exhaust fume leaks?  Carbon Monoxide poisoning can cause the same symptoms as the flu and glutening.  Doctors have to check venous blood (not arterial) for carbon monoxide.  Are other inhabitants sick, or just you?  Do they leave the house and get fresh air which relieves their symptoms?
