"She may have become this sensitive no matter what. What you absolutely DID do was save her two years of damage and misery." Couldn't have said this better myself! You have no reason to feel guilty, even IF her "visible" symptoms would have been less had you not taken her off of gluten. It's the "invisible" damage that's worse. No matter what she may...

ARCHIVED Parents With Celiac
Juliet replied to a topic in Parents, Friends and Loved Ones of Celiacs
You could also have your child tested for the Celiac gene. If she doesn't have the gene, odds are extremely in her favor that she won't get the disease. Of course, even without the gene, she could have gluten intolerance or possibly an allergy, but the odds are still in her favor. -
ARCHIVED Wheat Flour In Ice Cream!?!?!
Juliet replied to HAK1031's topic in Coping with Celiac Disease
"Actually Chocolate is the flavor that has wheat" This actually would make sense why in Neapolitan ice cream it might have wheat flour. Chocolate ice cream is notoriously harder to freeze than other flavors, so it's always softer than say vanilla or strawberry when frozen at the exact temperature (unless you go to EXTREME cold temperatures of course)... -
ARCHIVED Subs For Almond Meal
Juliet replied to rick-spiff's topic in Gluten-Free Recipes & Cooking Tips
For challah bread, I don't know if flax seed would work since you want to have that nice potato flavor and not a nutty flavor (in my opinion, flax seed is stronger tasting than almond meal). I made this gluten free challah bread found on the website www.glutenfreeinthegreens.blogspot.com . It was delicious, especially when it was cool all the way. She... -
ARCHIVED I Need A Thorough List For Mil
Juliet replied to celiac-mommy's topic in Parents, Friends and Loved Ones of Celiacs
Gluten Free for Dummies actually isn't bad, despite the title. You know, just to give you a little bit of relief, my in-laws wanted us to come and wanted to learn how to take care of our kids for days/weeks at a time without us. So, before we tried that out, we actually spent 5 days at their house over Thanksgiving. We bought a (relatively) inexpensive... -
ARCHIVED Nightshade Replacements
Juliet replied to okgrace's topic in Gluten-Free Recipes & Cooking Tips
I don't know about tomatoes, but you could use things like mustard, radishes, and wasabi (which is a type of radish). As for tomatoes, I think it would depend on the recipe. In general, they're sweet and acidic. So, I'd try to substitute their flavor components (at least if it's actually a "cooked" item and not raw item) rather than the fruit itself... -
ARCHIVED I Am Looking For The Best "regular" Bread Recipe Out There
Juliet replied to Auntie Lurlynn's topic in Gluten-Free Recipes & Cooking Tips
Auntie Lurlynn - Use this website, it's been a lifesaver for me when I find good looking recipes on the web that are from Europe: Open Original Shared Link -
ARCHIVED Red Lobster Cheddar Bay Biscuits--copycat Recipe
Juliet replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
Rachelle - Your biscuits are sooo easy and yummy - it's a new family favorite! -
Try these - it's further down on the link (original post got lost so it went under a different heading): Open Original Shared Link These cheese rolls are easily modified to become pizza crusts. I follow the basic recipe almost exactly except I use a combination of mozzarella & parmesan/romano cheeses (about 1 1/4 cup total of half and half), add...

Also, talk to the manufacturer and find out how things actually are processed. For example, we don't use any of the corn flour, corn starch, or corn meal products from Bob's Red Mill (although we use lots of other products by them) since they grind them in the same mill and use the same equipment as the rest of their wheat products. It is for this reason...

