Me too...I absolutely hate to write down everything I eat!!! That's why I stopped when I started noticing my symptoms were much milder and I was having at least as many good days as bad...I thought that was time to get rid of that stupid, annoying food journal and just EAT!

From what I've seen here NOTHING is typical, or even atypical. I've been gluten free for 8 months and counting down to 9, and doing a lot better. However, there are some things I wish would finally leave, annoying gassiness and some bad butt pains. I think I had both of these ON gluten, but they changed their patterns OFF of gluten, and what I'm getting...

I work out but no longer very fond of sit-ups. They used to make me need the restroom immediately afterward, and I just eventually got out of the habit of doing them. Go to the nearest park and get on a swing, then swing away with all the little kids for a long time. You really use your abs in pulling on the chains and propelling yourself forward that...

ARCHIVED Corn Dogs?
spunky replied to KayJay's topic in Gluten-Free Foods, Products, Shopping & Medications
If you had one of those fry babies maybe you could make your own...like, take a recipe for cornbread and substitute some other flour for the wheat flour part of that recipe, dip a gluten-free hot dog into it and drop it into the frybaby? I don't really know if it works taht way or not, since I've never tried to make one myself, but it seems like it could... -
ARCHIVED Is This Okay To Eat?
spunky replied to spunky's topic in Gluten-Free Recipes & Cooking Tips
Thanks so much for these thoughtful replies. I am feeling less like taking risks all the time, mainly because there are some days I just can't believe how good I feel...I really don't want to go backwards, if there's any possible way to stop it from happening. You've all given me more to think about. Thank you again! -
I just bought a bag of frozen mixed veggies...there's nothing in there but an assortment of vegetables for stiry fry reicpes, but it says in the allergy information section below the ingredients that it is "processed" (they dont' look processed?????) on equipment shared with wheat-containing foods. Now I feel nervous about eating those. We've had them before...

ARCHIVED Fear I'll Never Get Well
spunky replied to Yenni's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I can relate! I'm at 8 months gluten free. Since going gluten free, I didn't see any results for a long time, or even sometimes seemed WORSE than before, and felt extremely hopeless...like, yeah it is all over and I'm so messed up now I can't ever get to good health again. Finally I did have some really good days, although I think they were still not... -
ARCHIVED What Happens When You Get 'glutened?
spunky replied to danikali's topic in Coping with Celiac Disease
I hear ya! It's amazing to me I've only been "normal," or maybe just almost normal, for a couple of months, but I totally freak whenever I get the old feelings back...kinda like, I stood that all the time for years...but now I can't tolerate it AT ALL!!! -
ARCHIVED What Happens When You Get 'glutened?
spunky replied to danikali's topic in Coping with Celiac Disease
I'm still pretty new (8 months gluten free) and only self-diagnosed, so i can't always tell if I'm still just going through the ups and downs of initial healing, or when I've actually been glutened for sure, but times when I suspected a glutening I've had both the dreaded C & D on the same days, the balloons and awful bloating in the tummy, howling wolves... -
ARCHIVED Arguing With One Another On Posts!?
spunky replied to chgomom's topic in Introduce Yourself / Share Stuff
I'm pretty new here and don't really feel I know too many of the regular posters, but I certainly enjoyed reading this thread. It was interesting and funny...I have to say, this message board has REALLY helped me more than anything else over recent months...I am feeling so much better now, mostly because of reading people's discussions, experiences, thoughts... -
ARCHIVED Can You Guys Believe....fish Food?
spunky replied to chgomom's topic in Coping with Celiac Disease
After seeing my own response to being gluten free for 8 months, I feel sorry for our pets and even farm-raised animals, because gluten is just everywhere. No wonder dogs have diabetes, joint problems, thyroid problems, etc.! I've finally found gluten free foods for our dogs and cats, at a price, but I think they deserve a chance at good health. Whoever... -
ARCHIVED New Development-nothing To Do With celiac disease
spunky replied to debmidge's topic in Introduce Yourself / Share Stuff
I don't really know much about it but my dad keeps his under control by taking the herb, saw palmetto. He's done this for about 10 years now. Hope things work out and he improves soon. -

