The only problem with testing them at least with the full serological blood panel is that they have to be on gluten (for an adult, equivalent to 2 pieces of wheat breat a day) for 2-3 months to get a halfway accurate result. And even then, it can miss some people. It sounds like you already started the diet, so I don't know if you want to put them back...

One of the ways you could actually get a diagnosis that may seem a bit more "certain" without being on gluten is to do the gene test. And just a small bit of advice for you from a mom whose son is now a little over 3 1/2 and was diagnosed at 2, if you do go gluten free (and it sounds like you are), teach her about it now. We use Tinkyada pasta, too, particularly the penne and shells. Last I heard, all the Yoplait yogurts, as long as they don't have any cereal or grains in them, are gluten free. And they won't hide wheat, rye, or barley under "natural flavors." This includes the Go-Gurts. We get those and freeze them. Then our son can have "ice cream on a stick."

For the bread recipe I use 1 cup sorghum flour and 1/2 cup brown rice flour (equals to the 1 1/4 cup gluten free flour and 1/4 cup garfava flour.) You could maybe get him tested for the gene which could help you rule it out. If he doesn't have it, he probably won't have Celiac Disease.
