Can someone comment on why my food intolerences seem to be evolving. I started with dairy....then wheat.....now soy. Also, I've heard there are now tests for intolerances. Is this true? Anyone??

A good book to read on the subject is "Food Allergies and Food Intolerances" by Jonathan Brostoff, M.D. and Linda Gamiln. One explanation for the numerous allergies and intolerances in the leaky gut theory.

I realized I needed to eliminate soy about a year after eliminating gluten and dairy. The good news is that soy really did seem to be the last piece of the puzzle for me; I've been fine for over 4 years now as long as I stay away from those three things!

My theory is the items causing the problems are genetically engineered. Our bodies do not know how to process these altered foods. I think this is why there is such a rise in this disease.

I am not saying all celiacs react because of this. I think if you have the gene for celiac, you would react even if the food was not altered. More and more people are reporting they do fine gluten free who test negative.

On the other side, celiac information is just now getting out to the general public. Maybe it's always been around at such high numbers. People now are not satisfied with being told it's all in our heads or swallowing medication that is just a band-aid and doesn't solve the problem.

And eating habits have changed. When I was growing up we did not eat bread all the time. We had meat and veggies, not big macs and fries. I remember when McDonald's opened up in our town as a kid. I don't remember eating there at all. Not sure I ever did until I was in my 20s. Now five years old can recite the menu.

Your food intolerances may have been there all along...only you may not have known it. There are labs that will test for not only gluten and casein, but also soy, yeast, and egg. I had my testing done through the Entero Lab in TX. I am intolerant to all of them, also corn (they don't test for that). Not much I can eat, except rice, cooked veggies, and meat/poultry/fish. To make a long story short...what happens when we ingest gluten for a long period of time and get our intestines all inflamed, is that our bodies begin to see the protein in these other foods the same way it see gluten--as the enemy. It responds to eliminate the problem; inflammation increases, more white blood cells are dispatched to the area under attack causing more damage to the tissue that is being protected. If these food proteins continue to be consumed, normal tissue is damaged and regrowth and regeneration cannot occur. But, the good news is, if you eliminate all the foods that cause the problems and let your intestines heal, you may be able to reintroduce these foods into your diet after a reasonable length of time...six months to a year, typically. I'm still working to heal my intestines...it's a work in progress, and very frustrating, to say the least. It seems I am always eating something that seems to muddy the waters, and I don't even know what it was!!! I just had a food intolerance test done. They have a website, it is called Lame Advertisement. They can test up to 200 different foods. Im sure there are other companies as well, but this one is very trust worthy. It is so helpful to know exactly what I need to avoid. Its kind of pricey, but In my opinion its hard to put a price on healing your body!

The good news is that with this Lame Advertisement test, they say there is the possiblity you can add these things back in to you diet after being off of them for so long, in most cases anyways. If you have celiac you can never add gluten back into your diet.

I also was tested for food and chemical intolerances. I eliminated everything that was offending, ate the acceptable foods on a four day rotation diet, and didn't feel any better.

I am now on a candida diet and taking Candex. I started out with three foods, (chicken, olive oil and turnips) and then added avacado since I wasn't getting enough calories. I have since added cauliflower, onion and broccoli. I get way to much gas from onion, so that is out for a while.

I am starting to feel better. Don't know if it is because I'm curing the candida, eliminated offending foods, or both. Since I don't have much of an appetite, I don't feel like I'm missing out on too much. Still, I'm looking forward to adding back fruit, starchy vegetables and gluten free grains.

I found that I had to eliminate soy yogurt and tofu, but I could tolerate soy if I bought edaname in the shell and shelled it myself. Sometimes mushrooms bother me and sometimes they don't. Same with strawberries. One company says that they grow them on plastic and not on straw, and I do well with those. It seems like I have become more sensitive to trace cc as time goes on. I am still looking for good sources of uncontaminated food.

You didn't feel any better? That stinks! My stomach actually feels calm right now, and is not hurting. I have only been doing it 3 days. My nutritionists told me to get a candida cleanse, is that something you are familiar with?

haha...ok wow...I was like I don't remember typing LAME ADVERTISEMENT,that would be an awful name.lol Why do they do that? If you want me to email you the name of the lab and the website, I can! Just give me your email address.

:lol: I was wondering about that, too! I was wondering why in the world would anyone, but esp. a lab, of all places, call themselves "Lame Advertisement"!

My doc has suggested I do the test for food allergies/leaky gut. She says the one test will test for both. She says it will be about $217. Is the "Lame Advertisement" one any cheaper?

You didn't feel any better? That stinks! My stomach actually feels calm right now, and is not hurting. I have only been doing it 3 days. My nutritionists told me to get a candida cleanse, is that something you are familiar with?

