    ARCHIVED Bread

I tried this bread at a local gluten free food fair and it's the best gluten free bread that I have had. It kind of reminds me of traditional potato bread because it kind of has a yellow color, but it does not taste like potato bread and it was really moist--not hard and crumbly. (I thought the bread was great, but I don't think that my son will like any...
  2. I will pass forward the flour recipe given to me: 3 parts white rice flour 2 parts potato starch 1 part tapioca flour/starch *unless otherwise noted add 1 tsp xanthan gum for every 1.5 cups of flour This recipe works the best out of everything that I have tried. In general, the more starches you can use the better. Gluten free baking...
  3. I believe that most HMO insurances give you the right to a second opinion at another hospital. There are issues with getting testing done now. Tests are unreliable until he is at least 2 years old. Most importantly, if he is not consuming plenty of gluten then his tests will come back negative regardless if he has celiac disease or not. The tests look...
  4. When I called Floam a couple of months ago I got the beloved "what's gluten?" response. I asked the girl to read me the ingredients and it sounded fine. It's just made out of Styrofoam balls and highly processed organic compounds. Nothing in the ingredients caught my attention.
  5. I think that Elmer's glue in gluten free. Crayola addresses the gluten issue on their website. Off of the top my head, I think the only Crayola product that contains gluten is their dough.
  6. Thanks. I must have gotten a new guy when I called. It didn't make sense that such a big company would not clearly list their gluten.
  7. I too started my son on the gluten-free diet before seeing the pediatric GI, based off of his blood test results. I was told to do the gluten challenge with my son, but I went home to think it over. After getting advice from the wonderful people on this board and doing some thinking of my own I decided against the biopsy. The gluten-free diet is something...
  8. Thanks guys, I planned on buying this cereal!
  9. Most people say that you do not need to worry about paper products, but I figure as long as you're going to buy them you might as well buy them gluten free. Besides, to my son the paper rolls are occasionally used as telescopes and microphones! Here are gluten free products, according to the Clan Thompson software: Paper Towels: Viva Bounty Scott...
  10. The link is actually the the GIG Portland OR blog page, but the U-Tube video is on the top. I'm too lazy/busy to track it down on the U-Tube site. There was nothing ground-breaking said, but it is nice that the disease was talked about on a mainstream TV show. Open Original Shared Link
  11. Thank you for all of the replies. They do not use play dough, but I will bring up the art supplies and cross contamination issues in a team-like manner. I have been providing gluten free food so that he can eat similar things to the other kids rather than premade lunches. Maybe I will discuss that possibility with her. Thanks again
  12. I think that these crusts may be too thick to make them crunchy. I cook mine until the edges get brown and then I take them out of the oven and put on the sauce and toppings. Maybe if you put olive oil on the sheet and brush a little bit on the crust and broil it or cook it at a high temperature for a little bit before you put the sauce and topping on....
  13. I'm not sure what to think. My son has been gluten free for over 2.5 months. Initially his diarrhea was gone along with all of his other celiac symptoms. For the last couple of weeks he has been having diarrhea on and off, been cranky, and yesterday he developed a mouth sore. I am over the top careful at home. I suspect that the yogurt that I have been...
  14. Here's a Bob's Red Mill recipe that I plan to try soon. Coconut Country Biscuits contributed by Chelsea Lincoln When you take a bite of these flaky biscuits, you won't be able to stop thinking of all the ways you can eat them! Ingredients: 3/4 c. White Rice Flour 1/4 c. Organic Coconut Flour 2 Tbsp. Potato Starch 1 tsp. Sugar...
  15. As you already said, you should continue to eat plenty of gluten. I would also ask/demand that your doctor take many samples during your biopsy. Celiac disease is known to be a patchy disease and the fewer samples your doctor takes, the greater the likelihood that he will miss the atrophied locations during the biopsy.
  16. Are you sure that Con Agra will list their gluten? When I called about their Act II microwavable popcorn. They told me that it was gluten free, and then they proceeded to tell me how they list the top 8 allergens. When I asked them about barley, oats and rye I never got a solid response.
  17. How about when the doctor tries to describe Celiac disease my comparing it to a reaction to poison oak! Totally insulted my intelligence. I never try to flaunt my degree but I had to in order to get him to stop talking to me like a child! When they tell you that Celiac disease is not a spotty disease relative to intestinal biopsies. Every case he...
  18. I called Hidden Valley Ranch a couple of weeks ago and they gave me a list of gluten free products. They told me that their ORIGINAL ranch is gluten-free, but many of their variations like garlic are not. There's nothing like Hidden Valley ranch!
  19. If the product is from the US then caramel coloring is supposed to be made from corn. When in doubt call or email the company, they can give you the most accurate information about their products. Natural flavoring may have gluten in it, especially if it's in a meat product.
  20. I looked it up on my Clan Thompson software and it said that it has stabilizers that may contain gluten so they have it listed as NOT gluten free. Yoplait is a General Mills company so they will list any gluten. Tillamook yogurt is also gluten free.
  21. This site has a great list of gluten containing ingredients that people with Celiac disease should avoid. Malt flavoring is on that list because it is usually made from barley. Most mainstream cereals (including Rice Crispies) do have it. General Mills and Post brand cereals will clearly label their gluten. Post is a Kraft brand, and all Kraft and General...
  22. Don't you just love Safeway! I wish that Fred Meyer/Kroger would do the same thing. My only question is that I got my own email list from Safeway a month ago and Cocoa Astro cereal (like Coco Puffs) was on my list, but I have not seen it on other people's lists. Hmm. I bought them for my 3.5 year old son who was so happy to have them, but now he won't...
  23. I hope your son continues to do well. Being free of oats should be a lot easier than being free of gluten! Please keep us updated on your son's progress. It is so nice to hear about kids getting better after watching my son go from sickness to being able to thrive and grow like crazy!
  24. If I were you, I would get the full allergy and celiac panel run on him after he has been on gluten for a while. I don't think that anyone is trying to second guess the parenting decisions you have made regarding you son, but as you know celiac disease is a tricky and complicated disease. As I mentioned before once you get the allergy tests done, you will...
  25. To be on the safe side I would not eat it. People with celiac disease mount an immune response to this enzyme (when bound to gluten?) and this is what ends up causing intestinal damage. What yogurt are you talking about?
