  1. I tried the one from the recipes here at celiac.com and it totally fooled a party full of gluten eaters. They kept asking me why I was eating the cake b/c it was so good! LOL I think it was Carrot Cake #3....search the recipes here (if you haven't tried something else already).

  5. Have you tried Lorka150's recipe? It's at recipezaar.com . Search for Gluten Free Flax Bread. MY FAVORITE. Tastes like whole wheat to me. I make it with a mixture of brown rice and sorghum and then use all the other "flours" she recommends. Even my KIDS who aren't gluten free BEG for this bread! I'm the only gluten-free one in my house, so...

  8. I've tried the recipe on this site....turned out great. I adapted a little b/c I didn't have some of the ing. Even my kids loved them. They were more "cake" like donuts and I did them has holes instead of whole donuts.
  9. Could you show them the label on the Rice Crispy Treat Box....or if they are homemade show them the label for the rice cripies that says "Barley Malt". Yes, to them, they probably think rice is okay, not even realizing that an ingredient in the cereal could be an issue. It's hard. I hope you get it worked out.   11. 2nding Ghulia's cake recommendation! I bake this one all the time now (thanks to her ). GREAT stuff. Even gluten eating folks will eat it without complaining. I have to say - works best if you do cupcakes OR half recipe and do one pan. I tried baking 2 pans and it didn't turn out so well. GOOD LUCK!!! There's a few books out there geared...

  13. I used BRM too. I LOVE it. I would bet you could make it superfine by grinding in a coffee grinder - if need be. I have not had any "grit" problems at all. Very pleasant. We make our pancakes with half white/half brown rice flour. OH SO YUMMY
  14. Thanks...I saw them...but they were like $8 a box???? NAH!!! I'd rather attempt to make them, than buy them - at least first. If I fail miserably then I won't feel bad spending that for myself! It's like a buck a cone! YIKES!!!!
  15. Recipes? The ones I've found don't really sound like they'll work...and if they don't I can't imagine they'd taste any good! Has anyone made ice cream cones?
  16. If you cook it according to the package directions....then lay in a pan so that it can "solidify"...cut it into shapes (I usually do squares or triangles). Grill on high heat. My favorite way is when you finish cooking them (I do this with grits...but technically this can be done with polenta/corn meal too) I add butter, scallions and monterey jack...

The recipe I've had for these before had a sugar cookie bottom - if you go to www.landolakes.com and search for "Gluten Free" you'll get a good handful of recipes, including one for a flour mixture that I've found works really well. One is for Star Cut Out cookies which is a sugar cookie dough. REALLY GOOD! I made them a few weeks ago...and last night...
  18. I wonder if you could use arrowroot or potato starch flour instead? I know in FLOUR recipes they are interchangeable.... Maybe make a little and give it a try to see if it works.

  20. Another vote for Tinkyada - or Trader Joes. Our Trader Joes is too far away, so I don't get it often - it's definitely cost effective $1.99/lb. Our local grocery store carries Tinkyada in quite a few different varieties, so I buy that most. My kids can't tell the difference (of course, we were whole wheat pasta eaters prior to going gluten free so...
  21. Pizza crust, pizza crust, my kingdom for a good pizza crust! I know your ache! I've heard Kinnickkinnick are a good brand but have never tried them. And the couple times I've tried a crust it's been way too thick and instead of doughy - it was gummy. BLECH!!! I just got a new recipe book out of the library and it has a recipe for a thin crust...

  25. NO!!!! It contains Barley Extract. They actual "Chex" ARE NOT GLUTEN FREE!!! Sorry to be emphatic. Health Vally Rice & Corn Chrunchems are. And they are BETTER than real live Chex. Even my kids like them better.