I am using Candex to get rid of the candida. I researched the candida diet online and from there learned that I needed to give up yeast, all forms of sugar, fruits, starchy vegetables and to limited grains. I'm three weeks into using Candex and almost five weeks into following the diet.

After starting out eating only turnips, olive oil, chicken and sea salt, I have now added cauliflower, broccoli, onions, celery, ground turkey, almonds, sesame butter. Onions give me lots of gas but I just can't give them up. My next addition will probably be green beans. I still haven't added any grains back but am thinking of trying brown rice or millet soon.

I had no regular sleep pattern and had a headache almost every day. I now get between 5-7 hours of sleep a night as long as I remember to take melatonin and vitamin B12 at bedtime. Those supplements weren't helping me before I started the candida cleanse. My headaches went away soon after I started the Candex.

Janie Wolicki, through this forum, has helped and encouraged me tremendously to carry through with this. So if you are reading this Janie, thanks again!

I never thought I could survive without grains and fruit but I can. I recommend you give this a try. You have nothing to lose and may find that it really helps you.

Aww <tears in eyes?, thanks Jackie. I am so glad you are feeling better! Soemtimes it seems like the cure is gonna kill us, but then we actually feel so great it was worth it!

The hardest thing for people to realize is that Food is for fuel only. Now this comes from a former FOODIE with all caps :blink: I own about 500 cookbooks, watched only the Food Network on TV and was already thinking about lunch while eating breakfast.

Now I eat to live. It is a tough psychological move, but I feel like a new person, and I am so glad you do, too Jackie!!

      Get tested for vitamin deficiencies.  Though neuropathy can be a symptom of celiac, it can also be caused by deficiencies due to poor digestion caused by celiac and could be easier to treat.

      Thank you so much for your response  Yes it seems as though things get very painful as time goes on.  I'm not eating gluten as far as I know.  However, I'm not sure of cross contamination.  My system seems to weaken to hidden spices and other possibilities. ???  if cross contamination is possible...I am in a super sensitive mode of celiac disease.. Neuropathy from head to toes

      EXACTLY! I was asked yesterday on my LAST video call with Standford and I stated exactly yes absolutely this is why I need the name! One, get proper care, two, not get worse.Im falling apart, stressed out, in pain and just opened email from Stanford stating I was rude ect.I want that video reviewed by higher ups and see if that women still has a job or not.Im saying this because I've been medically screwed and asking for help because bills don't pay itself. This could be malpratice siit but im not good at finding lawyers

      We feel your pain. It took me 20+ years of regularly going to doctors desperate for answers only to be told there was nothing wrong with me … when I was 20 pounds underweight, suffering from severe nutritional deficiencies, and in a great deal of pain. I had to figure it out for myself. If you're in the U.S., not having an official diagnosis does mean you can't claim a tax deduction for the extra expense of gluten-free foods. But it can also be a good thing. Pre-existing conditions might be a reason why a health insurance company might reject your application or charge you more money. No official diagnosis means you don't have a pre-existing condition. I really hope you don't live in the U.S. and don't have these challenges. Do you need an official diagnosis for a specific reason? Else, I wouldn't worry about it. As long as you're diligent in remaining gluten free, your body should be healing as much as possible so there isn't much else you could do anyway. And there are plenty of us out here who never got that official diagnosis because we couldn't eat enough gluten to get tested. Now that the IL-2 test is available, I suppose I could take it, but I don't feel the need. Someone else not believing me really isn't my problem as long as I can stay in control of my own food.

      If you're just starting out in being gluten free, I would expect it to take months before you learned enough about hidden sources of gluten before you stopped making major mistakes. Ice cream? Not safe unless they say it is gluten free. Spaghetti sauce? Not safe unless is says gluten-free. Natural ingredients? Who knows what's in there. You pretty much need to cook with whole ingredients yourself to avoid it completely. Most gluten-free products should be safe, but while you're in the hypersensitive phase right after going gluten free, you may notice that when something like a microwave meal seems to not be gluten-free … then you find out that it is produced in a shared facility where it can become contaminated. My reactions were much-more severe after going gluten free. The analogy that I use is that you had a whole army of soldiers waiting for some gluten to attack, and now that you took away their target, when the stragglers from the gluten army accidentally wander onto the battlefield, you still have your entire army going out and attacking them. Expect it to take two years before all of the training facilities that were producing your soldiers have fallen into disrepair and are no longer producing soldiers. But that is two years after you stop accidentally glutening yourself. Every time you do eat gluten, another training facility can be built and more soldiers will be waiting to attack. Good luck figuring things out.
