I made some really good tasting muffins using Pamela's Pancake & Baking Mix and pureed strawberries (thawed from frozen) for the liquid in the recipe. I know some decaf coffee is decafeinated using chemicals, others use a more natural approach. You might be having a reaction to chemicals used to make the coffee decaf. A friend of mine reacts to the less expensive decaf coffee.

I forgot about that -- yes, Whole Foods in our area does accept food stamps. I remember my Mom specifically checking for a young mother in her church. She has a kid that is diagnosed as autistic but a gluten-free/CF diet seems to help. -

The best reason, IMO, to seek official tests and diagnosis is that there are so many other problems that present the same symptoms as Celiac and DH can easily be confused with other systemic rashes. One thing that may be available in your area is a food bank. We have one in our city and it accepts donations of gluten-free food and keeps it separate to provide to Celiacs that need help. Definitely check. The roast chicken at the Sam's in my area has wheat in the flavorings. And I've had a problem before with roast chicken at Kroger that should have been gluten-free according to the label but it made me sooo sick. Once you find a reliable source -- treasure it. In my area, Taco Cabana chicken flamente is always safe. Yum! -
I think it's simpler than that. The doc sees a pharmaceutical rep every week talking about their miracle drugs. If they also saw a Celiac every week talking about how great they feel since they went gluten-free, they would have a balanced picture. Instead of plain tuna, find an deli that carries packages of Hellman's Mayo and packages of pickle relish -- tuna salad on the go. It may not be as good as what you fix at home but it's better than plain tuna night after night. I do advise having a letter from your doc to put in the suitcase with the food. It helps smooth the way when you are traveling. I hope your Kroger's carries it. None of the ones on our side of town do and I pick it up on the other side of town (about an hour away). First time I fixed it surprised me because the frozen bread is the size of a biscuit, maybe 2 inches across. It baked up to the size of a burger bun! Sorry if this is long, it's not a short answer. One kid that is mentally retarded because his Mom refused to have anything to do with the tests and doctors when she was pregnant and insisted on delivering at home.
