  1. "You have to trust the more sensitive individuals on this. (I am not, btw) It only takes a minute amount of gluten residue to cook into your non gluten foods to make you constantly feel a little bit "off." It 's only when you've been clean for a long time and then get accidently nailed with whatever your symptoms are, that you appreciate being un contaminated...
  2. www.celiac.org On the first page they have a link for a brochure that briefly explains celiac disease. It's what we gave our preschool. FYI, you might also notice on that page the information on the annual education and food conference here in L.A. that will be held in May. It's expensive, but the information is EXTENSIVE, and the amount of free gluten...
  3. I agree with most of the posters about going ahead and taking your child to CEC. However, this being said, I would not take either of my kids (almost 4 1/2 and 2 1/4) there right now since both are thumbsuckers. The youngest still sticks every inanimate object in her mouth, although she doesn't actually shove gluten food in her mouth. She just picks it...
  4. I found this Challah recipe that our family thinks is fantastic. I'm not actually Jewish (just loved the bread in my previous life ), so I can't say for sure it's kosher. But the ingredients didn't look much different from recipes that others listed as kosher. I just liked how the flavor combination seemed to look and it seemed relatively easy compared...
  5. Stacie - The answer is possibly both. It is normal to have good and bad days at the beginning. You can't always gauge things based on one day's experience at the very start. It took our son about two months before everything looked "normal" on a regular basis. You have to look at the bigger picture at first. But it's also possible she...
  6. "Hiddden Valley Ranch - individuals w/carrots or celery" Last time I checked, and from what I just searched on the net to verify, Hidden Valley Ranch is not gluten free, or at least can't be guaranteed as gluten free. In fact, a year ago, I e-mailed them about it and received a response where they proudly claimed that every Hidden Valley Ranch product...
  7. Angie - I just found this on the Celiac Disease Center at Columbia University website: "Causes of false positive celiac serologic tests The endomysial antibody test is virtually 100% specific for celiac disease. However anti-tTG has been reported to be positive in the presence of liver disease, especially cirrhosis [33], diabetes [34, 35] and severe...
  8. Adding almond meal can definitely add moisture (and a little texture). Another thing I do is add ground flax seed for both the added fiber, Omega 3 fatty acids, and moisture. The oils make things stay moist longer, even when the muffins form a bit of a "crust." I just add extra ground flax seed rather than substituting a portion of the flour with the flax...
  9. F.Y.I. - I just got some sucanat from Whole Foods. It's dehydrated cane juice, versus the (now) more regularly found evaporated cane juice. It still seems to have a little bit of molasses, so it's kind of like brown sugar without the moisture content. Supposedly you can substitute it one to one for regular sugar.
  10. The only problem with a lot of the pre-made bread and rolls is the lack of nutrition they actually have; often there is very little fiber and no whole grains. That's why I bake our bread using whole grain gluten free flours (combined with the necessary xanthan gum and starches) most of the time and I often add ground flax seed and/or gluten free oats into...
  11. There are a few things to look out for with oats, even gluten free ones. The first is that there are a small minority of Celiacs who also end up having an intolerance to the protein structure of oats because it is very similar. The other thing to remember is that even if you can tolerate oats (and as inferred above, most Celiacs can), the recommendation...
  12. Your body also produces vitamin D when your skin is exposed to the sun (sans sunscreen). I believe the recommended "dose" is 10 minutes every day. When our son was blocked from constipation, we were told to give him mineral oil. It started helping so much, and made him feel so much better because of it, he would suck down 15 ml. of mineral oil 3 times...
  13. My son had those symptoms, too. In fact, anytime he gets small amounts of gluten now, he sweats PROFUSELY when he sleeps. The sheets, his clothes, pillow, everything are sopping wet like you poured a large glass of water everywhere. And when he was eating gluten every day and before being finally diagnosed, he was awake for only a total of 3 hours a day...
  14. When my son was diagnosed, we were told to crush up half a tablet of Lactaid and mix it with a little water or food each time before we gave him dairy since the enzyme that breaks down lactose is the first to go when Celiac Disease is active. Verify that it's still gluten free, and try it out. It really helped us. My son (diagnosed at 2) had seen dramatic...
  15. Coconut curried tilapia: Open Original Shared Link I've really been meaning to try this! Dairy free & gluten free.
  16. "Why, if wheat is the source, is it not required to list it as such? " The new labeling laws apply only to food, so lotions, soaps, make-up, etc. are excluded. In fact, I don't even think that it applies to medicine since pharmaceutical companies are not "food manufacturers" which is what the law actually applies to. And oil is not distilled like alcohol...
  17. Whipped Pumpkin Mascarpone Spread Active Prep Time: 5 minutes (1) 8 oz. package mascarpone cheese 1/2 teaspoon lemon juice 1/2 cup pureed pumpkin 1/4 cup fine sugar (baker
  18. You can substitute almost any gluten free flour with another gluten free flour and gluten free starch with another starch. The only thing is, you might not like the taste combination as much as you did before the switching. I use the superfine brown rice flour in lieu of plain rice flour most of the time except for the super sweet and delicately flavored...
  19. Shan - you brought up a question that shouldn't the numbers remain the same and not go up, the answer is not necessarily. The longer someone with Celiac Disease is regularly exposed to gluten, whether in large or small amounts, the higher the number goes up. It may go up faster with large amounts, but it still goes up. As it was explained to me, people...
  20. "I also forgot to ask the Dr....if my little girl has children...are they going to have this too?" There's no guarantee either way her kids will have the gene. First off, in this location, she has a pair of genes. Since it looks like she has celiac disease, that means most likely she has at least one gene that predisposes her to Celiac Disease that either...
  21. How about dried fruit like dried cranberries? Might not be quite as bright of red, but the effect should still be similar.
  22. I posted these recipes under another link, Magic Bars & macaroons: Open Original Shared Link Both of them are really, really easy. And I promise, in the next day or two, I'll post some of my recipes for chocolate truffles - yummy!!!! This is really good for breakfast, Quesadilla Salvadorena. It's almost like a cross between a sweet bread and...
  23. Note: all of the recipes listed below are gluten free, but not dairy free and possibly not soy free either. But you may be able to make it that way. This is my favorite cookie to make around Christmas time: Open Original Shared Link I throw Mi-Del gluten free Pecan Cookies into a food processor for use as the "graham cracker" crumbs, and for...
  24. Is there a substitute for the cornstarch in the first bread recipie You could substitute with any other starch, even more potato starch if you'd like, although that may make it a little "potato-y". I one time used tapioca starch (sometimes in grocery stores, always in Asian markets) instead for the cornstarch, but it had a taste I wasn't crazy about,...
  25. We do the bread mentioned above with some slight substitutions (for all the flours, we use 1 cup sorghum, 1/2 cup brown rice, 1/2 cup potato starch, 1/4 cup cornstarch, 1/3 cup ground flax, increase honey & yeast, too) and use a bread machine. The bread machine makes it workable - I mix it up before going to bed at night (total time about 10-15 minutes...
