I agree with Ursa Major. I have only an upper GI and response to a gluten free diet that was the basis for my diagnosis and I would run, not walk, away from any doctor who was insistant on doing a gluten challege. I have had enough accidental glutenings in the last 30 years to know gluten makes me sick. Simply say, no. Find another GI if this one... -

It could be that the parenting methods that work with their other children are not the same ones needed for this child. My son tested every rule and every limitation, almost always more than once. Missing a social event because I could not eat the food never even occured to me. Take what time you need to adjust but remember your social life will be limited until you are able to cope with other people eating gluten food.

My husband keeps reading glasses everywhere, including at least one pair in each car. We must have at least 10 pairs of the inexpensive reading glasses so he always has them available. He also has a wallet size magnifiying glass that fits in a wallet. -

It is not necessary to cook all week-end if you are willing to eat the same meal at least every other day. I always cook extra for leftovers on the weekend and freeze single servings. I keep the meals simple. I make extra rice and rice pasta. Examples of my meals are grilled chicken, chili, spaghetti sauce with meat, or beef stew in the crockpot. You... -

I have not tried to get tuna through security but I do bring my salad dressing through. I put it in my 1 quart bag with my toletries in a 2 oz container. You might try doing the same with the 3oz can of tuna fish.

I use beans all the time without a problem, both canned and dried. I always look for canned beans with the least amount of ingredients. I have seen other posts where some people are intolerent of legums (beans). Beans are gluten free, they simply may not agree with you. One coping strategy is to bring and eat all your own food. This includes bringing your own food into restaurants. This way it does not matter where your boss wants to eat. I had my gallbladder removed in Aug. 07, 29 years after being diagnosed with Celiac. I was back to work in a week because I am able to work from home when needed. If I had not been able to work from home it would have been two weeks before I was able to return to work. I had two problems after the surgery, the Big "C" and a urinary tract infection....

Beans and pototoes are also cheap, gluten free and easily available. One option is a bean salad to go with cold chicken for lunch. Also, you can look for receipes online to use dried beans for an even cheaper way to eat. I agree with the option to use a thermos if you don't want to use the microwave. -
I took Yasim for several years without any problems. When I spoke to the company, about 4 years ago, it was gluten free.

If you are going to go this route I would add a separate small microwave, dish towels, dish washcloths and sponges. Another option is to explain the problem to your roommate and ask if she would consider having a gluten free household. In suggesting this, you might point out that she will be able to help any of her future celiac patients much better...

I found "Wheat Crackers" in the gluten free section at WholeFoods. The only ingredient was wheat. The box is very similar to the "Rice Crackers" that the same company makes, which are gluten free. One option is to setup a gluten free zone outside the kitchen when you move into her house. A microwave, refrigerator, kitchen cart, utentsils, plates, cookware ect... Based on the information you supplied you might want to consider interviewing. Depending on the employer, the interviewing and hiring process can take a week to several weeks. I agree that the leaves should be gluten free but subject to cross-contamination. My major concern are the following ingredients: Barley juice, wheat juice and oat juice powders. There is no indication where they are from. -
