I would stongly advise you to get some sublingual B12, even if you are already taking a good multiple with it in it you are most likely not absorbing it yet. I know a couple. One just retired and he loved it. He of course didn't need to worry about having a bathroom handy. If I hadn't been diagnosed so late it is a job I would have loved. I really don't think that is all that unusual. My entire family is celiac also and my children have different natural fathers but both show up in blood work. Hopefully someday they will realize that celiac is a 'spectrum' disorder and to only use total villi destruction as a diagnostic proof when so many are effected in so many other ways is frankly inhumane. I made the mistake of getting these for my DH. He eats out a lot a we got them for him to take in those instances. I wish now I had never gotten them for him. You sound like you need to be dairy free for at least a bit as well as gluten-free. Have you tried any of the alternative milks? Hemp milk is very high in protein and calcium, if I remember correctly it has even more of both than cows milk. Rice milk is also good, just don't get Rice Dream, they are not gluten-free no matter what the carton may say. I...
