I call it my "poor man's risotto" because I don't cook it stirring constantly. Pamela's is great, but be sure to realize it already has baking powder in it, so if you add extra in a recipe, it could be a problem. "CC" at least on this board means "cross contamination" - the biggest problem, particularly with kids since they don't know how to clean their hands too well, that people who must go gluten free (or probably any food allergy/intolerance) have to deal with. -

I'm sure it's the Arrowroot. It's also used in gluten cooking for the flavor and all of those things have that mild anise-like flavor. You can also buy gluten-free Arrowroot cookies and the flavor is much stronger. I'm not a fan of that flavor, so I don't use it much. -

It's something like 99% of the people who have Celiac Disease have one of two genes: HLA-DQ2 (about 92% of the 99%) and HLA-DQ8 (about 8% of the 99%). I know that some recipes call for bar chocolate instead of chips since the chips have a bit of a coating to keep them from sticking together. So melted chips are not quite as smooth as melted bars. But I doubt you'd notice that much of a difference in this cake. But you do notice a difference when making things like chocolate truffles or sauces. -

She told me at the time that an adult would need to consume two pieces of wheat bread, or equivalent amount of gluten, every day for 2 months. For a smaller child, about half of that.
