  2. Kilcan, I think that the South Beach diet lends itself to the gluten-free requirements of celiac disease. It is pretty easy to follow. I do not use the artificial sugar substitutes and other things that he recommends, but I try to focus on lean meats, veggies, fruits and lots of spices, vinegars and tasty recipies using fresh ingredients, not processed...
  3. Hi Jessica, Yes, I think exercise is the answer, at least I hope it is for me. I, too, stopped at diagnosis since I felt so bad and just started again last week. I'm going to really kick the exercise into gear this week and see if that helps. Good luck! ~Laura
  4. Redharmony, The answer to the above is Enterolab testing. It is cheaper than paying for tests via your doctor AND it has the added benefit of not appearing on your kids' medical records. It should also satisfy your husband because they are true medical tests. Going gluten free as a test might show your husband, but Enterolab results can't be ignored...
  5. Jessica, I'm not sure why you've gone down with the swelling but up on the weight. It could just be losing water weight puffiness for your face and waistline but gaining glycogen stores elsewhere or something like that. I don't have any answers on the weight. I've been once since going gluten free and I was worried, but the Bellevue staff was great and a I had a great meal, plus 2 leftover meals, since they give you so MUCH!.   10. Sorry you got gultened. What my baby-brother, an M.D., told me to do (long before I was diagnosed with celiac) was to eat raw garlic. So whenever I got sores (none since going gluten-free) I would make some homemade hummus or some ceasar salad or greek salad. It worked every time. Good luck to you.

  21. On most cruises, including RC, you can go to the buffet at any time but if you want a meal, you can go to the dining room. The hours are more limited, but as a new celiac, I would expect that I would only go to the dining room and avoid the buffet if at all possible. The dining room food is a bit better and it only takes a little longer. ~Laura
