Chex Mix...

I remember when i was younger we would make chex mix all the time with just the chex cereal and the seasonings.... Looking back, i shudder at the amount of salt that was on them (and the butter and what not).

Any ideas for a "mild" chex mix or perhaps something just as good (has to be baked :))?

This is the authentic 1960s recipe:

3 tbsp cooking oil

1 tbsp peanut butter

Blend over low heat until blended ( I microwave)

Add: 1tbsp Worchestershire sauce

1/4 teasp garlic salt

1/4 tsp salt

In a 9x13 pan mix:

2 cups wheat Chex

2 cups corn Chex

2 cups rice Chex. ( I do 3 cups each corn & rice)

1/2 can salted peanuts

1 cup pretzels

Mix in the sauce. Bake at 200 F for 1 hour, stirring every 20 minutes.

You could use unsalted peanuts, low salt Worch. sauce & garlic powder to make it very low salt.

In the US Lea & Perrins is gluten-free.

Thanks for that recipe. What do you use in place of pretzels? The only gluten-free brand that I know about uses msg, so doesn't work for moi.

The only gluten-free pretzels I have on hand right now are Glutino Sesame Pretzel Rings (totally addictive!) and just checking the bag, they don't contain MSG but they do contain soy. I know they also make plain pretzels and pretzel sticks.

I don't have any Snyder's of Hanover gluten-free pretzels on hand but you could pull up their website. I find them to be too hard and crunchy for me.

My mom makes these every Christmas and they are always a hit.

Chips:

Ingredients:

1/2 lb butter

1/3 cup Lee and Perrins Worcestershire Sauce

sprinkle of red pepper

1 6 ounce can of mixed nuts

2 cups pecans

2 regular size bags of corn chips

3/4 large bag of pretzels (She eliminates the pretzels altogether to make gluten free)

1 box rice chex cereal

1/2 box corn chex cereal

In 12 quart magnalite roaster, melt butter in pot over low heat. Add worcestershire sauce and red pepper. Add each ingredient in order stirring after each ingredient is added. On low heat, with cover on, simmer for 45 minutes stirring 3-4 times. Uncover chips, place in 350 degree oven and roast until corn chips get crispy (1 - 1 1/2 hours)

But I add gluten-free "cheerios"- I think the Glutino brand is what I used last time. For gluten-free pretzels I used EnerG Wylde brand. They are the only ones I have found that are soy free.

I have not made this since I had to cut out dairy however. Lea and Perrins is gluten-free and SF but I found that the anchovies in in were bothering me. So I have not tried to make Chex mix for a while.

      So the tTG-IGA at 28 is positive for celiac disease. There are some other medical conditions that can cause elevated tTG-IGA but this is unlikely. There are some people for whom the dairy protein casein can cause this but by far the most likely cause is celiac disease. Especially when your small bowel lining is "scalloped". Your Serum IGA 01 (aka, "total IGA") at 245 mg/dl is within normal range, indicating you are not IGA deficient. But I also think it would be wise to take your doctor's advice about the sucraid diet and avoiding dairy . . . at least until you experience healing and your gut has had a chance to heal, which can take around two years. After that, you can experiment with adding dairy back in and monitor symptoms. By the way, if you want the protein afforded by dairy but need to avoid casein, you can do so with whey protein powder. Whey is the other major protein in dairy.

      hi, i want to say thank you to you and @trents   . after 2 phone calls to my GI, her office called me back to tell me that a blood test was “unnecessary” and that we should “follow the gold standard” and since my biopsy did not indicate celiac, to follow the no dairy and sucraid diet. i luckily have expendable income and made an appt for the labcorp blood test that day. i just got my results back and it indicates celiac disease i think 😭   im honestly happy bc now i KNOW and i can go gluten free. and i am SO MAD at this doctor for dismissing me for a simple blood test that wouldn’t have cost her anything !!!!!!!!!!! im sorry, im so emotional right now, i have been sick my whole life and never knew why, i feel so much better already   my results from labcorp:   Celiac Ab tTG TIgA w/Rflx Test Current Result and Flag Previous Result and Date Units Reference Interval t-Transglutaminase (tTG) IgA 01 28 High U/mL 0-3 Negative 0 - 3 Weak Positive 4 - 10 Positive >10 Tissue Transglutaminase (tTG) has been identified as the endomysial antigen.       Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.
