  8. I LOVE this carrot cake. DS always wants me to bake it for him and even DD (who isn't gluten-free/DF/CF) loves it. I substitute apple sauce or canned pumpkin for the yogurt. I make the frosting with Earth Balance spread instead of butter and omit the cream cheese. I can't tell the difference and I used to be a butter snob (before DS went CF/DF).

With 500 guests, the kitchen is on auto-pilot and I've learned to finesse the situation.   13. This is my favorite, hands down. I tried 8-9 first. However, I do not broil it. I just pre-bake the crust and then do as I did pre-celiac in terms of sauce, topings etc. I also bake ahead (not too brown) and freeze in one- or two-person sizes.

  15. I think if you do some research i think you'll find a connection between celiac and narcolepsy. Nacrolepsy is an autoimmune disorder.   18. I'm not sure that they are very low-cal, but I saw this recipe and thought that I could easily adapt it to gluten-free/DF and it worked! They keep for a few days (unlike the Trader Joe's mix) and are really quick and easy. TJ's mix is pretty expensive too, although it's cheaper than Bob's red mill! This is cheaper. Enjoy!   19. I have not found any Chipotle Peppers in Adobo Sauce that are gluten free. I think Adobo sauce as a rule contains gluten. Someone correct me if I'm wrong. I'm really sad to not be able to use it, as it was an ingredient in several of my recipies and I don't have a good or easy substitute.

  21. Megan, in my opinion, I would not eat the chips or tostado shells. They fry wheat tortillas etc. in oil and most restaurants don't have a dedicated fryer just for the corn tortillas.
