  1. My favorite - The Gluten-Free Gourmet Bakes Bread by Bette Hagman. And here is my favorite roll recipe - sorry I don't know the origin: Gluten Free Rolls (makes about one dozen) 3/4 cup cornstarch 1/4 cup potato starch 1/2 cup gluten-free flour mix (I use Bette Hagman's Featherlight) 2 tsp xanthan gum 1...
  2. I agree. I use my KitchenAid stand mixer all the time. We rarely buy bread - I make homemade. But I rarely make a normal loaf of bread. I do a lot of rolls, buns, mini-loaves, etc. That way I can just bake what will be eaten right away, and freeze the rest of the dough. Then I have some ready-made dough when I just need a little. I experiment...
  3. As a substitue for a graham cracker crust, I just make chocolate chip cookies without the chocolate chips and reduce the sugar by half (my normal recipe is half white sugar and half brown, so I omit the white). I bake them a little more crispy than normal, then let them cool and smash to crumbs in a blender. Here are a couple of super-simple alternatives...
  4. My son didn't like Lara bars at all, and I thought they were "OK" at best. He lives on ZonePerfect bars. They are the best I have found as far as high protein balanced with relatively low carbs and fat. Although our favorite flavors are different, we both like several varieties.
  5. I don't recall where I found this recipe, but it's the best I have tried. I also occasionally use the microwave bun recipe when short on time. Here goes: HAMBURGER BUNS 3/4 c sorghum flour 1/4 c corn starch 1/2 c tapioca starch 1/8 c powdered milk 1 T sugar 1/2 T xanthan gum 1/2 T active dry yeast 1/2 t salt 2 eggs 1...
  6. Another one - this looks and tastes like it took a lot of trouble to make, but really is not hard. Although as we are baking in 100+ temps outside, the thought of turning my oven on.... Petite White Chocolate Cranberry Scones 2 cups gluten-free flour blend 1/3 cup sugar 2 tsp baking powder 1 tsp lemon or orange zest 1/2 tsp salt 1/2 cup butter...
  7. Here's a nice summer dessert: Strawberry Pretzel Dessert 3/4 cup gluten-free pretzels 1/4 cup sugar 1/4 cup melted butter crush pretzels to pieces about 1/4 inch maximum mix together press into bottom of greased 8 X 8 inch pan bake 350 F for about 7 minutes cool about 1 hour 4 oz cream cheese 1/4 cup sugar 8-9 oz...
  8. I was going to suggest the place that makes gluten-free pizza crust for Waldo pizza, but I see that it was already in Kareng's list - Olivia's Oven. I have never been there, but I think they are in the metro KC area (Kansas side) and they do have a picture of a wedding cake on their website. good luck!
  9. ZonePerfect bars (check labels, not all are gluten-free) They have a lot of protein so they are filling.
  10. you can also portion off some dough into your small dish(es) and cover with plastic wrap touching the dough and then the container lid and freeze, to bake fresh on some future date
  11. me too! I have a collection - some that are about 3.5 inches diameter and rounded on the bottom that I use for rolls, and some that are maybe 5 inches around with a flat bottom that I use for buns. Spray liberally with cooking spray, plop in the dough, and smooth with very wet fingers and a light touch.
  12. that's awesome!!
  13. We visited the restaurant in Ft. Myers, FL and thanks to your tip asked if they had gluten-free buns, which they DID!!! There was an upcharge for the bun, but my son more than made up for it by taking advantage of the endless french fries and soda refills (he is a teenager)!
  14. Just got back from Florida vacation, and we had some great restaurant meals... City Walk at Universal Orlando - Hard Rock Cafe and Margaritaville Hard Rock Cafe - 4 years ago they had no gluten-free menu, and limited knowledge. My son had a steak and dry salad, no french fries. This time I mentioned gluten-free and the manager came to our table...
  15. This is a recent discovery for me. The best way I have found to scrub off baked on goop without scratching (metal, glass, whatever) is using Magic Eraser pads. I thought they worked miracles in getting marks off walls and scuff marks off floors and shoes. Now this!
  16. taquitos ZonePerfect bars - check the labels, because not all of them are gluten-free.
  17. Don't feel bad, it took me a lot longer than 2 weeks to figure out that my son's vitamins contained gluten!
  18. It could easily take a few months to really get all of the gluten out of his system. The gluten-free diet is overwhelming in the beginning - so much to learn. There will be little slip-ups here and there as you learn, and don't beat yourself up - it happens to everyone. Just try to stay positive and look forward, not backward. Every slip-up is just a...
  19. Our family will be flying out of the airport there late June, so we would love to find a place for lunch or late breakfast nearby.
  20. I have not been to Six Flags in many, many years, but I promise that you are better off eating your own food than the crappy, overpriced stuff they sell inside the park. We are planning a trip to Florida that will include the Universal parks and CityWalk, where we can get some really good overpriced food. Topping our list will be Margaritaville - they...
  21. Most parks I have ever checked out allow this. From the Six Flags St. Louis website FAQ: May I bring my own food and beverages into Six Flags St. Louis? No outside food, beverages or coolers are allowed to be brought into Six Flags St. Louis. However, exceptions are made for Guests with special dietary needs to include food allergies and baby food...
  22. You go girl!!! It's funny, my husband took the kids and they are all visiting his family for a week. So besides my regular work schedule (9-10 hrs M-F) what do you think I am doing? Mowing the lawn, pulling weeds, mulching trees, planting flowers, organizing and cleaning the pantry, drawers, closets; house painting projects, carpet cleaning, stocking...
  23. I am not directly familiar with this, but yes, I think the corn would be broken down to the molecular level and used as part of the polymer building block, so in the end it is chemically reacted as part of the "plastic". There certainly would not be dust that is still chemically corn. A crude analogy would be if you baked a cake that contained a batter...
  24. If you will have a car, there is a pizza place called Cecil Whittakers just off Hwy 141, maybe a mile at most south of I-44. It's maybe 10-12 miles from Six Flags. They have fantastic gluten-free pizza - thin crust St. Louis style. In the past few months the gluten-free bakery that supplied the crusts (formerly Beck's) was sold and there were delays in...
  25. I haven't tried too many yet, but I've made the orange chicken and pizza casserole a couple times each and they are great!
