  3. I started being nauseated everyday about a year after I went gluten-free. It turned out to be my gallbladder. Once I had it out, the nausea went away. In nursing school we learned the four "f's" of gallbladder disease: fair, female, forty and fat. I fit almost all of those when I had mine out!

  5. Have you had a celiac panel run? I would think that is a logical step before you try to eliminate gluten. You MUST be eating gluten for this test to be accurate. If you eliminate gluten and your dr suspects celiac, you'll find yourself in a pickle if she suggests the bloodwork. Were they specifically looking for celiac during your endoscopy? If not...
  6. We didn't care for it at all. Not because it was bad, but it's a Northern recipe--too sweet and cakey! Cornbread is about the easiest thing in the world to make. Do you want my recipe?   15. I served the croissants for breakfast with jam this am and they were absolutely delicious! Everyone loved them. They are light and flaky and beautiful.   17. If you have a Jewish community in your area, check with them. Potato starch is used a lot in Jewish cooking. I like potato starch. It seems to make things brown nicely.

  22. The millet and buckwheat I would store in the freezer. I also keep flax and bean flours in the freezer. The starches and the xanthum gum I wouldn't worry about at room temp. If you bake a lot and can keep it out of the light and down low, I wouldn't worry much at all.
