ARCHIVED Starving! Please Assist!
cyberprof replied to Newtoitall's topic in Related Issues & Disorders
Have you looked at the Specific Carbohydrate Diet (SPD)? Many people on this site follow it. Open Original Shared Link -
I would also mentioned that you should be concerned about your food if you're staying more than a day. I checked a local hospital (very well regarded one) and they said that they would not be able to supply me a gluten free diet. I'm sure that some hospitals can but you should ask ahead of time.

OK, I just did a search on the "Support Groups" forum and found this thread: It looks like these people are in mainland China, but they have some good hints. Maybe send these posters a private message (PM) and ask for ideas.

Gosh, that's a hard one. I love to travel but have decided that with celiac, I won't be going to Asia unless I can go with someone who is fluent in the language. It might help to know if you're there for school or if you work for a US corporation or are with a friend/family member who is Chinese etc. Since Asians (generally, from what I

ARCHIVED At What Age Was Your Child/children Diagnosed Celiac?
cyberprof replied to salexander421's topic in Parents, Friends and Loved Ones of Celiacs
From celiac.com:"IgA tTG continues to display the most accurate diagnostic tests for a positive celiac diagnosis, as well as for excluding a negative celiac diagnosis. However IgG DGP antibody tests were shown to be more effective at identifying 'false negatives' and had more success in determining celiac in patients that had IgA deficiency, and in children... -
ARCHIVED Symptoms You Never Realized You Had
cyberprof replied to sandsurfgirl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had the dry, cracked and bleeding fingers. I still occasionally get them but I think it's because I've touched gluten, so now I wear gloves if I cook for my daughter or in-laws. I had keratosis pilaris (chicken skin) for my entire life and it went away gradually after going gluten-free. I have arthritis, but I no longer feel like I've been run... -
ARCHIVED Found Rudi's gluten-free Bread
cyberprof replied to MelindaLee's topic in Gluten-Free Foods, Products, Shopping & Medications
Count me as one who loves Rudi's and hates Udi's. Well..."hate" is a strong word. I like it but if I eat 2 or more slices in two days, I react to it. One is ok, usually. With Rudi's, I don't have that reaction. And I don't normally react to gluten-free baked goods, so I don't know if it's CC or something else. Maybe tapioca, which is in Udi's but... -
ARCHIVED gluten-free Girl And The Chef-Cookbook
cyberprof replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
I love the Gluten Free Girl's website, have met her in person twice and taken a gluten-free cooking class from her and her hubby - the Chef. I bought her first book but won't buy the new one for the reason that you note. I'm a very creative cook but short on time and money so I just don't have time to do some of her intensive recipies. -
ARCHIVED Gluten Free Oats For Baking Oatmeal Cookies Recipe
cyberprof replied to Spartans1960's topic in Gluten-Free Recipes & Cooking Tips
I react to Bob's gluten-free Oats, which is unique, as I love and use all his other gluten-free flours. I use a product that is from a company that is confusingly called "Gluten Free Oats" which is, they say, owned by a family of celiacs. I get it online from amazon. I can eat one or maybe two oatmeal cookies and I can use it in meatloaf or an apple... -
ARCHIVED How Gluten Friendly Is Your State?
cyberprof replied to Mama Melissa's topic in Coping with Celiac Disease
I'm in Seattle and it's pretty good. We have Whole Foods, Trader Joe's, Metropolitan Market and a local co-op Puget Consumers' Co-op (PCC). I find that I have to go to all of them at different times for different products but all are good. We have a few gluten-free dedicated restaurants plus awareness is pretty high in those high-end restaurants with... -

