ARCHIVED Which Of Your gluten-free Recipes Came Out Really Great
TrillumHunter replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
I made my friend a loaf of gluten-free pumpernickel and she made her stuffing with it. So, so good! We had it last year with rice and enjoyed it, but it's better with the bread! I made a triple layer chocolate mousse cake that is delicious. I can't wait to take it somewhere as it is quite impressive. Everything was so delicious! I wish I... -
ARCHIVED B12 Now High Normal
TrillumHunter replied to Wolicki's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
That's how it was for me. It improved some in the first few months, but it took at least a year for it to go away significantly. Even with that, I still have issues with it on occasion. Your body has to lay down new myelin to cover those exposed nerves and that takes time. An issue with us is our general health. Your body needs to heal your intestines... -
ARCHIVED Gluten Free Breading
TrillumHunter replied to Katydid's topic in Gluten-Free Recipes & Cooking Tips
I would check directly with them. They make lots of gluten containing mixes, so I'd be very wary of cross contamination. BRM makes corn flour. Would you want to season your own mix? -
I'm so sorry! Take care of yourself and maybe have a lovely meal when you're feeling better.

ARCHIVED My Heart Is Breaking
TrillumHunter replied to elle's mom's topic in Parents, Friends and Loved Ones of Celiacs
Just for the record, they probably did eat a type of corn bread and it was probably gluten-free naturally. It WOULD be possible for her to make it more authentically and be safe for gluten-free kids. But, that's past, isn't it? My kids went to a private, church nursery school and we provided snack and made play-dough. Plus, we did a fundraiser. ... -
ARCHIVED My Heart Is Breaking
TrillumHunter replied to elle's mom's topic in Parents, Friends and Loved Ones of Celiacs
I don't think you'll get anywhere by saying, "I pay for this. Do a better job or else!" What I have seen happen in cases like this is the school politely informs you they won't be able to meet her needs. The issues weren't celiac, but academic. Private schools have the right to say they can't provide for your child's needs. If you were a public school... -
Occasionally Feel Like I'm Going To Fall Over?
TrillumHunter replied to amberlynn's topic in Coping with Celiac Disease
You could see and ENT to check for ear related balance issues. I went that route before a neurologist found the b12 deficiency. The test for inner ear is very uncomfortable. They blast your ears with warm and then icy water. They try to make you dizzy. I came very close to puking. Keep trying! It does have a source, I'm sure. -
Occasionally Feel Like I'm Going To Fall Over?
TrillumHunter replied to amberlynn's topic in Coping with Celiac Disease
Have you been test for vitamin deficiencies? I would think b12 in particular. That weird, "I'm not in my body, but it's moving" has a name but I can't ever remember it. It isn't vertigo because you aren't spinning. B12 cured that for me. I'll know what you're talking about. It's a disturbing feeling. -
ARCHIVED Gluten-Free Lists Not Reliable
TrillumHunter replied to JBaby's topic in Gluten-Free Foods, Products, Shopping & Medications
I always read the label, even on stuff I buy every week. It's my reality. Products are changing all the time. A book would never be able to keep up with the changes. It slows things down, but at least more things are labeled gluten-free now. -
ARCHIVED Pet Peeve Regarding The Slaying Of The English Language.
TrillumHunter replied to Imanistj's topic in Introduce Yourself / Share Stuff
I'll tell one on myself. I grew up hearing Massachusetts pronounced as Mass-a-two-sh!ts. I didn't ever realize I was saying it wrong until I met my husband. The first time I said it he said, "WHAT did you say!?" I'm still careful about saying that word... -
ARCHIVED Pet Peeve Regarding The Slaying Of The English Language.
TrillumHunter replied to Imanistj's topic in Introduce Yourself / Share Stuff
We were at an aquarium one time and a little girl pointed one out to her mom and pointed out an anemone, saying it correctly. Her mom said, "That's not right! It an A-KNEE-Moan." What a moment! I didn't want to correct the mom in front of her little girl, so I pulled my son over and said, "Oh! What a pretty ah-nehm-oh-nee!" -
ARCHIVED 2009 Thanksgiving Menus
TrillumHunter replied to Ahorsesoul's topic in Gluten-Free Recipes & Cooking Tips
I have an Italian friend and her family does a full Thanksgiving and a a full Italian dinner on Thanksgiving. Pre-gluten-free I always got a pan of eggplant parmesan. My SIL's family doesn't eat any of the traditional stuff, so they just eat a big spread of what they like best. -
ARCHIVED My Sister Doesn't Believe Ingluten Intolerance!
TrillumHunter replied to nu-to-no-glu's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Don't do that. You are a better person than that. Be calm and be positive about the great changes in your health going gluten-free has brought about for you. If you find a journal article about MS and Celiac, and there are plenty, pass it to her without much comment. The link is real and she could be damaging her health by continuing to eat gluten. This... -
ARCHIVED Completely, Completely Overwhelmed :-(
TrillumHunter replied to Shess0816's topic in Coping with Celiac Disease
I hope that typing it all out helped some. You have had way more than the average person should have to deal within a very brief time. You're doing all the right things and you'll have to keep doing them until this passes. There aren't any easy answers during times like these. Be good to yourself, keep your head up, and have hope! Don't be sorry for... -
ARCHIVED 2nd Round Of Sorghum Bread
TrillumHunter replied to twe0708's topic in Gluten-Free Recipes & Cooking Tips
Sure, you can open the lid anytime up until rising. I often use a small silicon spatula to help my machine get all the flour out of the corners in the beginning. When the the mixing stops, right before the rise cycle, open the lid and smooth out the top. Don't worry about having to work too quickly. Just keep the spoon wet and smooth away. I think you... -
ARCHIVED 2nd Round Of Sorghum Bread
TrillumHunter replied to twe0708's topic in Gluten-Free Recipes & Cooking Tips
If you are the only person eating it, I would slice it and put it in the freezer. It stays soft that way. If you leave it out, it becomes crumbly after only a day. Good job! Oh, and if you smooth the top with the back of a wet spoon, it looks nicer and seems to rise better. -
ARCHIVED Buckwheat
TrillumHunter replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
It's gluten-free. It's not related to wheat, rye, or barley at all. I don't know why she didn't make that clearer in her revision. -
ARCHIVED Beer Reviews Here
TrillumHunter replied to Ahorsesoul's topic in Gluten-Free Foods, Products, Shopping & Medications
Check out this link:Open Original Shared Link I've tried Red Bridge and Bart's. There is a sweetness to them I don't like. I had a Green's and boy, was it bitter! It was also very pricey. I think $8 for a large bottle. Seems like I tried another one in Texas, but the name escapes me. I only drank one out of the six-pack because of the sweetness factor... -
ARCHIVED Emeril's gluten-free Pizza - Haha
TrillumHunter replied to IMWalt's topic in Gluten-Free Recipes & Cooking Tips
Grr! That's frustrating, isn't it? One thing I've learned is that these "mistakes" make great bread crumbs. I chop them up in the food processor and dry them in the oven. -
ARCHIVED Pet Peeve Regarding The Slaying Of The English Language.

