Peter, you have good points. My points are: 1) Nestle has the ability to certify gluten-free if it wanted to; 2) I know it MAY be gluten-free or is LIKELY to be gluten-free but that is not something that I care to risk, as being ill causes all sorts of problems (missed work, missed family events not to mention internal damage); 3) I choose to support products... -

I'm glad that I read this. Everyone is so "pro" Udi's because of the taste/convenience. I can eat one slice or 1/2 a bagel but if I eat more I get gluten symptoms. It's too bad really. -

I called the restaurant (when they weren't busy) and asked to speak to someone about allergies. The woman asked what and I said celiac/gluten and she said "Me too!" I've had good gluten-free experiences at Mangiano's and some smaller family owned pasta places (Ellensburg Pasta Co. for one) but haven't been to Buca before. Didn't think I would ever go there but apparently they have a gluten-free menu and I'm going there for a client thank-you lunch tomorrow. For those who have heard this story before, my apologies. I asked my son, after he went gluten free, if he noticed any changes and he said "I didn't know that eating wasn't supposed to hurt." I've never tried anything but the burrito bowl. I skip the lettuce, cheese and anything else that they use their hands on. (I did get glutened when I ordered the cheese first time there.) I also ask them to change their gloves and have never had even a dirty look - I say I'm "allergic" to wheat. And I ask - if they don't offer- the original person to take... -

Sorry to say, but your blood test was worse than useless, as it may lead you or your doctor to say that you don't have celiac. You will never know for sure unless you go back on wheat for several months, eating 3+ slices of bread a day. Even then, blood tests are amazingly inaccurate: The celiac blood test is notorious for "false negatives" whereas a positive... -

I can wear good quality sterling in my ears - have had some bad pieces. I can even wear white gold rings. Watches, necklaces though give me a problem almost 100% of the time...I can't wear sterling or nickel or white gold - only stainless. -

I too have a nickel allergy. It could be related to celiac or to having my ears pierced with nickel/white gold posts: They both happened around the same time. See this other thread: MollyBeth, you might want to avoid mineral make-up, which has metals in it. (BareMinerals is the most common but some mainstream makeup has minerals too.) -

Well, yes and no. The 30th isn't that far away. If she has villi destruction, it is unlikely it would heal in less than two weeks. And if the kid can't eat without extreme pain, it may be hard to convince her to eat wheat bread, wheat pasta etc. But if she's going through the endoscopy, it'd be good to have a true diagnosis for things like ADA accommodations... -

The paper that they send you home with after the procedure only says what they "saw" but the biopsy takes time, about a week usually. From what I understand they can "see" ulcerative colitis but microscopic can only be seen under a microscope, as the name says, not via the "scope" used for the colonscopy.
