Can You Bake With No Starches? Or Sub?

Hi.

I was just wondering if anyone knew or had pointers on baking without starches?

I can't have tapioca starch/flour (similar side effects like gluten) and arrowroot seem to not agree with me.

I cut out Nightshades due to reactions so that eliminated Potato Starch

Yellow Corn bothers me and Corn in general makes me bloat and too much = problems (sorry TMI).

Originally I was doing Potato Starch and Corn Starch but now with eliminating Potatoes I am just left with Corn Starch.

I made some waffles the other weekend and tested out subbing all the starches with corn and that was a no no it tasted normal BUT... did not react very well to it.

What do people do that cannot have or do starches? Do you just sub with more flour?

Any input is greatly appreciated

You can check out the scd recipe thread on here and also try elana's pantry, she has great sounding recipes made with almond flour and fewer ingredients in some recipes...hope this helps!

Yes, check out the almond flour recipes. Also, there are other grains out there that may work for you if you can handle them... buckwheat, teff and others. Carol Fenster has a bunch of flourless cake recipes too; try googling that and see what you come up with!

You can find sweet potato starch in asian food stores. From what i've read, they are not part of the nightshade family. I've not used it in my cooking but it's worth a try.

Can you no have rice flour either? There are three different kinds: white, brown and sweet (or glutinous, as it is sometimes rather anomalously known).

Thank you for the posts about the book. The book looks really neat and the price was good compared to other books.

I bought teff the other week but got the whole grain by accident so have to grind it to flour and try it. Never tried Buckwheat will have to try that soon.

My main flours I have are Sourghum, White Rice Flour and Brown Rice Flour. I haven't tried the Sweet Rice Flour yet just because I live in a smaller town and cannot find it anywhere and haven't driven to Las Vegas yet to get it at Whole Foods (hopefully they have it). I was just in CA visiting family and looked at Henry's for it but nope.

Sweet Potato Starch... very interesting. I will have to keep an eye out for it. I know we do not have any stores like that near me but will look for it. Thanks

I don't recall seeing it at Whole Foods. You can always find it in an Asian market.

By the way, I really like buckwheat flour and use it quite a bit because I am limited in my flours too. I tried putting some Teff flour in pancakes over the weekend and it was very sandy/heavy and soaked up all the liquid which I had to keep adding and adding.... I will need more experience with that--maybe try some of Carol Fenster's recipes.

      Luke warm bath (deep) with a handful of Epsom salts, and bath for about 20 minutes.  Be careful getting out of the bathtub, the magnesium (Epsom salts) can make you feel a bit woozy.  I've suffered from costochondritis, might be what you have?  I find rest very helpful, and avoid any foods that bloat you as this can put added pressure on the ribcage.

      Are you saying that celiac causes you rib pain?  Or that your ribs are fragile due to being celiac?  Or that the vitamins you take act as an analgesic, and that OTC pain-relievers do not work for you?  I don't understand the connection.

      I am so discouraged!  I would rather not eat... or even eat junk (with the expected result)... than cook!  I have been gluten-free (hah) since 2016.  But my husband eats tons of bread, biscuits, cake, muffins... you name it.  Everything on the SCD that's illegal, he eats.  And buys it and brings it home, many times in trying to please me!  Please don't suggest we have a heart-to-heart talk;  been there, done that.  He truly is unable to change.  ONE reason is that culturally, we are opposites.  Another reason is that he is in his 80's and isn't about to do something he doesn't want to.  If I don't cook for him, his nutrition would be less than poor. My mental state is going from bad to worse.  He is also declining mentally (memory, reasoning) and physically, and that makes me want to cry all the time; that, or be angry. My celiac symptoms are not completely resolved, just somewhat better. I have just read the book re SCD, wish I could try that diet (cause it promises a cure) but the learning/implementing curve is more than I can handle if I have to cook the way they say is necessary. I live in an area with poor medical help; I tried the (only) dietitian listed in my area who is celiac knowledge certified, but she doesn't accept my insurance.  I'm on my own. I am hypothyroid, and on HRT.  Cannot tolerate Buspirone; anti-depressives are ineffective due to gene mutations (I've been tested). Can anyone help?  Or not....