If I ever figure out the secret to making this stuff, I'll be happy to post! -
ARCHIVED Only You Guys Would Understand....
spunky replied to Drama-Queen's topic in Coping with Celiac Disease
I can't believe I'm saying this, but WHAT A NICE LITTLE SONG!!!! LOL...I might start singing that one to myself when appropriate (let's hope it happens at home, rather than at the office!!!). -
ARCHIVED Sourdough Bread And Fermenting Yeast
spunky replied to Jestgar's topic in Publications & Publicity
At this point, I feel so much better that I can't even stand the thought of sourdoughing wheat/rye, etc. anymore. It just reminds me of feeling terrible. But I am wondering about teff. We used to eat in an Ethiopian restaurant (now gone out of business) and the food was absolutely excellent stuff...they make a bread with teff flour, called injera. They... -

ARCHIVED Sourdough Bread And Fermenting Yeast
spunky replied to Jestgar's topic in Publications & Publicity
I started making my own sourdough breads when I was very suspcious about gluten bothering me. I always had batches of starter bubbling away all over the kitchen, and made everything, from breads to cakes and pancakes with sourdough. Sorry to say, it still made me sick. I'd read the lactobacillus was supposed to disable the gluten, but it didn't help... -
ARCHIVED What Is Maltodextrin
spunky replied to jennyj's topic in Gluten-Free Foods, Products, Shopping & Medications
I remember reading that if it's dextrin, you have to find out what it's made from--could be from a gluten grain or any other. It's such a hassle, I just avoid anything that says dextrin. Not sure about dextrose. -
ARCHIVED A Really Embarassing Problem...
spunky replied to chgomom's topic in Coping with Celiac Disease
I now take some silymarin (milk thistle extract) to prevent liver problems, help with any repair necessary...even though I have no idea whatsoever how my liver is...just taking this stuff to be on the cautious side. There are supposedly allergic reactions with silymarin sometimes, though...it might be common among people allergic to flowers in the daisy... -
About the fatty acids and oils, etc. From different books, lectures, etc., of Dr. John McDougall, I learned that the reason most people eating the Western diet are too high in omega 6 fatty acids and too low in omega 3 fatty acids is that most prepared food, especially in the U.S., but probably all Western diets, is made with polyunsaturated vegetable oils...

ARCHIVED My Unusual Symptoms
spunky replied to a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't know if you said how long you've been gluten free. I didn't see a whole lot of difference in my symptoms for a good three months, and even then, kept going back to bad days, alternating with some good days here and there. If you haven't been gluten free for very long, it's hard to tell. I finally got so sick of wondering if I'd ever get better... -
ARCHIVED Can I Ask Your Opinion?
spunky replied to tracey*'s topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
But this place has definitely been a life-saver for me! -
I've had pretty good results in almost nine months...about 4 days away from beginning my ninth month gluten free. I'm 53, and I think, looking back at my life, I've had hints of a gluten problem most of my life, but really noticeable and bad intestinal things for the past decade or longer. I never consulted a doctor about any of this; it's just all my own...

ARCHIVED Can I Ask Your Opinion?
spunky replied to tracey*'s topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It's tough to get an accurate diagnosis from people on message boards, but seems to be about as tough from doctors as well. I'd put a heating pad on the stomach cramps! I've never gone to a doctor for diagnosis, because they are aggressive, invasive, their medications are too strong, they don't put two and two together, I mean, they don't consider how... -
ARCHIVED Anyone Get Worse As The Day Goes On?
spunky replied to Terch's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I always thought my symptoms were just crazy. I usually didn't/don't do too bad in the mornings, but I could tell just how sick I'd be by the end of the day just by going on what time it would all start. If there were rumblings and howlings sounding by 10:00 a.m., I knew I was in for one heck of a time. IF they didn't start until 2:30 or 3:00, I knew it...