WHAT!? Son of a biscuit eater is a personal favorite. That and, "Sugar, Honey, Iced Tea!!" Fo' shizzle! -
ARCHIVED Taste Of The Wild Dog Food

I have a bag that my puppy refused. You're welcome to it! It smells good, but she just refused. -
ARCHIVED Invisible Fencing For Dogs
TrillumHunter replied to TrillumHunter's topic in Introduce Yourself / Share Stuff
She is a mixed-breed. She's half Jack Russell, and, allegedly, beagle/basset for the other half. She's a mutt. So far, we think she's pretty bright. She fetches, sits, and waits already. I'm getting ready to take a puppy class with her. I'm excited to see what she can learn. My main concern is my cats. They leave the yard and I think the temptation... -
ARCHIVED Pet Peeve Regarding The Slaying Of The English Language.
TrillumHunter replied to Imanistj's topic in Introduce Yourself / Share Stuff
Okay, I'm jumping into this. How about people who need to loose some weight? Bless your heart is a tough one. You have to be aware of the context in which it is used to get the full meaning. -
ARCHIVED Invisible Fencing For Dogs
TrillumHunter posted a topic in Introduce Yourself / Share Stuff
I finally got a puppy! She is a real sweetheart. I'll try to post a picture. I would like to hear about anyone's experience with invisible fencing. Has anyone put it in themselves? I'm thinking I'll have someone come in, but I don't have estimates yet. Thanks for any guidance you can give. -
ARCHIVED Bread/roll Baking Tips
TrillumHunter replied to LuvMoosic4life's topic in Gluten-Free Recipes & Cooking Tips
I think your rolls look delicious! That said, I think your looking for the same thing all of us gluten-free bakers are; the fluffy type of bread you can tear apart that is so good. It's pretty elusive. We wind up with bread that doesn't tear, but breaks. There are several of on here working on it! Xantham hasn't been the answer for me...
