Hi, I had the same problem as well. I've never been diagnosed with Celiac, but I'm definitely sensitive to wheat and gluten, so I don't eat either. Once I cut gluten out of my diet and started taking probiotics (acidolphlus), my gas issue went away--and I eat a TON of vegetable, both raw and cooked, and beans. -

Two suggestions: I would cut out Soy, at least for a while. It makes me bloat really, really bad. Also note that some Soy milk, including Silk, I believe, contains trace amounts of gluten. I use Almond milk instead. Also, you should probably start taking a probiotic--it was key in getting my bloating under control. My GI suggested accidolphlus (sp?),... -

It sounds like what you ordered is safe, but I personally steer clear of fast food restaurants. They are just too busy and their staff is usually not trained on gluten-free food prep. Having had experience at working for McDonalds when I was in high school, I've seen the level of competence working behind the counter, and it is scary! - 
	I just ate there on Monday and had a yummy lemon chicken dish and didn't get sick at all. At the location I went to, they seemed well-trained on gluten-free.

Not sure what it means but I had elevated enzymes when I had mono. It's usually a sign that your body is fighting off an infection/virus, I believe. Hope it's nothing serious . . . -

Ghirardellis dark choclate (we buy it by the pound at Trader Joe's) I believe is lactose free. My husband is lactose intolerant but has never reacted to it. Also, if you're chocolate cravings are really intense and you don't want to give in to them, I would recomend taking L-glutamine, when they are really bad. Your dad sounds a lot like my dad. My father has never been diagnosed or tested for Celiac Disease, but he is allergic to wheat for sure. (I'm slowly working on getting my dad tested.) I always make a lot at dinner so I have a few days of leftovers to take to work, soemthing like goulash that I make with ground turkey, kidney beans, spaghetti sauce and a cup of gluten-free noodles or rice. It's yummy and reheats easily. We also make 13 bean soup and will eat it for lunch for a few days. You could also make sandwhiches out of gluten-free... -

I can't speak to bringing in my own food because I acutally purchased mine there, and I had a great experience. Note to other readers: I worked at Disneyland through college and can tell you that they have never allowed large coolers in the park.
