  2. That's how it was for me. It improved some in the first few months, but it took at least a year for it to go away significantly. Even with that, I still have issues with it on occasion. Your body has to lay down new myelin to cover those exposed nerves and that takes time. An issue with us is our general health. Your body needs to heal your intestines...
  3. I would check directly with them. They make lots of gluten containing mixes, so I'd be very wary of cross contamination. BRM makes corn flour. Would you want to season your own mix?

  7. You could see and ENT to check for ear related balance issues. I went that route before a neurologist found the b12 deficiency. The test for inner ear is very uncomfortable. They blast your ears with warm and then icy water. They try to make you dizzy. I came very close to puking. Keep trying! It does have a source, I'm sure.
  8. Have you been test for vitamin deficiencies? I would think b12 in particular. That weird, "I'm not in my body, but it's moving" has a name but I can't ever remember it. It isn't vertigo because you aren't spinning. B12 cured that for me. I'll know what you're talking about. It's a disturbing feeling.
  9. I always read the label, even on stuff I buy every week. It's my reality. Products are changing all the time. A book would never be able to keep up with the changes. It slows things down, but at least more things are labeled gluten-free now.
  10. I'll tell one on myself. I grew up hearing Massachusetts pronounced as Mass-a-two-sh!ts. I didn't ever realize I was saying it wrong until I met my husband. The first time I said it he said, "WHAT did you say!?" I'm still careful about saying that word...
  11. We were at an aquarium one time and a little girl pointed one out to her mom and pointed out an anemone, saying it correctly. Her mom said, "That's not right! It an A-KNEE-Moan." What a moment!   12. I have an Italian friend and her family does a full Thanksgiving and a a full Italian dinner on Thanksgiving. Pre-gluten-free I always got a pan of eggplant parmesan. My SIL's family doesn't eat any of the traditional stuff, so they just eat a big spread of what they like best.

  15. Sure, you can open the lid anytime up until rising. I often use a small silicon spatula to help my machine get all the flour out of the corners in the beginning. When the the mixing stops, right before the rise cycle, open the lid and smooth out the top. Don't worry about having to work too quickly. Just keep the spoon wet and smooth away. I think you...
  16. If you are the only person eating it, I would slice it and put it in the freezer. It stays soft that way. If you leave it out, it becomes crumbly after only a day. Good job! Oh, and if you smooth the top with the back of a wet spoon, it looks nicer and seems to rise better.

  19. Grr! That's frustrating, isn't it? One thing I've learned is that these "mistakes" make great bread crumbs. I chop them up in the food processor and dry them in the oven.

  25. I think your rolls look delicious! That said, I think your looking for the same thing all of us gluten-free bakers are; the fluffy type of bread you can tear apart that is so good. It's pretty elusive. We wind up with bread that doesn't tear, but breaks. There are several of on here working on it! Xantham hasn't been the answer for me...
