ARCHIVED Best gluten-free Pie Crust Recipe
celiac-mommy replied to Spartans1960's topic in Gluten-Free Recipes & Cooking Tips
This is my recipe, it's more like a shortbread and I don't find it crumbly at all: 1 crust recipe-- melt 1/2 c margerine in pie plate (It's less crumbly with margerine than with butter-I use Smart Balance) add 2 TBS sugar, mix with fork add 1c gluten-free flour (your choice, whatever you usually use), mix with a fork Press out into pie plate refrigerate... -
ARCHIVED Endoscopy And Kids
celiac-mommy replied to fripp017's topic in Parents, Friends and Loved Ones of Celiacs
If you like to bake, I can give you the recipes I use for pizza crust, bread, etc... I am a baker and I love to cook. I've made it a goal to create all the same foods the kids ate before to be gluten-free. We've had great success. My kids' lunches look the same as the other kids at school-if not better-and my dh says that my pizza crust tastes better... -

ARCHIVED Endoscopy And Kids
celiac-mommy replied to fripp017's topic in Parents, Friends and Loved Ones of Celiacs
my rendition of the abbreviations is: dd-darling daughter ds-darling son dh-darling husband (this one threw me, was always thinking dh was dermatitis herpetiformis ) I'm just glad that we have a great pediatrician who noticed there was something abnormal and he sent us to a great ped's GI who felt 100% comfortable diagnosing just based on the... -
ARCHIVED Endoscopy And Kids
celiac-mommy replied to fripp017's topic in Parents, Friends and Loved Ones of Celiacs
Just a side note you may have to consider, my dd's biopsy was glaringly positive but my son's was suspicious visually, but the biopsy came back negative. Because of his significant dietary response, our GI diagnosed him purely based on that. He went from below the 10% in height and weight to the 50th in weight and the 75th in height--in 1 year!! I guess... -
ARCHIVED Endoscopy And Kids
celiac-mommy replied to fripp017's topic in Parents, Friends and Loved Ones of Celiacs
You will hear a mixed bag of who's done what here. Both my kids had the biopsy and I don't regret the decision at all, it was the right choice for our family. You have to do what's right for yours. -
ARCHIVED A New Weight Loss Support/accountability Thread
celiac-mommy replied to lonewolf's topic in Related Issues & Disorders
I haven't checked in in a while. I've been sticking with the Abs diet stuff, was at a standstill for a while, but I've also been ignoring myself a bit and focusing all of my energy into the kids and husband. I don't think I was working out enough (for me) and my mood was suffering because of it too. 2 weeks ago a friend shoved the Twilight series in my... -
ARCHIVED Edge Brownie Pans
celiac-mommy replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
That's a super-cool pan!! I may have to add that one to my collection! I think it would work fine for gluten-free baked goods, just toothpick test the center. I have all kinds of baking pans, all different sizes and as long as I spray the pan well, they come out fine. I have this one and I was terrified the 1st time I used it that I wouldn't be able to... -
ARCHIVED A Girl That Copies My Entire Home And Garden To The "t"!
celiac-mommy replied to Christina98's topic in Introduce Yourself / Share Stuff
I'm sorry, but you did post this asking for other's opinions, not just to vent, so it's really not fair to get on our cases when we present the asked for opinions. I have to agree with Fiddle-Faddle as well. Can I recommend a book to you--The Power of Now--I think you would get a lot out of it. You cannot control the thoughts and actions of others, only... -
ARCHIVED What Is With All The "look Out For Gluten In ~ Insert Toiletry Item~"
celiac-mommy replied to mattathayde's topic in Coping with Celiac Disease
My 3y/o drinks the bath water when I'm not looking And my dd often opens her mouth wide when I'm rinsing her hair in the shower (for some reason they think they can't breathe thru their noses in the shower ) I can't use a soap/bodywash/shampoo with any kind of gluten because both of my kids are so sensitive to it at any level. For some of us it is more... -

ARCHIVED Flax4life Muffins
celiac-mommy posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We can buy these here in WA and OR stores, if you can get your hands on them, they are fabulous!! I've been eating them for years, but now they are certified gluten-free. They are in the process of updating their website, I have talked with a rep today and they assured me that every variety is tested for gluten and there is "no detected gluten" in any flavor... -
ARCHIVED Has Anyone Ever Done A Triathalon, Marathon, Bikathon.. Ect..
celiac-mommy replied to Jamie's topic in Introduce Yourself / Share Stuff
That's not the rules for all races. I trained for the Portland marathon (messed up my knee during the half marathon a few months before). It's ok in the Portland marathon to use headphones but they really discourage it because of safety reasons. Triathalon may be different, what would you do with the iPod during the swim? -
ARCHIVED Urgent Need Regarding A Toddler
celiac-mommy replied to sweetness34's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
in this case I believe they were epileptic grand mal (sp?) seizures. I'm pretty sure Celiac had nothing to do with it. -
ARCHIVED Urgent Need Regarding A Toddler
celiac-mommy replied to sweetness34's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I just happened to see a medical mystery program in which a child was having the same symptoms as yours. They couldn't figure out what was going on for the longest time, but since it was happening nightly, they finally found a neurologist who suggested a sleep study. They discovered the child was having seizures that manifested as vomiting. Once on the right... -

celiac-mommy replied to Lisa16's topic in Gluten-Free Foods, Products, Shopping & Medications

ARCHIVED Do We Have Compromised Immune Systems?
celiac-mommy replied to foodiegurl's topic in Coping with Celiac Disease
Also, FWIW, we all get the flu shot mainly because I work in a hospital, God knows what I bring home I have found, however, that I had a very sickly little son before his diagnosis, and since going gluten-free, he hardly even gets the sniffles. My dd has an immune system like a rock and always has. -

ARCHIVED Cinnamon Doughnut Drops
celiac-mommy replied to purple's topic in Gluten-Free Recipes & Cooking Tips
Yeah, they won't be a staple in our house, that's for sure But they were a fabulous treat. For the flour mix, I used Pamelas, omitted all the other dry ingredients except the cinnamon and omitted the oil. I don't usually fry things, so I wasn't sure what temp to get the oil up to in the pan, so I shot for 350, that batch soaked up too much oil. The... -

ARCHIVED Can't Stop Binging On Gluten!
celiac-mommy replied to Rachel Keating's topic in Related Issues & Disorders
There are some control issues as well, regardless of the Celiac. I have suffered from binge-eating-disorder for the last 3 years. This came after a 100# weight loss. With the thought of not "being able" to eat certain foods, I would end up binging on something else to satisfy the craving, then going back and binging on the "forbidden" food anyway. The... -

ARCHIVED Cocoa Pebbles - Gluten Free!
celiac-mommy replied to Lexi's topic in Gluten-Free Foods, Products, Shopping & Medications
Although just an occasional treat in our house--we save for dessert and not breakfast, we have not had any issues with them or fruity pebbles. The kids get really excited to have them, they are tasty
