Anyone Have Problems With Rice?

I think rice is playing a bit of a part in my 'C' and bloating. I didn't have rice for about 4 or 5 days and I was having better bowel movements.. And since I had it yesterday I had bloating and a bit of 'C' I do eat quite a bit of rice recently after going gluten-free. Does anyone else experience this? Is it normal?

I can't eat anything with rice. I get diarrhea. My body seemed to reject the one last bit of rice I ate which was in a supplement.

Generally this seems to be a problem when something hasn't been certified gluten free, or for those sensitive to very low levels of gluten.

I cut out rice too (about a month ago) - I suspect that it was the driving force behind the "after lunch" fatigue that I thought I'd left behind. Cauliflower (pulverized by my potato masher) is a decent substitute. My husband actually said he kind of liked it. I was all for going grainfree, but resisted taking out rice and sorghum for a while. Equipped with meal plans, and lunch alternatives - it's not really that hard. There are manyPaleo recipes and blog sites out there! If you're looking for encouragement - I'd say go for it! You can always turn back if it's not for you.

Rice is one of the (very) few foods I can handle, but I can't eat regular rice. Basically, I soak it for 24 hours before preparing it (this ferments it slightly) and then I can eat it just fine. Otherwise, I'm like deb445: it exhausts me. I also take a shot of fermented something first (I'd take actual probiotic pill, but my order's on a slow mail boat...I live in the boonies).

Thanks for the tip, though, deb445 -- I'll see if I can add in cauliflower. Other options to break up the monotony would be cool.

I do just fine with rice, however i also wash it first (watch how sushi rice is washed).

      So far 3 months in - worsening symptoms. I have had the worst constipation in my life and I am primarily eating naturally gluten-free foods like potatoes, eggs, salad with homemade dressing, corn tortillas, etc. I hate gluten-free bread and pasta so I don't eat it. Occasionally I eat gluten-free almond flour crackers. As stated in the post, I don't have any vitamin deficiency. I was already tested.

      Talk to your  Talk to your provider about testing for vitamin and mineral deficiency.  celiac disease causes malabsorption and eventually malnutrition.  Especially vitamin D. Having the gallbladder removed seems to be a common step on the way to a Celiac Disease Diagnosis,  Gallbladder is a sympton of deficient Choline. Eggs and red meat are the primary source..Choline makes up a majority of the bile salts.  The bile gets thick, doesn't get enough into intestine to digest fats well.  Can eventually back up into gallbladder, cause gallstones.  Without bile, bowel movements can become hard. Try to avoid all processed foods while you are healing, The gluten-free foods are not fortified with vitamins and use various ingredients to mimic fat that bothers many Celiacs.  Choose vegatables with low omega 6.  Optimum omega 6 to omega 3 ratio is less than 3:1.  Wheat flour is 22:1.  Grass fed milk is 1:1.   Commercial Dairies milk is 5:1.  They feed wheat, rye and barley Gluten as part of the food mix.

      Your DGP-G is also high. The thing to do now would be to trial the gluten-free diet for a few months to see if there is improvement in symptoms.

      Welcome to the forum, @Roses8721! How long were you off gluten before getting the celiac blood testing done? The testing is not valid after having been gluten free for a significant period of time. Many of your symptoms align with celiac disease.
