  2. In pre-diagnosis days, I'd solve the lumping problem with cream of wheat by sifting it into the boiling water. That took a little coordination but avoided the unexpected "avalanche" that caused lumps. Stirring the dry portion in with a whisk was another solution to the lump problem.   3. Help me here. I thought polenta was sort between corn meal and corn grits. I'm either wrong about that or I don't undertands the suggestion to cut it into strips and fry.

  7. As Ravenwoodglass said, the damage to the intestines might not have yet reached detectable levels. A less likely possibility is a false positive on the blood tests but some other autoimmune diseases could cause that. It might be sematics but one concern is that you said "keep" her gluten free which sounds like she might already be on a gluten free diet...

  9. I guess I wasn't clear. I never meant to imply that you had to have the gold standard diagnosis to have Celiac. I think many people, including doctors, misunderstand the concept of varying levels of certainty. The biopsy in conjunction with a blood test and dietary response leaves very little chance of a misdiagnosis. That makes it a "gold standard"....

  15. This is one that just bothers me in general. While it is true that life isn't fair, that usually is used to explain the randomness of things that can happen to people. To use it to justify bad behaviour is just wrong. Teasing someone is not "life not being fair", it is someone making a choice to be cruel.

  23. From what I've read, "gluten intolerance" doesn't have a definition that is consistent. Taking the most general usage of "something bad happens when I eat gluten", an allergy test can find one of the many ways the human body can react to gluten but not all of them.

  25. The time off of gluten is a little short but the general pattern is that when you've been off gluten and they go back the symptoms are worse. That is a reason that you should always get all of the mainstream medical testing done prior to starting the diet. The best explanation that I've heard equates it to a tolerance level or "getting used to it".
