Peanut Butter Soup?

Has anyone ever made anything like this? I didnt find this on a gluten-free site, but it is definitly gluten free! and two of my fav food- sweet potatoes and peanut butter!

Peanut Butter Soup

This nutritious and delicious soup is made with sweet potatoes, peanut butter and chicken stock.

2 tablespoons olive oil

3 or 4 medium to large sweet potatoes/yams peeled and cut into 1 inch cubes

2 large chopped onions

2 crushed garlic cloves

1 tablespoon ground cumin

8 cups chicken stock

1 1/4 cups peanut butter

1 tablespoon chili sauce (optional)

1/4 cup dry roasted peanuts

1/4 cup chopped cilantro or chives

1. Heat oil and saute onions

2. Add cumin and garlic and stir-fry 30 seconds over medium heat

3. Add chopped sweet potatoes, cover and cook for 10 minutes over low heat, stir to prevent sticking

4. Add Chicken stock, bring to boil and simmer for 10 minutes

5. Add peanut butter and chili sauce, stir

6. Simmer uncovered for half an hour, stir occasionally

7. Puree with a hand held blender or regular blender

8. Add peanuts, cilantro or chives and serve hot

Sounds good.

It'll be cashew butter for me.

I'm thinking that using butternut squash instead of sweet potato might be good, also.

I've made an african version of that with less broth and some crushed tomatoes. Add some meat and a little red pepper flake... to die for. But I am a sucker for sweet potatoes, I'm going to have to give this a try. Thanks for posting!

I made African Groundnut Stew...that's when I found out groundnuts were peanuts :lol:

Yummy! Wow, I'd have never thought of that one, but it sounds so good!!! I'll have to give it a try, I love to cook with peanut butter!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