ARCHIVED Gluten-free Flours And Other Ingredients
Juliet replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
It's because of what the previous poster described that in Europe they don't go by volume measurements in their recipes but use a scale. Professional bakers even in the U.S.A. often use a scale, too, because depending on how you measure using a cup or teaspoon it can vary from day to day how much you're actually using. A cup of sifted flour (gluten free... -
ARCHIVED Angry With Myself
Juliet replied to honeypond's topic in Parents, Friends and Loved Ones of Celiacs
I'm just going to add one more thing: the anger, guilt, depression, all of that lessens after awhile. I was personally a little more overwhelmed with guilt rather than anger with myself (a ton of anger for others, though, particularly our pediatrician), but I can say it does get better. It's been about 2 1/2 years since our son was diagnosed, and although... -
ARCHIVED Celiacs In Families
Juliet replied to monkeypuss's topic in Parents, Friends and Loved Ones of Celiacs
At the Celiac conference in May Dr. Michelle Pietzak gave some very interesting information on the genetics of Celiac Disease which she and her colleagues will soon be publishing. It has to do with how the actual Celiac gene is made up and not just the "gene" itself and how this make up determines your risk. As she explains it, there are two "arms"... -
ARCHIVED How Would You Make This Chocolate Cake Gluten Free?
Juliet replied to nikken007's topic in Gluten-Free Recipes & Cooking Tips
Pupusas are gluten free, but a little difficult to make. If you do try it, it's best to first make two corn "tortillas" with the masa harina (instant corn flour - in California you can even get it at Target) and water, place the filling on one, then seal it up with the second rather than forming a ball, pressing in and placing the filling, then re-sealing... -
ARCHIVED How Would You Make This Chocolate Cake Gluten Free?
Juliet replied to nikken007's topic in Gluten-Free Recipes & Cooking Tips
I was told this recipe from our babysitter from El Salvador and then tweaked it some (easier to mix in the order given, and occasionally do lemon or orange zest, too - yum - and she loved it, actually got the recipe back from me and now uses this one): Quesadilla salvadorena Active Prep Time: 20 minutes Cooking Time: 30-35 minutes This is a traditional... -
ARCHIVED How Would You Make This Chocolate Cake Gluten Free?
Juliet replied to nikken007's topic in Gluten-Free Recipes & Cooking Tips
So you know, there are recipes out there for flourless chocolate cake using almond meal or flour (actually the same thing, it's just that the meal will sometimes have little bits of brown from the skin on the almond). If you do use the almond meal, though, it won't have a flat top like in the picture. It actually will puff up when it cooks, crack on the... -
ARCHIVED Tips For A Mixed Kitchen
Juliet replied to Breila's topic in Gluten-Free Recipes & Cooking Tips
Besides separate butter, too, have separate jams, jellys, peanut butter, mayo, etc. And don't cook with any gluten flour (regular flour, cake flour, semolina flour, oat flour that's not designated gluten free, kamut flour, spelt flour, did I get it all, folks) or gluten mix (cookies, cake, cornbread, etc.) anymore. That stuff will get EVERYWHERE. And... -
ARCHIVED Can't Find The Brazilian Cheese Bread Recipe
Juliet replied to JennyC's topic in Gluten-Free Recipes & Cooking Tips
Here's word for word (I copied it and pasted it into a separate document just in case something like this happened - I can't get enough of these) what was written by "lonewolf" after she converted the grams to teaspoons/cups: Brazilian Cheese Rolls 1-1/3 C Tapioca Flour 1-1/3 C grated cheese (or 1 C Sheep Milk Romano) 3 Eggs 2 tsp. Milk (or rice... -
ARCHIVED New Recipes From Whole Foods
Juliet replied to Green12's topic in Gluten-Free Recipes & Cooking Tips
I made the chocolate chocolate chip cookies today - they were absolutely delicious! I could detect the coconut flavor just slightly, so they reminded me of an extremely chocolatey, less coconut-y, chocolate macaroon with chips (I omitted nuts). It was very easy and quick to put together, too. Can't wait to try the others now! -
ARCHIVED Lunchbox Ideas
Juliet replied to chasing4's topic in Parents, Friends and Loved Ones of Celiacs
Corn Thins are made by Real Foods. They're like rice cakes but thinner and slightly larger in diameter. They taste like popcorn and are great with peanut butter or as cold cut "sandwiches" with lettuce, meat, cheese, tomato, etc. We love them. A pack of 26 slices is about $2.50 at Whole Foods here in California. As for pumpkin bread, I use gluten free... -
ARCHIVED Lunchbox Ideas
Juliet replied to chasing4's topic in Parents, Friends and Loved Ones of Celiacs
One way to sneak in a little fruits & vegetables (and fiber) is to make sandwiches with things like pumpkin, banana, zucchini, or carrot bread. I often do pumpkin banana bread with shredded coconut & orange flavored cranberries and add some extra ground flax seed for fiber and use sucanat (evaporated brown sugar - a little less sweet and still has... -
ARCHIVED This May Sound Weird
Juliet replied to lovetocook's topic in Gluten-Free Recipes & Cooking Tips
What you would want is a combination of gluten free flours, gluten free starches, and some xanthan gum. The rule of thumb I follow is 2 parts gluten free flour (i.e., rice flour [brown or white], sorghum flour, buckwheat flour, teff, quinoa) to 1 part starch (potato starch [not flouor], tapioca starch/flour, cornstarch, sweet rice flour). Then you adjust... -
ARCHIVED Am I Missing Something?
Juliet replied to OBXMom's topic in Parents, Friends and Loved Ones of Celiacs
First, we all have felt (and unfortunately, will feel again) that guilt. I have spent many very down days (in fact, several weeks at the beginning) beating myself up with guilt. The best I can say about that is to just try to be logical; the guilt for things you've done in the past isn't helping anyone. In fact, it's probably hurting. So, do your best... -

Juliet replied to stolly's topic in Parents, Friends and Loved Ones of Celiacs
I think your real problem is you have a 2 year old! When my son was diagnosed at 2 and 2 months, he wouldn't eat any of the substitutes for the food he used to eat. He lived on Bush's beans, white rice, purple grapes, applesauce, once in awhile Envirokidz Gorilla Munch (got him to try it by calling them "cracker balls" - two things he loved before going...
