  1. I LOVE Pei Wei. I always order the spicy chicken salad, sans the spice It's so yummy and full of flavor--give it a try some time!
  2. Hi, I had the same problem as well. I've never been diagnosed with Celiac, but I'm definitely sensitive to wheat and gluten, so I don't eat either. Once I cut gluten out of my diet and started taking probiotics (acidolphlus), my gas issue went away--and I eat a TON of vegetable, both raw and cooked, and beans.
  3. gluten-free pancakes with syrup and butter--oh, yummy!
  4. Two suggestions: I would cut out Soy, at least for a while. It makes me bloat really, really bad. Also note that some Soy milk, including Silk, I believe, contains trace amounts of gluten. I use Almond milk instead. Also, you should probably start taking a probiotic--it was key in getting my bloating under control. My GI suggested accidolphlus (sp?),...
  5. This is a common symptom found with many people who have Celiac or absorption issues, which often go hand-in-hand.
  6. It sounds like what you ordered is safe, but I personally steer clear of fast food restaurants. They are just too busy and their staff is usually not trained on gluten-free food prep. Having had experience at working for McDonalds when I was in high school, I've seen the level of competence working behind the counter, and it is scary!
  7. I just ate there on Monday and had a yummy lemon chicken dish and didn't get sick at all. At the location I went to, they seemed well-trained on gluten-free.
  8. The disclaimers that come with BCP state that D can affect the effectiveness of the pill . . . but they don't say anything about absorption issues.
  9. Not sure what it means but I had elevated enzymes when I had mono. It's usually a sign that your body is fighting off an infection/virus, I believe. Hope it's nothing serious . . .
  10. Ghirardellis dark choclate (we buy it by the pound at Trader Joe's) I believe is lactose free. My husband is lactose intolerant but has never reacted to it. Also, if you're chocolate cravings are really intense and you don't want to give in to them, I would recomend taking L-glutamine, when they are really bad. Julia Ross in her book "The Diet Cure...
  11. Here's the guide. I hope this comes in handy for some of you! The Celiac offerings at the Disneyland
  12. Quinoa is not technically a grain . . . which I just found out a week or so ago. Here's a quote from a Web site: "Though not technically a grain, quinoa can substitute for nearly any grain in cooking. Actually the seed of a leafy plant, quinoa
  13. I recommed it too! Made it last week for the first time and loved it--it's high fiber and has a nice texture.
  14. I'm working on getting the gluten free guide mailed to me. I'll get to you as soon as it arrives, I promise!
  15. Hi, I live in Tustin. I've never been diagnosed with Celiac, but went gluten free after years of being sick. Now I feel like a new person! Nice to know others are near by!
  16. Hmmm... mine seem to turn out just right. Maybe it's an altititude difference thing?
  17. I don't know if other bread makers have this option or not, but my new Cuisinart 2-lb. Convection Bread Maker has a gluten-free setting. And, it came with gluten-free recipes! I've made two loaves of bread and so far I'm thrilled! Open Original Shared Link
  18. Your dad sounds a lot like my dad. My father has never been diagnosed or tested for Celiac Disease, but he is allergic to wheat for sure. (I'm slowly working on getting my dad tested.) I love my dad too, despite the fact that the man can single-handily clear a room with his gas . . . and we won't even go there with the bathroom thing!
  19. I've only been gluten free for four months now and have had two episodes. Both eating out. The first time (about one month into gluten-free living), I ate dinner about 7 p.m. and was awoken at 1 a.m. with D and dizzyness. The second time was last weekend (I ordered steak tacos and didn't notice that they were marinated in terriyaki sauce--duh!!!) and my...
  20. I went through a period like this myself. My GI told me to take accidolpulus (sp?) and digestive enzymes and I can't believe how much that has helped out. Good luck!
  21. I've ordered it from the website, and I've also seen it in a health food store (although that was in Florida, lol). They also make one with yams or something like that, although I've never tried it. I used my last packet of the egg one or I'd send it over to you...anyway the website is here: Open Original Shared Link
  22. I always make a lot at dinner so I have a few days of leftovers to take to work, soemthing like goulash that I make with ground turkey, kidney beans, spaghetti sauce and a cup of gluten-free noodles or rice. It's yummy and reheats easily. We also make 13 bean soup and will eat it for lunch for a few days. You could also make sandwhiches out of gluten-free...
  23. I can't speak to bringing in my own food because I acutally purchased mine there, and I had a great experience. Note to other readers: I worked at Disneyland through college and can tell you that they have never allowed large coolers in the park. There is a picnic area that I've used on many, many occasions just outside of the park to the left of the main...
  24. I have a hard copy of the guide. I will have to re-type it so I can copy and paste it here. When I have some time, I will definitely do that for everyone. My experience was so great that I hope everyone can have the same if they have the needed info.