Not the same as store-bought...but Gluten Free Girl has an article about gluten-free cannoli this month. Open Original Shared Link I'm going to try them! -
ARCHIVED How Much Gluten For A 17 Month Old To Make Sure We Don't Get A False Neg
cyberprof replied to beebs's topic in Parents, Friends and Loved Ones of Celiacs
Earlier might be better. How about oatmeal (not the special gluten-free oatmeal), cream of wheat? Creamed soups with flour thickener. Omelette with flour added to the batter. Breaded chicken strips. Oh, listen to me! I sound like a gluten-deprived addict. But since flour hides in a lot of places, I can think of lots of places to hide it! Good... -
ARCHIVED Is Lots Of Gas Normal?
cyberprof replied to Mizzo's topic in Parents, Friends and Loved Ones of Celiacs
And for natural remedies, I like peppermint tea, which would be very soothing for a kid. Lemon balm tea is also an idea. I think there are also peppermint pills, but I've never tried them. -
ARCHIVED Is Lots Of Gas Normal?
cyberprof replied to Mizzo's topic in Parents, Friends and Loved Ones of Celiacs
Lactose (milk sugar) or casein (milk protein) intolerances both can cause gas. Actually, maybe any intolerance could produce gas: Gas (if I'm not mistaken) is a sign that some food is not being digested properly. Some newly-diagnosed celiacs are temporarily dairy intolerant...for others it's permenant. Lactose is digested on the ends of the villi that... -
ARCHIVED Enterolab Testing & Validity?
cyberprof replied to vbecton's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I used Enterolab for my then-15yo son and would do it again. The $350 cost was worth it for two reasons: 1) His father (my husband) refused to let him take the risk of an endoscopy; and 2) his blood work was negative (as was mine). My son wanted some "proof" before he went gluten-free. I was already diagnosed celiac, so it wasn't a shot in the dark... -
ARCHIVED More Cross-Contamination Advice
cyberprof replied to HonoluluVic's topic in Coping with Celiac Disease
Oh, and I never put anything in the microwave uncovered. I use a lid, a cover, plastic wrap or something - every single time. -
It may be cross-contamination, it may be that you're super-sensitive, it may be that you have other intolerances. My advice (given to me by other more experienced people when I was new) is to eat a pure, real diet after diagnosis for a month or two until you figure out some things. You won't know what is causing the problem for a bit. Eat rice, potatoes...

ARCHIVED More Cross-Contamination Advice
cyberprof replied to HonoluluVic's topic in Coping with Celiac Disease
HonoluluVic, sorry you're having problems even after you figured out this stuff. I share a kitchen with my gluten-eating daughter when she's home from college. I keep separate utensiles as much as possible. Get your own: Non-stick skillet (or use regular steel instead of non-stick) Spatulas and pancake flippers Toaster Hide these or keep them in... -
ARCHIVED Never Thought I Would Be Able To Do This
cyberprof replied to ravenwoodglass's topic in Coping with Celiac Disease
I just got chills up and down my spine after reading your post, ravenwoodglass. You are such an inspiration and that is often needed here. You should put your achievement in your signature, too, to encourage others to follow you or to achieve goals of their own. I teach at a community college and also at the graduate school level (online classes only... -
Ditto. I eat lots of extra garlic (raw preferred) which stings a bit but helps them heal faster. Good luck! I hope you have good news on the baby soon.

ARCHIVED Nestle Butterscotch Chips Got Me
cyberprof replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
With all due respect, Jestgar (you usually have a lot of good ideas) I didn't ask for a critique of my choices. I cook 90% of my food from scratch. This is for an emergency and/or quick when I don't have time or I'm not in my office (traveling) or it's short notice. I'm an executive, I have a family, plus I teach part-time at the university level so... -
ARCHIVED Nestle Butterscotch Chips Got Me
cyberprof replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
That is EXACTLY my objection...they are not required to lable barley or rye. Both of those can be hidden easily in spices. I don't want to argue but you're making it sound like I'm incorrect, and I'm not. It "may" be gluten-free but not guaranteed. -
ARCHIVED Nestle Butterscotch Chips Got Me
cyberprof replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes, I keep the Thai Kitchen noodles on hand for emergencies. But I have an executive level job and we often order in at short notice. Thai Kitchen noodles are too hard to cook fast and really - without adding shrimp or chicken, veggies and such - aren't a full meal. But thanks for the Smart Ones list. I'll check it out. -
ARCHIVED Experience With Buca De Beppo?
cyberprof replied to cyberprof's topic in Gluten-Free Restaurants
I just realized that I spelled it wrong ...should be Buca di Beppo! -
ARCHIVED Celiac/gluten Intolerance And Diabetes
cyberprof replied to Joe0123's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Two things: The urination/thirst could be diabetes and at least needs to be checked out by a doc. 2) The stomach issues could be related to gluten, to diabetes, to other food intolerances or another condition (ulcer, etc). An elimination diet might be something to try. But going to the doc to address the diabetes symptoms should be your #1 priority,...
