  1. These are also excellent rolls: Open Original Shared Link I substitute the white flour with sorghum, and most of the time don't add the seasonings (that way I can toast it the next day with jam), but otherwise follow the directions. Also, there's always the Brazilian cheese bread recipe from here that's really yummy. I don't know the link, but here...
  2. If I remember correctly, the corn from Bob's Red Mill is milled in the same room and equipment where they mill wheat. I know you can't use their corn flour or starch, but I don't know if it applies to their grits or not, too. And I just checked their website and they do not list their corn grits as gluten free. I'd avoid it. I found the longer you are...
  3. This is the Husband to Juliet And we are in the same situation as you folks, 2 kids and the mother with Celiac disease. I cannot fathom a father that appears to care so little for his son's welfare that he would take the chance of contaminating him. I have to think that he never saw his son really sick or had to deal with it. Our whole house went...
  4. All gluten free unless you don't want to do the work. If you use Pamela's Chocolate Cake mix using the sour cream recipe for cupcakes and no one will know. I've done this so many times at schools, parties, etc., and every time someone asks if it's actually OK for my kids and I to eat it. And as someone who was not gluten free when we first got a diagnosis...
  5. Everyone's experience with that varies. If a child has celiac disease, once going gluten free you may see almost immediate results in some areas, but the intestines take about 6 months to heal (quite a bit longer than that even if you're an adult). So, intestinal issues often become sporadic at the beginning, even if you never had to deal with them before...
  6. I've always wanted to try this recipe for vegan sugar cookies since it uses both almonds and coconut flour, but I would maybe substitute the soymilk, myself (not a fan of soy). Open Original Shared Link
  7. Here's a quick flatbread recipe that uses whole grain flour. https://www.celiac.com/gluten-free/index.ph...p;p=359956& Originally I posted it with only brown rice flour (in addition to the flax), but after someone's suggestion later on the post, I use 1/2 cup sweet sorghum flour and 1/2 cup brown rice flour. Both the brown rice and sorghum flours...
  8. Remember, too, that this disease has a cumulative effect. Sometimes one incident alone won't do anything, but little tiny bits of incidents on a daily basis might add up to one big "symptom" like diarrhea. And Zeta_Lilly brings up a very good point. My son (and by default, me, recently found out I have two Celiac genes myself) has been gluten free for...
  9. Just to let you know, we did the Pamela's recipe for gingerbread cookies (not the houses.....yet) and made the cookies a little thinner than recommended. The cookie cutters we used were also pretty big, and the cookies were strong. You could easily build with them. They even have "blueprints" for the houses and recommended icing. I think, too, you could...
  10. I have not tried this recipe, but I tried an apple cake here that was good: Open Original Shared Link this from "Living Without" magazine: Open Original Shared Link
  11. I'm just going to add my two cents: Your child is in pre-school. At that age they rarely want to share anyway. I understand not wanting your child to miss the experience, but at that age they truly don't care that much. My daughter gets a gluten free cookie and is more than happy with that when the rest of the school eats gluten cake. I mean, she...
  12. Don't forget cheese quesadillas with corn tortillas. I sometimes quickly saute veggies (thinly sliced - and I start with bagged chopped veggies to start with to speed up the time), maybe a little sliced chicken (if I want to take the time) with McCormick brand chicken fajitas spice mix, place it between two corn tortillas along with some shredded cheese...
  13. We trade out the candy that can't be had (which honestly was very little the last two years we've gone) with gluten-free candy that he's chosen (we go to the store and pick out a couple of gluten-free candy bags, although this year his sister will be choosing, too). We also go trick-or-treating for UNICEF, too, while we're out, and he enjoys that at some...
  14. Corn tortillas are about the only thing that if you soak it in enough liquid it will become the dough from which it started. There are actually recipes out there using the reanimated dough: Open Original Shared Link So probably without the cheese sort of bulking it up, it just turned into a mess. Frying it slightly before doing the recipe maybe just...
  15. I did cornbread stuffing last year and it was DELICIOUS! I used the cornbread recipe from Pamela's Products website using Pamela's Baking Mix. Then I based the stuffing recipe from Tyler Florence's recipe: Open Original Shared Link I increased the amount of liquid since it was a little dry the first time I did a trial run for my tastes (1/3-1/2 cup stock...
  16. Also check out the grind of the rice flour. Authentic Foods and the white rice flour found at Asian markets are far more fine than others.
  17. Here is a possible substitution: Open Original Shared Link And this one my son loved when we were weaning him off a goldfish crackers; they satisfied that craving: Open Original Shared Link I tasted them, too. The texture is a little lighter than a cheeze-it or goldfish cracker, but the taste is very similar. We've done the Chebe bread crackers...
  18. I don't use my gluten free setting. I make bread on a variant of Lorka's gluten free flax bread on this site using rapid rise yeast. I use the rapid rise 2 lb. loaf wheat bread setting and pull out the panel after the first kneading. It works perfect every time.
  19. Whenever I make homemade mac & cheese, we absolutely LOVE sauteed, sliced mushrooms. I do it with just a little olive oil, garlic, salt, and sometimes a squeeze of lemon. I don't know what it is exactly but that combination is just sooooo yummy! That is, of course, if you like mushrooms. (mmmmm, mushrooms ) And a nice light garden salad with...
  20. I like this recipe; I think I got it from this forum, but I can't be certain. And let me tell you, if you like chocolate, these are about the best cookies ever! Even those that eat gluten absolutely love these little bits of dark chocolatey-cookie goodness! Chocolate-Chocolate Chip Cookies 1/4 cup unsalted butter, softened 3/4 cup sugar 2 large...
  21. Just a note - I've made gluten free gnocchi a couple of times. And it is not as easy as it seems! If it acts like regular gluten-y dough where you can easily roll and mold, it's too wet. It actually has to be a little dry and crumbly. You also might want to add a smidgeon of xanthan gum. But can I say, if you get it right, OMG, is it tasty!
  22. It took my son a full 2 years before the distention completely went away; he was diagnosed at 2 years and 2 months. Not that his belly was fully distended for 2 years straight, but it took a long time before he looked completely proportional to the rest of his body. He's a tall kid with skinny legs, tiny but round bottom, and relatively narrow shoulders...
  23. My daughter absolutely REFUSES to eat any fruits or vegetables, nor will she do smoothies. She likes strawberry ice cream best (because it's pink) but will actually pick out the strawberries. The only way I can get her to eat any fruits or vegetables is to hide it in the 5 or 6 foods she IS willing to eat (to say she's picky is an understatement!) And...
  24. Other things besides Baby Mum-Mums that we used with our daughter (those mum-mums weren't available at the time ): Health Valley Rice and Corn chex like cereal (however, now you can just use regular General Mills Rice Chex) slightly crushed up - they easily dissolved in her mouth by 7 months fresh, homemade gluten free bread (try these links: Open...
  25. F.Y.I. - I made these cookies yesterday, but I didn't use the light corn syrup (I didn't even increase the sugar content). I also used baking powder instead of baking soda because I didn't use the corn syrup (powder has a little cream of tartar and cornstarch, so it can help a bit with stabilizing and binding during the cooking process). And as someone...
