  1. On the Clan Thompson site/software is says that caramel coloring is usually gluten-free unless used in meat containing products. Can anyone elaborate?
  2. I just saw Mission Super Size White Corn Tortillas in an ad and went to the Mission website. They appear to be gluten-free. Here is the ingredient list that I copied from the website: GROUND CORN TREATED WITH LIME, WATER, CELLULOSE GUM, PROPIONIC ACID (TO PRESERVE FRESHNESS), PHOSPHORIC ACID (PRESERVATIVE), BENZOIC ACID (TO PRESERVE FRESHNESS), DEXTROSE...
  3. Thanks everyone! I love the idea of using chocolate chip cookies for smores!!! I bought some Jo-sef "graham crackers" but I'm sceptical because according to my son their "oreo" cookies were yucky. (I agree!)
  4. This mixture was passed on to me when I asked a similar question. It works great. I used it for my old sugar cookie recipe and could barley taste the difference. I don't really care for premixed gluten-free flour (although I have a 25 lb bag of Bob's Red Mill ). 3 parts white rice flour 2 parts potato starch 1 part tapioca flour/starch ...
  5. You are in luck! Glutino makes a cracker that looks just like Ritz, but it does taste a little like a saltine. They are good. I eat gluten but I still eat them with my son. They are the best gluten-free cracker that we have tried so far. You can find them online if you cannot locate them in a store in your area. We also like the Blue Diamond nut thins...
  6. My son has been eating it on and off for the last two months. In that time there has not been malt flavoring in the ingredient list and the food starch is clearly labeled as corn.
  7. Later in the month we are taking our first camping trip since my 3 year old son was diagnosed with celiac disease. We are going to the mountains for three days. I would like to know what your favorite gluten-free camp foods are (especially kid-friendly) and if anyone has any tips for making the trip go as smoothly as possible. We have a large 4 burner...
  8. What is the cost of Lactaid relative to soy milk? I pay $3-4 for a half gallon of silk soy milk.
  9. I personally don't trust plastic dishware. I know that our plastic bowls and plates get little scratches and nicks in them over time. That is hard to clean. Anything that is not very hard and resistant to scratches like glass and ceramic I got gluten-free replacements. I know that I may have went further than some people, but I just don't see any reason...
  10. I have read on this board that Kraft sells their orange powder cheese in a can like Parmesan cheese...but I have been unable to find it. It is supposed to be in grocery stores near the Parmesan cheese in the can. Amy's boxed mac & cheese is ok if you add extra cheese. I made this recipe last night. I got it from glutenfreeda.com. Right now they...
  11. I think overall a bit slower than normal development is associated with celiac disease due to malabsorption. That's one of the things the pediatric gastro was interested in at his appointment. My son did not get his teeth late, but he did not sit unassisted until after 6 months, crawl until 8.5 months, walk until 14 months, and really start talking good...
  12. I hate responses like that! Barley and rye are not in the top eight allergens! It's like they are avoiding the real question. So if barley was in the natural flavors would they list it? I got a similar response from Con Agra. Taco Bell brand is made by Kraft. I know that they will list gluten in addition to the top eight allergens, so I use their products...
  13. The most common reason for excess gas is that you are not digesting something and the bacteria that live in your gut are more than happy to digest it instead. Gas (methane) is a normal byproduct of bacterial metabolism. If you are lactose intolerant then they are digesting the lactose, or if you eat lots of veggies then they are eating the cellulose......
  14. I completely agree. We are so lucky to have this resource. I have learned nearly everything that I know about celiac disease here! Everyone has been so great. I know that we would not be in the the same place in our gluten free life without the help of you wonderful people. Through this forum I have learned about diagnosis, cross contamination, cooking...
  15. Cooking gluten free is like learning how to cook all over again! I use about 3 parts rice flour, 2 parts tapioca flour/starch and 1 part potato starch. I also add about 1 tsp xanthan gum for every 1.5 cups flour used unless otherwise directed. The more starches used the better. I have made this recipe and it's pretty good. I'm pretty sure that I...
  16. This is one of my many reasons, and I think my best reason, for not allowing the doctor to biopsy my son. He had all of the classic celiac symptoms, be had positive blood work, and finally all of his symptoms disappeared and he had gained 3 pounds in the first month after going gluten free. First of all, I am not going to put him through hell to confirm...
  17. Unless you have a milk ALLERGY you don not need to avoid casein and whey. Those are proteins and it is the proteins that cause an allergic reaction. If you are INTOLERANT due to Celiac disease or genetics then you cannot digest lactose, the milk sugar. They can both cause cramps and diarrhea for two different reasons. If you are lactose intolerant then...
  18. This is what the gastro that I took my son to tried to say. My son's tTG levels were 3x higher than normal and he had normal IgA and IgG. His pediatrician who ordered the tests told me to put him on a gluten-free diet, and by the time I went to see the gastro it was a month later. The gastro was pushing very hard for the gluten challenge and biopsy. He...
  19. Theoretically the blood work should show up first. The tTG test looks for tTG antibodies which is indicative of an autoimmune response occurring in the body. The result of that autoimmune response is the release of chemicals from immune cells that damage the intestine. This causes the flattened villi that is observed during a positive biopsy. From what...
  20. I'm so happy to hear that your daughter is getting better! It's amazing how happy we can get over poop! I hope your daughter continues to thrive on this diet and that you will be amazed by her progress.
  21. As far as baking goes it is good to have a variety of flours. I prefer to make my own mixes. In my experience the more starches you can use the better. I use corn starch, potato starch, and tapioca starch/flour very frequently. You should also get brown and white rice flours. You may also want to get a bean flour. I don't know much about brands. I...
  22. Looks fine to me. Wow, it must have taken a lot of work to post that!
  23. My son is the only one that has Celiac disease, although I feel better when I don't have gluten. I have brain fog, and as soon as I pay off my son's lab work I plan to get myself tested. We are 90% gluten free. The only gluten foods that we buy are bread and pasta. I try to be really careful with gluten. (I basically treat it like poison .) All of...
  24. Thanks for all the great ideas! I'm going to try lots of these recipes...not in one day though! It's nice to figure out as time goes on that Celiac disease is NOT the end to great food. I did use the Kinnikinnick graham cracker crumbs to make a crust for my cheese cake, but the directions call for WAY TOO MUCH butter. If anyone plans to make a crust...
  25. My son does not care for the specialty cereal. He likes cocoa/fruity/berry pebbles, Health Valley corn "chex", Trix (make sure you read label every time they like to their minds), Dora stars, and Safeway brand cocoa atros (like cocoa puffs!!!). Lays stax are made on dedicated lines and many Kettle chips are made in a dedicated facility. He also likes corn...
