Don't give up on the diet, it takes adjustment but the damage that will be done to you if you don't do it will be more than you could ever imagine. It's amazing isn't it when the pain goes away! I just wish doctors would at least suggest it as a possibility when folks appear with arthritic pain and so many other related disorders. You may want to post this as a seperate topic, there are many Lyme knowledgable folks here. I don't think your going to have too much of a problem with keeping to it. You have had a great response to the diet and chances are really good that your body is going to tell you in no uncertain terms that you need the diet if you go off it. Ursa said it so well it leaves little left to add other than to say that I agree totally with making your home gluten free. Testing on little ones is not accurate most times and making your home gluten free is not going to increase their chances of developing the disease, but it may well decrease it. That type of testing will not pick up gluten or casein problems as they are intolerances rather than allergies. You could go with enterolab, ask your doctor for a full celiac panel (knowing that these are not always correct either) or eliminate gluten and casein from your diet and see what happens. -

Do you by any chance have a Wegmans store near you? They have gluten-free corn flakes and they also label all the food they produce that is gluten-free. Shopping there helped my family a lot at first, you just look for the circle G and you know you have no gluten and no CC risk. I just noticed you are newly soy free, the potato was just a potato right? No soy oil or anything like that? Soy still gets me too often, it seems to be in even more stuff than gluten, if that is even possible. I have yet to find a margerine or butter sub that is soy free. Welcome to the family. The idea that if you don't have one of the 'recognized' celiac genes is unfortunately not the case. There is still much to be learned about this genetic difference. That seems much more balanced nutritionally. The best place to go if you want guidance for an elimination diet is an allergist.
